SMOKED TROUT & APPLE SALAD

450g whole hot-smoked trout, skinned, boned, flaked coarsely
300g mixed sprouts
100g alfalfa sprouts
1 baby gem lettuce, leaves separated
1 small Granny Smith apple, cored, sliced thinly
½ cup walnuts, roasted, coarsely chopped
½ cup shaved pecorino cheese
