Martha is a chef and a cookbook author. She has had a love of all things culinary since she was old enough to help in the kitchen, and hasn’t wanted to leave the kitchen since. She was born and raised in Illinois, and grew up on a farm, where she acquired her love for fresh, delicious foods. She learned many of her culinary abilities from her mother; most importantly, the need to cook with fresh, homegrown ingredients if at all possible, and how to create an amazing recipe that everyone wants. This gave her the perfect way to share her skill with the world; writing cookbooks to spread the message that fresh, healthy food really can, and does, taste delicious. Now that she is a mother, it is more important than ever to make sure that healthy food is available to the next generation. She hopes to become a household name in cookbooks for her delicious recipes, and healthy outlook.Martha is now living in California with her high school sweetheart, and now husband, John, as well as their infant daughter Isabel, and two dogs; Daisy and Sandy. She is a stay at home mom, who is very much looking forward to expanding their family in the next few years to give their daughter some siblings. She enjoys cooking with, and for, her family and friends, and is waiting impatiently for the day she can start cooking with her daughter.

Many of us lack the time to travel to Spain; home of delicious Mediterranean cuisine, amazing soccer teams, and rich in culture. But we can create our own mini Spain (an ‘Españita’, if you will), in our own homes, using these yummy recipes for traditional Spanish dishes.

We have included a whole host of incredible meals to try. We have recipes for a dinner of paella, a hearty bean and chorizo stew, light tapas bites, a sweet treat, and an amazing alcoholic beverage, like the traditional Sangria or Agua de Valencia. Whatever you're looking for, we know that culture-rich Spain has it covered.

Paella de Marisco (Seafood Paella)

Paella (pronounced pay-ee-ah) de Marisco is one of the most quintessential Spanish dishes. If you're ever lucky enough to visit old España, take yourself down to the docks of Barcelona and order a giant paella, with of course, some vino tinto.

Serves: 4-6

Preparation time: 120 minutes


24 oz. white fish

12 mussels

12 clams

12 large shrimps, in the shells

8 cloves of garlic

8 tablespoons olive oil

6 cups seafood stock

2 lemons, quartered

2 cups paella rice

2 tablespoons fresh parsley

2 teaspoons smoked paprika

1 onion, chopped

1 red pepper, chopped

1 large tomato, diced

1 tablespoon fresh thyme

1 teaspoon saffron threads

Pinch of salt

Serving suggestion:

The Spanish truly know how to put on a feast! Serve your paella with bread and alioli (Spanish garlic mayonnaise), salad, and a pitcher of sangria!

1) In a large pan, begin to heat the seafood broth. Then, stir in the saffron. Add in a pinch of salt and allow to simmer for 10 minutes.

2) Using a pestle and mortar, or a food processor, mash the garlic, parsley, thyme, and a pinch of salt into a paste, adding a little water if necessary. Stir in the paprika.

3) Chop the fish into bite-sized pieces.

4) In a pan, add in 6 tablespoons of olive oil and brown fish for 2 minutes.

5) Remove the fish from the pan and add in the remaining 2 tablespoons of olive oil and fry onions and bell peppers until softened.

6) Add in tomatoes, stirring for a further 3-5 minutes until broken down and almost a sauce.

7) Pour the broth into the tomato mix and bring to the boil.

8) Add in rice, distributing evenly, stirring occasionally for 3 minutes.

9) Stir in the fish and parsley paste.

10) Lower the heat and continue to simmer for 10 minutes, or until all the liquid has been absorbed.

11) Thoroughly clean all
