    INTRODUCTION

    Tex- Mex is a fusion of Texas and Mexico cultures. Thus, Tex-Mex cuisine describes a type of regional American cuisine that combines dishes of Southern United States (Texas, Arizona, New Mexico and California) with Mexico. Short for Texan Mexican, this cuisine consists of traditional Mexican recipes and foods that have been modified with the customs of Texas.

    Since it developed as a continuation of the Mexican cuisine in Texas, Tex-Mex can be said to be more like a New Mexican cuisine. It has been aptly described as the cheesier, chili-er and meatier version of Mexican cuisine. It encompasses many different types of dishes such as tacos, Burritos and Nachos. This range of dishes, such as nachos and fajitas, are generally associated with being Mexican. Then again, these dishes usually include ingredients, such as cumin, that do not feature in traditional Mexican cuisine. Tex-Mex cuisine and Mexican cuisine use common ingredients but there are some ingredients that are never used in Mexican cuisine. However, most of the ingredients used in Tex-Mex cooking are also used in Mexican cooking.

    Tex-Mex is one of the most spiced cuisines in the world. Tex-Mex also utilizes lots of shredded cheese, beans and meat. Beef is the main ingredient for meat which is largely used. Beans, spices and sauces, particularly salsa, feature a lot in this cuisine.

    While Tex-Mex is widely known for its tortillas that is Mexican-styled, dishes such as fajitas, chimichangas and chili con carne are all Tex-Mex creations. Its use of cumin was imported from other spicy cuisine; just as its heavy addition of cheese can be said to be a North American influence.

    Tex-Mex may be a spin-off from Mexican cooking, but it still has its own distinct flavor and ingredients. Take the spices, for example. Spices give foods their identifying flavor. For what's worth, you will need to stock up on chili powder, black pepper, cumin, onion powder, salt and paprika, if you want to enjoy authentic Tex- Mex meals. Not forgetting other spices like cayenne pepper, ground thyme and ground pepper. You see, these are what provide Tex-Mex with its identifying flavor. These spices can be added to grilled meats, sauces, soups, casseroles or chili. It’s also a good idea to combine all to make your own spice mix, store in an airtight container and use anytime you want.

    Let’s talk about the ingredients. Previously, Texan cowboys cooked with ingredients from Mexico. But as immigrants settled in, the mix began... bacon, flour, molasses, lard and yellow cheeses, among other ingredients, were mixed in their cooking. Cooking equipment like Dutch ovens and cast-iron skillets were also used to cook for more flexible cooking and cooking options.

    Once your pantry is stocked with some basic ingredients, you will never want for authentic Tex-Mex food. With your  tortillas (flour and corn),shredded chicken, cheese (yellow or cheddar), rice, pork, beans, potatoes, corn, tortilla chips, skirt steak, sour cream, cilantro, chipotle, onions, tomatoes, pepper, cumin, salsa and garlic, you can go right ahead to enjoy your Tex-Mex. There are endless combinations for these ingredients.

    Tex-Mex foods are usually greasy and fried. They are mainly prepared by boiling and mostly frying. Fresh vegetables are sparingly used. Tex-Mex cooking also involves larger cuts of ingredients. Meat, a common feature, is usually prepared by grilling or frying. Sauces are responsible for the hot flavor of Tex-Mex and these and also heavily spiced. At the basis of any sauce is the tomato juice or paste.

    Many Tex-Mex dishes are packed with cheese; nevertheless, there are lots of nutritious elements of Tex-Mex cooking. Let's take a look at some.

    The Essential Cheese: the backbone of Tex-Mex cuisine, cheese is high in fat. So, you need to consume in moderation. An ounce of cheese provides you with a third of daily calcium requirement. Taste the cheese before buying to ascertain the quality. If it becomes moldy when stored, cut the moldy part off as well as an inch of the good cheese near it and then use the rest. Wrap cheese tightly and refrigerate so it doesn’t spoil or take in other flavors.

    It is advisable to freeze very soft cheeses for about 20 minutes before usage. This makes it easier to handle. Do not cook natural or unprocessed cheeses over high heat to prevent separation and toughness. Remember that most cheeses are merely sprinkled on food some minutes before the cooking is completed so as to melt, bubble and brown.

    Beans: Beans are essential in Tex-Mex cooking. Pinto beans, black-eyed peas, black beans, pink beans, garbanzo beans, kidney beans, and pigeon peas are all utilized in this cuisine. They are very nutritious of course: high in carbs, protein, and dietary fiber, while low in fat and calories and free of cholesterol. They also taste delicious!
