The mi0t*re is spread on top+ the top garnished+ and the canap *sed at once. Fish Canaps 'o*nd a ,*arter of a po*nd of cooked fish to a paste1 season it with a few drops of onion 2*ice+ a sa)tspoonf*) of sa)t+ and a dash of b)ack pepper. Stir into it two tab)espoonf*)s of sa*ce tartare1 spread this on si0 or eight ro*nds of b*ttered bread browned in the o-en1 garnish the tops with grated c*c*mber and send to the tab)e.
