CHARRED SQUID WITH TUNA MAYONNAISE
600g cleaned squid tubes and tentacles
2 tablespoons melted coconut oil or good-quality animal fat
sea salt and freshly ground black pepper
TUNA MAYONNAISE
100g jarred tuna in brine or olive oil, drained (or use sardines, mackerel or eel)
120g Mayonnaise
1 teaspoon lemon juice
GARLIC AND CAPER SAUCE
3 tablespoons coconut oil
4 garlic cloves, finely chopped
1 teaspoon finely chopped thyme leaves
3 tablespoons salted baby capers, rinsed well and patted dry
2 tablespoons lemon juice
