Beef & Guinness Pie with Potato Topping

Ingredients
1g Olive Oil Spray 200g Chuck Steak 1 Medium Onion (89g) 1 Medium Celery Stalk (40g) 1 Medium Carrot (61g) 1 Medium Zucchini (101g) 200g Desiree Potato 2 Teaspoons Tomato Paste (11g) 2 Teaspoons Plain Flour (6g) 60g Guinness Beer 2 Cups Beef Stock Liquid (500g) 40g Low Fat Milk Nutritional Information (per serve*)

Cut steak into 2cm pieces Finely chop onion, celery, carrot and zucchini Peel and roughly chop potatoes

Method
1. Preheat oven to 160C. Heat a large flameproof casserole dish over high heat. Spray with oil. Cook beef, in 2 batches, for 2 minutes or until browned. Remove from pan and set aside. 2. Return pan to medium heat. Spray with oil. Add onion and celery, and cook, stirring, for 5 minutes or until soft. Add carrot, tomato paste and flour, and cook, stirring, for 1 minute. Return beef to pan and gradually stir in Guinness and stock. 3. Cover and bake for 1 hours or until meat is tender and sauce has thickened. Add zucchini in last 15 minutes of cooking time. Season with freshly ground black pepper. 4. Meanwhile, cook potato in a saucepan of boiling water until tender. Drain and return to pan. Add milk and mash until smooth. 5. Increase oven to 200C. Divide beef mixture between 2 x 250ml (1 cup) capacity ovenproof ramekins. Top with mashed potato. Bake for 15 minutes or until golden brown.
