    For the waffle

    1 medium sweet potatoes, peeled and grated

    1 large egg, beaten

    1/4 teaspoon cumin

    1/8 teaspoon salt

    Cooking spray

    For the filling:

    1 cup chopped spinach

    1/2 avocado, sliced

    1 large egg

    1 teaspoon extra virgin olive oil

    salt to taste

    Preheat the waffle iron. Combine all waffle ingredients.

    Spray the waffle iron and spread the mixture evenly.

    Press down and cook for about 4-5 minutes.

    Meanwhile, sauté spinach until wilted. Remove excess moisture.

    Add egg and scramble into desired consistency.

    Season with salt and set aside.

    Assemble the sandwich once the waffle is done.

    Turkey Breakfast Sausage

    1 pound ground turkey

    1 teaspoon dried sage

    1/2 teaspoon salt

    1/2 teaspoon fennel seeds

    1/4 teaspoon dried rosemary

    1/4 teaspoon ground nutmeg

    In a mixing bowl, combine all ingredients.

    Form 6 patties.

    Pan fry the patties for 3-4 minutes per side or until cooked through.

    Cauliflower Breakfast Fritters

    1 large head cauliflowers, cut into florets

    2 large eggs, beaten

    2 green onions, finely chopped

    1 clove garlic, minced

    2 tablespoons chopped fresh parsley

    1/4 cup almond flour

    3 tablespoons coconut flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1/4 teaspoon nutmeg

    Steam the cauliflower until tender, about 8-10 minutes.

    Set aside to cool.

    Transfer the cauliflower on a dry kitchen towel.

    Wrap around and squeeze out the moisture, then transfer to a large bowl.

    Combine the rest of the ingredients.

    Form 4 patties and pan fry for 3-4 minutes per side or until golden.

    3 cups almond flours

    1 tablespoon baking powder

    1 teaspoon salt

    Wet ingredients:

    1 cup cheddar cheese

    1/2 cup butter,
