Ingredients

4 chicken breasts
For the salsa
120g spinach
1 medium red onion, finely chopped
1 medium mango, finely chopped
1tbsp fresh mint leaves, chopped
3tbsp grated parmesan cheese
3tbsp sweet chilli sauce

Heat a griddle pan and cook the chicken on both sides for 10 to 15
minutes. Cut into the thickest part of the breast to check that the
chicken is cooked through with no pink showing.
Meanwhile, combine the spinach, onion, mango, mint, cheese
and chilli sauce in a bowl, taste and season.
Serve the chicken topped with the fresh mango salsa.
