Ingredients

225 g flour

5 ml salt

120 g butter

56 ml cold water

1 egg white (beaten)

37,5 ml raspberry jam

225 g butter

280 ml caster sugar

4 eggs (beaten)

2 egg yolks (beaten)

562 ml ground almonds

Zest from 2 lemons

37,5 ml flaked almonds

Method

Combine the flour and salt together.

Rub the butter into the flour mixture.

Add the water and mix using a knife.

Wrap the pastry in plastic wrap.
