During the month of April, we will focus on nuts and fresh beans as the OrganWise Guys Foods of the
Month! Children, parents and staff be sure to find ways to include these nutritious foods in your meals
and snacks!
Fresh Beans
Fresh beans include green beans, lima beans and edamame. The reason they are so tasty is
because they are fresh! But did you know you can eat fresh beans throughout the whole year?
Fresh beans, like other fruits and vegetables, are easily frozen so we can enjoy them all year
round. In fact, in the United States, most of the edamame we eat has been frozen. Fresh beans
grow in the summer and fall months. They have more tender textures than regular beans. They
also take less time to prepare because you do not need to soak them or cook them for a long
amount of time. In fact, you can have a tasty side dish of any fresh bean in only a few minutes!
Boiling, steaming, and microwaving are common ways to cook fresh beans. However, when we use
these methods, some of the nutrients in the beans are lost. How do we fix this? A great way to save these nutrients is to
reuse the water. For example, if you cook a meal with fresh beans and whole grain, brown rice, reuse the fresh bean water to
cook your rice!
Nuts
Although these tasty protein and fiber boosts are often put into one category, did you know that
some nuts are different than others? Turn on your Sir Rebrums when you read the descriptions
below to see if youve been eating the healthiest nuts available. Always remember to limit your
portions of nuts to about a handful (approxmiately 12), and avoid the sugared and salted nut
varieties!
Walnuts Walnuts are the kings of nuts! These nuts have high amounts of omega-3 fatty acids
(also found in fish), which keep us focused throughout the day and protect us from getting sick by
boosting our immune systems. Crumble some walnuts on your next salad for a health boost!
Almonds Eat a handful of these nuts to get a healthy serving of essential vitamins and minerals.
Did you know that a quarter cup of almonds has almost as much calcium as a quarter cup of milk?
This serving size is also high in vitamins and minerals like magnesium, potassium, and vitamin E.
Cashews These heart-healthy nuts are low in fat compared to other nuts and are also high in essential vitamins and
minerals.
