Introduction

From its origins in Peru, the potato has evolved into one of the most important food crops in the world. It is high in nutrition, stores well and is easy to grow under a wide variety of conditions. The edible part grows underground, but it is not a root. The potato is really a modified stem, called a tuber. A cool season crop, the tubers form best when soil temperatures are between sixty and seventy degrees. Potato tubers may fail to develop at soil temperatures above eighty degrees. They will grow in most of the United States but they grow best in the northern tier of states because of the cooler growing conditions.

Potatoes are closely related to other common garden crops like tomato, eggplant and peppers. Because of this, they share many of the same pests and diseases with these vegetables.
