WHATS THAT?
Americans love their nogwe guzzle around 15 million gallons of it every
winter (and thats not even counting the eggnog creamers, coffees,
cocktails, and desserts were consuming). But we cant take credit for
inventing it. Historians have traced eggnogs roots back to 14th-century
England, when men would sip a hot cocktail called posset. It was originally
made with warm milk, ale (or sherry), and various spices. It didnt include
eggs until several years later, when, because milk and eggs were so costly,
the drink was a treat only for the wealthy.
By the 1700s, eggnog was common all over Europe and in America. Most
American colonists produced their own milk and eggs. And the sherry
was replaced with rum, which was less expensive. Its said that George
Washington whipped up his own version for holiday visitors to Mount
Vernon, and he wasnt shy with the sauce. Washingtons recipe included a
blend of whiskey, rum, and sherry, and was rumored to be so stiff that only
the most courageous dared to try it.
As for the names origins, no one is certain. Some claim that eggnog is
a mash-up of egg and grog, an old English term for a drink made with rum.
Others believe nog was 17th-century slang for a strong beer. But most
experts agree that nog comes from noggin, a small wooden mug used to
serve drinks in English taverns. Todays eggnog purists debate whether the
drink is best in a mug or a punch bowl, hot or cold, and spiked with rum or
whiskey. But all nog lovers agree that the holidays just arent the holidays

and cloves in a medium bowl; set

roll in sugar. Place balls 2 inches apart
on greased cookie sheets. Bake 7 to 10

1 Beat together butter and sugar in a bowl with an

2 Mix together flour, cornmeal, baking powder, and

combined. Form dough into a disk, wrap in plastic
wrap, and chill until firm, at least 4 hours and up to

freezes well in an airtight container up to 1 month.]
Make filling:
3 Bring all ingredients to a boil, covered, in a small
saucepan. Boil, uncovered, stirring occasionally, until
berries have collapsed and mixture is very thick,
7 to 10 minutes. Force cranberry mixture through a
fine-mesh sieve into a bowl, discarding solids. Let
cool about 30 minutes.
4 Preheat oven to 350F. Lightly grease 2 cookie sheets.
5 Roll out half of dough 18 inch thick on a floured work
surface with a floured rolling pin. Cut out rounds
with a floured 212-inch round cookie cutter (or round
and fluted) and arrange 1 inch apart on 1 prepared
cookie sheet. Bake in middle of oven until edges are
lightly browned, 10 to 12 minutes. Transfer to wire racks
to cool, 10 to 15 minutes.
6 Roll out remaining dough and cut out rounds. Then
cut out centers of rounds with a smaller round or
star-shaped floured cookie cutter. Bake and cool.
7 Spread solid cookies with 12 teaspoon filling, then top
with cut-out rounds.

2 weeks ahead and thawed before serving. If served fresh,
theyll stay crisp for about 2 hours; after that, theyll

Whole citrus fruits can be sliced
into rounds or halved and cut into
wedges. Easier-to-peel fruits (like
tangerines) can be peeled and broken
into segments with your fingers. But
for truly showstopping segmentsand
whenever youre working with citrus
fruits that have bitter or tough inner
membranes (like grapefruit)youll
want to supreme them.
It sounds fancy, but it just means
you cut the segments free of pith and
membranes, and its easy to do: Cut
off the very top and bottom of the
fruit. Set it, with a cut side down, on a
cutting board, and use a sharp paring
knife to cut off the peel and pith, cutting
downward and following the fruits
curve. Then hold the fruit over a bowl to
catch drips and, following the individual
membranes with the knife tip, gently
slice between membranes and flesh,
freeing the segments.
ZEST LIKE
YOU MEAN IT
The easiest way to zest citrus is with
a Microplane zestera fine grater that
creates delicate wisps and doesnt dig
too deepbefore peeling or juicing the
fruit. You can also grate it using the
small holes on a box grater or use a
hook-nosed citrus zester or a vegetable
peeler to remove the zest in strips. Any
way you choose, be sure to remove
only the colored outer peel and not the
underlying white pith, which can taste
bitter and chalky.
Fresh zest keeps in a zip-top plastic
bag in the fridge for several weeks or in
the freezer up to three months. If youd
rather dry it, spread finely chopped or
grated zest on a clean plate and let it dry
at room temperature until it crumbles
when rubbed between your fingers (this
may take several days). Then store it in
an airtight jar at room temperature.
What to do with all that zest? Blend
it into batter, dough, butter, and even
cream cheese for a bright boost of
flavor. Add a little orange zest to ordinary
fudge and youve got chocolate-orange
fudge. Dried citrus zest is also great in
seasoning blends. Just add it to freshly
ground peppercorns, herbs, and/or sea
salt. Call it (Your Name)s Tangerine
Dream Seasoning, and try it on fish,
chicken, veggies, or even eggs.

THE LAST DROP
To get more juice from your citrus fruits,
roll them around on a counter, pressing
down hard with your palm, before
slicing and squeezing. The pressure
breaks apart the inner membranes and
helps get the juices flowing. Uses for
those juices? Theyre great In marinade
and dressing recipes. Adding a small
spoonful to the poaching water for
eggs helps prevent wispy whites, and a
squeeze of fresh citrus juice gives stirfries extra zip. Got lots of juice? Clearly,
its time for lemon bars!

Citrus doesnt ripen after its picked, so how it is at the store is how
its gonna be at home three days later. Look for firm fruits without
soft spots or signs of mold (slight surface scarring is fine). And pick
ones that feel heavy for their size: Ripe fruit is juicy, and juicy fruit
is heavy! PS: Color doesnt necessarily indicate ripeness. Oranges
grown in humid tropical climates dont acquire the deep orange
color of those grown in breezier Mediterranean climates. Limes
may be light green or yellow-green when ripe. (Dark green ones are
underripe and usually have very little juice.)

with the chicken mixed
