JUDUL KTI ANALISIS KUANTITATIF KAFEIN DAN TEOBROMIN PADA PRODUK COKLAT DENGAN METODE SPEKTROFOTOMETRI DERIVATIF TEKNIK ZERO- CROSSING Abstrak (Indonesia) Kafein dan teobromin merupakan senyawa alkaloid yang secara alami terkandung dalam biji kakao. Kafein memberikan efek yang merugikan apabila dikonsumsi secara berlebih yaitu gugup, gelisah, tremor, insomnia, hiperestesia. Sedangkan teobromin menunjukkan efek stimulasi yang sama seperti kafein, namun untuk tingkat yang lebih rendah. Analisis kadar kafein dan teobromin dalam coklat perlu ditentukan agar tidak memberi efek yang merugikan. Kafein dan teobromin mempunyai panjang gelombang yang berdekatan, yaitu 273 nm dan 274 nm. Hal tersebut menghasilkan spectrum yang tumpang tindih jika dilakukan pengukuran menggunakan spektrofotometri. Spektrofotometri Derivatif Ultra Violet (SDUV) dengan teknik zero-crossing dapat mengatasi masalah tersebut, dimana panjang gelombang zero-crossing teobromin dilakukan untuk analisis kadar kafein, sedangkan panjang gelombang zero-crossing kafein dilakukan untuk analisis kadar teobromin. Sehingga pengukuran kadar kafein dan teobromin dalam produk coklat dapat ditentukan. Validasi metode perlu dilakukan dengan menentukan parameter validasi yaitu presisi, akurasi, linearitas, limit deteksi, dan limit kuantisasi. Abtract (english) Caffeine and theobromine an alkaloid compound that is naturally contained in cocoa beans. Caffeine adverse effects when consumed in excess, namely nervousness, restlessness, tremors, insomniac, hiperestesia, while theobromine showed the same stimulatory effect as caffeine, but to a lesser extent. Analysis of levels of caffeine and theobromine in chocolate needs to be determined so as not to give adverse effects. Caffeine and theobromine having adjacent wavelengths, ie 273 nm and 274 nm. This produces a spectrum that overlaps when using spectrophotometric measurements. Derivative spectrophotometry Ultra Violet (SDUV) with the zero- crossing technique can solve these problems, where the zero-crossing wavelength of theobromine performed for analysis of caffeine levels, while the zero-crossing wavelength performed for analysis of caffeine levels of theobromine. So that the measured levels of caffeine and theobromine in chocolate products can be determined.
