PAN FRIED SALMON WITH NOODLES & MANGO SALSA
Ingredients: A ripe mango; 3 or 4 spring onions (or a red onion if unavailable); a small bunch of mint; a small bunch of coriander; a handful of salted peanuts; a small red chili (add more or less depending on how spicy you like it); fish sauce; a pinch of sugar; juice of one lime; between 50-80g per person (or half/one whole sheet of noodles depending on hunger!) egg noodles (nests or flat sheets of noodles are both fine); poppy or sesame seeds (optional); 4 x salmon filet; olive oil; pomegranate molasses (optional)
