BREAD
is a staple food prepared by cooking a dough of flour and water, etc. doughs are baked in the Western world but in some cuisines breads are steamed, fried, or baked on a hot skillet. - leavened or unleavened. Salt, fat and leavening agents (yeast and baking soda) bread contains milk, egg, sugar, spice, fruit - raisins, vegetables - onion, nuts - walnuts) or seeds - poppy seeds. bread is one of the oldest prepared foods, dating back to the Neolithic era.

Neolithic Era the people were already evolved as hunters and farmers - 120 B.C. Roman colony was established in the Southern region of France.

Types of Bread
Wholemeal bread

- Wholemeal and wheatmeal breads are popular. In New Zealand - 90% or more wholemeal flour and wheat meals any level of wholemeal flour mixed with white flour.
Multigrain bread

 Rye breads

- is a wholemeal bread made from rye, a mix of rye and wheat flour, originally developed in Europe -made in a wide variety of styles and shapes. Fruit bread - breads use a normal bread - fruit and sugar are added. Popular fruits used - raisins, currants, dates, orange peel and dried fruits such as apricots. Sourdough bread - Until dry yeast was invented in the 19th century sourdoughs were the only leavenings (raising agents) used in yeast bread. Bread made by the sourdough method makes a hearty, acid bread with thick crusts that will last up to a week.

 Hearth breads
