Mixed paella PAELLA


MIXTA
Ingredients - for 4 people

2 medium potatoes peeled and diced 1cm


square, or thickly sliced

6 eggs - lightly beaten

Seasoning
Method

Heat oil in pan

Introduce potato and


saut.

Lower heat, cover pan,


cook until potatoes are
tender.

Tip potato mixture in with


beaten eggs.

Transfer to another pan


with clean oil.

Cook over low heat 10-15


minutes until mixture is just
set.

Brown upper-side under


hot grill.

Leave to cool, then


carefully turn out.

4 cups rice
8 cups fish stock
4 chicken pieces
8 king-sized
prawns/langoustines
200 gr shrimps
2 ripe tomatoes - skinned
and chopped
2 cloves garlic - thinly
sliced
3 strands saffron crumbled
Olive oil
Seasoning

Method

Heat oil in pan and saut


garlic.
Add tomatoes, shrimps
and saffron.
Cook for a few minutes.
Add rice, stir well, cook 2
minutes, then add stock.
Simmer for about 20
minutes.

Decorate with seafood a


few minutes before rice is
cooked.

Cover paella with lid to


poach seafood.
Stand for 5 minutes
before serving.

PA AMB TOMQUET Bread


with Tomato.
Ingredients - for 4 people

8 slices of bread

4 Tomatos

Garlic

Olive Olive

Salt

1.- Grab a ripe tomato and cut


in half.
2.- Cut a nice slice of bread. You
can either toast it or not.
3.- Take half tomato and rub it
over the bread's surface. Make
sure you squeeze it while you
rub it. The bread slice will
absorb the tomato juice.
4.- Sprinkle with some salt.
5.- Add a generous quantity of
Extra Virgin olive oil on top.

Basic Sangria Recipe

Makes 4 glasses

3 1/4 cups ( 26 fl. oz) dry


red wine

1 tablespoon sugar

Juice of 1 large orange

Preparation:
This is a great dessert to make ahead
of time, since it is very easy and
requires 2-3 hours of refrigeration
before serving. Make it the day before
and leave it in the refrigerator until
you are ready to serve. Then, heat the
broiler, caramelize the sugar and
serve!

tuna. To finish it, put half of an olive
on top of the roasted pepper to
decorate.

Pincho moruno
Ingredients:

A wooden stick
Already cooked marinated
pieces of chicken/pork

Preparation:

Take the already cooked meat and put


it in the wooden stick. Serve hot.

Pincho de tortilla de patata


Ingredients:

A slice of bread
A piece of Spanish omelet cut
in triangle

Preparation:
Take the piece of Spanish Omelet and
put it on top of the slice of bread. You
can eat it cold or hot.

Pincho de cangrejo
Ingredients:

A slice of bread
Crab meat
Pickled cucumber or pickles
Hard boil egg
Mayonnaise

Preparation:
Inside a bowl mix the crab meat
previously cut small, pickles cut in
small pieces, hard boil egg cut in
small pieces and mayonnaise. Mix
everything together and put the mix
on top of the slice of bread.
