CUMI-CUMI SAMBAL MERAH (SQUID RED SAMBAL)

INGREDIENTS: Spices: 4 shallots 3 cloves garlic 4 pieces of red chilli 1/2 tsp shrimp paste 12 pieces of cayenne pepper 1/2 cup thick tamarind juice 4 tablespoons peanut oil Salt and sugar are adequately 1/4 kg of squid

HOW to make a squid red sambal: 1. Cleaned squid, remove the head and pouch tintanya then rinse until clean, then cut thinly to his feet like a circle and set aside. 2. Puree the red pepper, onion, garlic, shrimp paste and salt. 3. Heat the oil and fry the spices that have been mashed it until fragrant. 4. Add squid, tamarind juice and cayenne pepper. BAHAN-BAHAN: 1/4 kg cumi-cumi

BUMBU-BUMBU: 4 buah bawang merah 3 siung bawang putih 4 biji cabe merah 1/2 sendok teh terasi 12 biji cabe rawit 1/2 cangkir air asam kental 4 sendok makan minyak kacang Garam dan gula secukupnya

CARA MEMBUATNYA CUMI-CUMI SAMBAL MERAH: 1. Cumi-cumi dibersihkan, buang kepala dan kantung tintanya lalu bilas sampai bersih, kemudian dipotong tipis-tipis hingga seperti sebuah lingkaran dan kakinya sisihkan. 2. Haluskan cabe merah, bawang merah, bawang putih, terasi dan garam. Panaskan minyak dan tumis bumbu-bumbu yang telah dihaluskan itu sampai berbau harum. 3. Masukkan cumi-cumi, air asam dan cabe rawit. Aduk sekali- kali saja, biarkan selama 4-5 menit, lalu masukkan gula merah, biarkan sampai masak benar
