What Is Semifreddo?
Semifreddo is a semi frozen dessert – basically 2 parts ice cream and 1 part whipped cream.
Apple Cinnamon Semifreddo
Ingredients
2 eggs
3 egg yolks
5 ml ground cinnamon
250 ml caster sugar
300 ml double cream
1 can whole mini apples (drained)
Method
Combine the eggs, egg yolks, cinnamon and caster sugar together in the top of a double boiler; over simmering water.
Whisk the mixture until it is smooth and creamy (at least 5 minutes if using an electric beater and more if whisking the mixture by
