Ingredients:
For The Marinade:
1 bottle of Sam Adams Black Lager

1 bottle of Sam Adams Coastal Wheat
24 oz Apple Sauce
24 oz Cranberry or Apple Juice
28 oz can of whole peeled tomatoes & juice
28 oz. can of whole peeled tomatoes & juice
3 large carrots, diced medium
3 celery stalks, diced medium
2 large onions diced medium
6 oz balsamic glaze

1 cup teriyaki glaze or marinate Hot and cold beer infused Beef Brisket
1 cup Kens Asian balsamic dressing
4 oz Wasabi Dijon mustard

3 long sprigs of fresh rosemary
2 cups brown sugar
8 Garlic Cloves, peeled
4 bay leaves
1 sprig of fresh parsley
1 tsp Thyme
1 tsp dry mustard

Procedures:
Add all ingredients together for the marinate and mix well. Poor
over 10 – 12 lb brisket until completely submerged ( I placed mine in
a beer cooler) let sit in marinate for 3‐6 hours. Or up to 12 hours

depending on strength desired.
Once time has expired remove meat from marinate. Strain the
vegetables from the marinade and set the vegetables and marinade
stock aside for latter use.
Sear off the brisket on all sides in large skillet. (You can use a real
hot outside grill if you do not have a large skillet). Place the seared
brisket in a large disposable (turkey roasting) aluminum pan or a
large braising pan.
Pour the following over the brisket:

1 quart of Chicken Stock
1 quart of Beef Stock
1 quart of Marinate; and all of the vegetables strained from the
marinate.
Cover brisket completely with foil and place in a 375 degree oven for
3‐4 hours until meat is soft and tender but not falling apart.
When brisket is fully cooked remove from the cooking pan. Then
remove the vegetables & stock from pan and place aside for later
use. Put Brisket back in pan and cover with foil and let rest for 30

minutes.

Finishing Procedures:
In a sauce pan take one stick of butter and 1 ¼ cup of flour
whisk on medium heat until thick and creamy. With no flour

lumps. Then add one can of 4oz tomato paste and whisk together
until thick and creamy. Once thick, add all the vegetables and
remaining stock from the cooking pan and continue stirring
vigorously until thick. (f you like a thicker gravy add more Roux. To
finish off add ½ to a whole bottle of Original Recipe “Slather”

Sauce for sweetness and taste desired. Let simmer.

After brisket has cooled for 30 minutes it is time to slice. Always
slice against the grain and on an angle. Add some of the thinly
sliced brisket back into the vegetable stock and gentle mix
together. Put remaining sliced brisket on separate dish.
Hot Slider:
Take a split bun and dip it each of the insides of the bun into the
stock. Take some of the sliced brisket that is in the stock gravy
and place it directly on bun. Serve with Stock as dipping gravy.

Take a split bun and butter each side of it with our Secret Sauce (1
TBL spoon of mayo and ½ TSP of “Original Slather Rub” & dash of
“Sriracha’s” Chili Sauce, mix well) . Now take some of the thin
sliced brisket NOT in the stock gravy and place meat directly on
bun without sauce. Add Lettuce, tomato, and secret sauce. Cover
with top bun and take a pickle slice roll it up and place on top bun

Flat Tire Beer Battered Onion Rings
1 cup of Fat Tire Ale
4 oz of Flour or until mixture is thick like
pancake batter.
½ TSP of paprika
Cut large onion into thick rings.

Peel several large garlic cloves.
Dip ring/cloves in flour then in batter.
Fry in 350 degree oil or until golden
brown. Season with salt. Let stand on
paper towel. When ready to serve flash

fry one more time to make them extra
crunchy.
Season with salt and use as garnish.
Or serve over mashed potatoes and
some fresh vegetables
