American Chocolate Fudge Brownies

Butter 175 gm
Cocoa powder 40 gm
Eggs 2
Soft light brown sugar 175 gm
Vanilla essence 2.5 mls
Chopped pecan nuts 115 gm
Self raising flour 50 gm
Method

1. Preheat the oven to 180°C


2. Grease then line a 20 cm square shallow cake tin with greaseproof paper.
3. Melt the butter in a saucepan and stir in the cocoa powder. Allow to cool.
4. Beat together the eggs, sugar and vanilla essence in a bowl.
5. Stir in the cooled cocoa mixture and the nuts.
6. Sift in the flour and fold into the mixture with a metal spoon. Do not over mix.
7. Pour the mixture into the cake tin and cake in the oven for 30 – 35 minutes,
until well risen. Remove form the oven *the mix will still be quite soft and wet,
but it cooks further while cooling. Leave to cool in the tin.

Chocolate Fudge Frosting

Plain chocolate 115 gm


Butter 25 gm
Soured cream 15 mls
Method

1. Melt the chocolate and butter together in a pan and remove form the feat.
2. Beat in the soured cream until smooth and glossy.
3. Leave to cool slightly and then spread over the top of the brownies.

When set cut the brownies into 12 cubes for the smallest mix.
