LOCALLY MADE KINGS PEARL CHEESE LAUNCHES IN PITTSBURGH MARKET



Pittsburgh, PA, March 17, 2016 Locally made Kings Pearl Cheese will celebrate the official launch of the
brand at this weekends 10th Annual Farm to Table Conference, beginning March 18, 2016. Kings Pearl
Cheese (KPC) was first created in 1910 by Pearl King. KPC is owned by Michael and Daniel Jacobs, the
grandson and great grandson of its founder and creator. KPC is manufactured and packaged locally at
the Square Caf in Regent Square, PA.
Kings Pearl Cheese is a versatile, non-fat cheese that comes in an 8oz ball that has been vacuum sealed
for freshness. The cheese is also available in 4oz and 8oz packages in a pre-crumbled form. KPC is known
for its versatility and can be used in a number of dishes from salads and pasta, to pizza and pierogies.
While KPC has been used for a little over 2 years by a small number of chefs and restaurants, Michael
and Daniel Jacobs are officially launching the brand in partnership with Square Cafs Sherree Goldstein
and Kevin Kelley, with goals of commercial expansion in the Pittsburgh Market and beyond. The cheese
is currently used on the menus of Square Caf, Wild Rosemary, Claudio's Ristorante, Shouff's Restaurant,
and Smiling Moose.
KPC is made and manufactured in Square Cafs kitchen by its culinary team, lead by Head Chef Kevin
Kelley. KPC is available for individual sale at Square Caf during the cafs regular business hours.

KPCs official market launch at the 10th Annual Farm to Table Conference on March 18-19, 2016 will not
only give local chefs, restaurants, caterers and consumers the opportunity to sample and purchase the
product, but also the opportunity to meet the owners and manufacturers. The history of KPC is just as
delicious as the cheese. Its the story of my grandmother and her work ethic, dedication to family, and
love of food. I learned how to make the cheese in my apartment in 1972, and now Daniel and I get to
share that love. says owner Michael Jacobs, Its not just a cheese. Its a lifestyle.
History:
Around the turn of the century at the age of 13, Pearl King was working for a family in New York City as a
housekeeper and cook. She was paid $1.00 per month for her services and worked in the position for
two years. While Pearl was working in New York, she invented a nutritious and delicious cheese that fed

the families she cared for and delighted her employer. After saving every dollar of her earnings for two
years, Pearl King married and moved to Western, PA.
Her husband worked for steel and tin mills and together, they raised their 10 children. During the
difficult years of mill toil and child rearing, Pearl made her homemade cheese to feed her own family
and taught several of her children, including one grandson (Michael Jacobs), how to make what is now
known as Kings Pearl Cheese (KPC). As an adult, Michael began making KPC on his own in 1972 in his
Shadyside apartment for family members and friends. Today he and his son Daniel are the only living
relatives that manufacture KPC.
The recipe has been passed down through four generations and 100 years later Michael and Daniel
Jacobs (Grandson and Great Grandson) decided that the family secret needed to be shared. They
formed the Pearl King Enterprises, Inc., patented the process, and began selling the product at the
Bridgeville Farmer's Market. After selling out each week at the Farmer's Market, they approached well-
known restaurant, Wild Rosemary, to see if the restaurant might be interested in using the production
their menu. Chef Gloria Fortunato ordered a case the same day she tasted it, and the Kings Pearl
Cheese business was born.
In 2014, Michael fell ill with cancer and production of Kings Pearl Cheese slowed, but did not stop. KPC
retained a handful of restaurant clients with whom The Jacobs had formed close friendships. In 2015,
Michaels cancer was in full remission, and both Grandson and Great Grandson experienced a renewed
passion to continue the tradition that Pearl had created nearly 100 years ago. The pair teamed up with
Square Caf to manufacture and sell KPC with Square Cafs owner, Sherree Goldstein, and Head Chef,
Kevin Kelley, at the helm of production.
Michael remembers his grandmother, Pearl endured a difficult life to say the least. Many people with
difficult back stories become hardened and lose their joy for life, but not Pearl. She was the sweetest,
most loving, giving, helpful and happy person you have ever met. We want to give KPC to the world to
honor her.
