Definition of the Course:

Independent Study Mentorship (ISM) is a course in


which the student is allowed to chose a mentor in a
specific career field to shadow for a semester.
Students create a plan of study and are able to
interact and participate in activities their mentors
give them.

Explanation of Project Topic

Ive always had a sweet tooth so I wanted to do something fun this


semester and work with a baker. Im very creative so this mentorship will
allow me to explore my creativity as well as learn how to be a better baker.
I will be learning all the steps of baking a cake such as baking, filling, icing
and decorating.

Tips for filling a cake:

Step 1: Place a thin layer of buttercream on your


cake board so your cake will stay stable when icing it.

It helps to refrigerate the cake before filling it so the


cake will hold the moisture longer.

Step 2: Next you set the first layer of cake on the cake
board. Then pipe a thick line of icing around the
outside of the cake. After this you want to fill in the
center of the cake with buttercream icing.

Almost always avoid using fresh fruits or berries unless


you plan to keep the cake and filling refrigerated the
whole time.

Never overfill the cake, because gravity will take over


and cause the buttercream to weaken which causes
the fondant and decorations to sag.

Some professionals suggest using jams and jellies to

Step 3: When placing the top layer of cake on, make


sure to flip the cake upside down so the bottom of the
cake is now on the top. This helps reduce crumbs in
the crumb coat.

Once you have filled the cake, you use a spatula or a smooth surface edge to smooth the icing onto the gaps and
sides of the cake.
When your spreading the icing it is helpful to have another bowl so if crumbs get on your spatula you can easily get
them off by using the other bowl.

Always start with more icing than you actually need because it saves time and gives the cake a better consistency.

After your done with the edges of the cake you want to use your spatula or smooth surface edge to draw the peaks
on the top edges into the cake.
Bench Scrapers are great for smoothing out the icing.

Explanation of Product Topic

I am going to be creating my own cake. I will first start off with drawing an illustration of
how I would like the cake to be. Then I will be choosing flavoring as well as icing and
coloring.

Conclusion

I have already learned so much this 9 weeks about the art of cake making and all the
different steps needed to make sure you get the perfect cake. This mentorship has
allowed me to explore my creativity and just have fun. Im so appreciative of all my
mentor has done for me!
