For Mum
Thanks for all your love, support and especially your cooking.
You were my inspiration and I will always love you.
introduction
It gives us life and energy. It evokes long forgotten memories and inspires the creation of new ones. It bonds families together and helps cement friendships. It's food, and it is truly magical.
Food has the ability to transport us back in time. A smell, taste or texture can conjure up images of your childhood, remind you of happier times and even bring back those loved ones who are no longer with you.
But above all else, food is something that everyone needs. It's a commonality that we all share. While we may have different tastes, nothing can bond two strangers like the breaking of bread. This book is my exploration of what food means to me, why it's so important and why I feel so passionate about it.
Food has been something that has always been a big part of my life. My earliest memories are of weekend lunches with my family. My Father firing up the barbecue and my Mother making the dessert. Kids running around the backyard screaming and laughing while the adults kept cool and chatted under the shade of the patio.
These memories are so precious. They reminds me that even at an early age, food was an important part of my life. My family would always come together and share a meal. Whether it be Christmas, Easter, someone's birthday or anniversary – the next family meal was never too far away.
It saddens me that such activities are becoming rarer and rarer these days. Busy work schedules and unbalanced lives seem to be eroding the concept of family togetherness. Many people never eat a meal as a family. Many families have stopped cooking all together. Children are now growing up in households where neither parent cooks, and they live almost entirely on frozen microwave meals and take-away food.
My philosophy behind The One Pot Chef Show
and this book has been to get people back into the kitchen. Show them that it's not a scary place, that it's comforting and warm. I want people to want to try and cook something for themselves. Even if it's something silly like a tray of cookies or a chocolate cake. If something silly or fun can get someone who has never cooked a meal before in their life to step into the kitchen and have a go – then it's all worth it. It builds their confidence, and they are more likely to try cooking other things.
This book and the recipes it contains are designed specifically with the first-time cook in mind. Simple instructions, basic ingredients and no need for fancy, expensive kitchen equipment. Nothing stressful – just fun food that anyone can make.
I hope you enjoy my book.

kitchen essentials
The kitchen is one of the most essential parts of your home. When we move house, it's often the first section to get unpacked and set up – and with good reason!
When I first moved out of home, I was lucky enough to have the support of a large network of family and friends who were able to help me with setting up my first kitchen. They helped by donating unwanted extras from their own kitchen, and I have paid this generosity forward by donating things to friends when they are setting up their first kitchen.
Starting out on your own is expensive, and it's easy to fall into the trap of spending too much money buying useless household gadgets rather than focussing on the basics. I'm sure a non-stick, electric salad spinner seems like an essential when it's on special, but it's worthless when you need a decent set
