30 Minute Vegetarian Meals

In thirty minutes, what are the things you can do? Nothing much, I believe. Although we tend to
do things in a hurry, we sometimes find this amount of time not enough for most of the things
we do on a day to day basis. Do you think that in 30 minutes you can already make your own
healthy and hearty meal? If your answer is no, think again.

There is no good excuse for not eating healthfully when so many dishes can be whipped up in no
time. You’d be surprise how an entrée served in fancy restaurants can be done in your own
kitchen in just 30 minutes; and I am not talking about deliveries.

Chili can do a lot of things for you. It reduces the amount of insulin the body needs to lower
blood sugar levels after a meal by up to about 60%. Also, if you eat a dish loaded with hot chilies
the heat from the capsaicin causes secretions, or in other words sweating and a runny nose, that
help clear the nasal passage. Now you know how to deal with that congestion, huh?

Over the years there have been many different views on the effects that regular chillie
consumption can have on the human body. Just try this next recipe, and tell me what benefit you
got after. Well, aside from the fact that it's delicious and hassle-free.

Meatless Chili Mac Soup Recipe

Ready in less than 30 minutes

Ingredients:
2 cups chopped onions
4 cloves garlic, minced
1 cup chopped green pepper
1/2 cup chopped celery
2 tablespoons oil
2 cups water
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano
1 tablespoon salt
1 can (12 oz. size) corn
1 can (19 oz. size) pinto beans
6 ounces uncooked macaroni
4 cups tomato juice
2 tablespoons sugar

Directions:
 Sauté onions, celery, garlic and green pepper in the oil until limp.
 Add water, seasonings, and salt.
 Simmer, covered until vegetables are tender.
 Meanwhile, cook macaroni in boiling water until tender.
 Drain.
 When vegetables are cooked, add macaroni, tomato juice, beans, corn and sugar.
 Mix well.
 Heat through and serve piping hot.

If you like adding more intensity to this hot dish, feel free to add some cayenne! You may also
substitute other canned vegetables for corn.

Makes: 12 cups

more of the carotenoid lutein than any other commonly consumed fruit. Lutein protects against
macular degeneration and cataracts, two disabling age-related eye diseases.

Avocado Veggie Tacos Recipe
Ingredients:
1 medium avocado
non-stick cooking spray
1 1/4 cup onion, julienne strips
1 1/2 cup sweet green pepper, julienne strips
1 1/2 cup sweet red pepper, julienne strips
1 cup cilantro
12 flour tortillas, 8-inch
1 1/2 cup fresh tomato salsa (see below)

Fresh Tomato Salsa:


1 cup fresh tomatoes, diced
1/3 cup onions, diced
1/2 clove garlic, minced
1/3 teaspoon jalapeno peppers, minced
2 tsps. cilantro, minced
1 pinch Cumin
1 1/2 tsps. fresh lime juice

Directions:
 Prepare fresh tomato salsa.
 Spray skillet with non-stick cooking spray.
 Lightly saute the onion and green and red peppers.
 Mince cilantro and cut avocado into 12 slices.
 Warm tortillas in oven and fill with sauteed peppers and onions, cilantro, avocado slices, and
salsa.

 Fold tortilla over and serve.

 Salsa; Mix together all ingredients and refrigerate.

 Serves/makes 12 tacos
