Deje que se enfríe la esponja luego se corta en cuadrados y congelar durante un par de
horas - esto los hace mucho más fácil para cubrir (no se olvide o se va a terminar en un

Mezcle los ingredientes y agregue hielo suficiente agua caliente para que tenga el glasé
consistencia espesa colada (más delgada que la guinda la torta de costumbre).

chocolate, la crema de vainilla y el coco con un resultado sorprendente.
Ingredientes
6 huevos grandes
140g de azúcar extrafino
225g de harina con levadura
5 cucharadas de agua caliente
25g de mantequilla fundida
Para la crema de Vainilla
250g de azúcar glasé tamizado
1 cdita de extracto de vainilla
50g de mantequilla ablandada
2 cucharaditas de leche
Para el Glaseado
300g de azúcar glasé
4 cdas de cacao en polvo
25g de mantequilla
125ml de leche
140g de coco seco.
Procedimiento
1. Precalentar el horno a 180ºC. Engrasar un molde cuadrado. Batir los huevos y el azúcar
hasta espesarlos. Incorporar la harina, el agua y la mantequilla, y remover. Verter la mezcla
sobre el molde y cocer hasta que tenga cuerpo. Dejar enfriar en una rejilla.
2. Batir los ingredientes de la crema hasta obtener una masa cremosa. Cortar el bizcocho en
16 cuadrados, y estos por la mitad horizontalmente, con la crema en medio.
3. Para el glaseado, tamizar el azua r y el cacao. Fundir la mantequilla y calentar la leche en
el microondas a temperatura alta. Cubrir los cuadrados con la mezcla de azúcar, escurrirlos
y decorar con el coco. Dejar secar toda la noche para que el glaseado se asiente

Ingredientes 12 porciones
Procedimiento
1. Precalentar el horno a 160°C. Engrasar y revestir dos moldes redondos. Disolver el cacao
en el agua. Batir la mantequilla y el azúcar, añadir los huevos y batir de nuevo. Verter la
mezcla de cacao, tamizar encima la harina y el gasificarte, realizar movimientos
envolventes hasta lograr una masa suave. Dividirla entre los moldes.
2. Para el merengue, batir las claras a punto de nieve. Incorporar la mitad del azúcar, batir
hasta que este lustroso y agregar el resto. Extender el merengue sobre los pasteles y dejar
un borde. Hornear 40 minutos, hasta que el merengue este crujiente y el bizcocho cocido.
Dejar enfriar en el molde 5 minutos y desmoldar con el merengue hacia arriba.
3. Unir los bizcochos y rellenarlos con la nata y los bombones rellenos (si se utilizan).

Se bate la mantequilla hasta que este cremosa, se le agrega el
azucar poco a poco, se le colocan los huevos y la vainilla.
Se disuelven el cacao en el agua tibia y se va agregando a la
mezcla anterior alternando con la harina (previamente cernida
con la sal, el bicarbonato y el polvo royal), terminando con
harina. Se hornea a 350º por 50 minutos a 1 hora.
COBERTURA:
Se pone a calentar una lata de leche condensada y se le agrega
una tableta de chocolate de taza hasta que se disuelva. Se
cubre la torta (Al sacarla del horno - caliente).

PROCEDIMIENTO
Para la mousse de Chocolate
Paso 1: Se pone en un cazo a fuego suave el chocolate troceado y la leche. Cuando el
chocolate se ha derretido se aparta del fuego y se añade la mantequilla troceada.
Paso 2: En un recipiente aparte se mezclan bien las yemas con el azúcar. A continuación, se
añade la mezcla de chocolate anterior, revolviendo bien todo.
Paso 3: Se baten las claras a punto de nieve, añadiendo un pellizquito de sal.
Paso 4: Enfriada la mezcla de chocolate, se incorporan las claras a punto de nieve, muy
suavemente, no rompiendo la espuma, acariciándolas lentamente y cuidando que vayan
adquiriendo un tono igual.
Paso 5: Se pone la mousse en una fuente de vidrio y se mete en el frigorífico por dos horas
Para terminar el postre, retirar del frigorifico y cortar las vainillas por la mitad y colocarlas
en la mousse para que parezcan lapidas de cementerio, si haz hecho las galletas de
fantasmas agregaselas tambien. Luego escribe escribe las vainillas con chocolate liquido. Si
tienes un limon, ralla su cascara para simular pasto.

Combine la crema, el café y la cáscara en una cacerola, llevar sólo a ebullición a fuego medio-

HACER EL CARMELO
Para el caramelo, combine el azúcar, el jarabe de arce y ¼ taza de agua en una cacerola
pequeña y cocine sobre fuego medio hasta que el azúcar se disuelva.
Aumenta el fuego a medio-alto y cocine por 3 5 minutos o hasta que espese el jarabe.
Retire del fuego, agregue express, agitar para mezclar.
Añadir la mantequilla del remolino, que incorpore y enfriar.

These are some of the best brownies we've ever had—fudgy in the middle and chewy on
the outside with a shiny, crackly top. The browned butter adds a rich, nutty flavor(sabor a

Position rack in bottom third of oven; preheat to 325°F. Line 8x8x2-inch metal baking pan
with foil, pressing foil firmly against pan sides and leaving 2-inch overhang. Coat foil with
nonstick spray. Melt butter in medium saucepan over medium heat. Continue cooking until
butter stops foaming and browned bits form at bottom of pan, stirring often, about 5
minutes. Remove from heat; immediately add sugar, cocoa, 2 teaspoons water, vanilla, and
1/4 teaspoon (generous) salt. Stir to blend. Let cool 5 minutes (mixture will still be hot).
Add eggs to hot mixture 1 at a time, beating vigorously to blend after each addition. When
mixture looks thick and shiny, add flour and stir until blended. Beat vigorously 60 strokes.
Stir in nuts. Transfer batter to prepared pan.
Bake brownies until toothpick inserted into center comes out almost clean (with a few
moist crumbs attached), about 25 minutes. Cool in pan on rack. Using foil overhang, lift
brownies from pan. Cut into 4 strips. Cut each strip crosswise into 4 brownies. DO
AHEAD Can be made 2 days ahead. Store airtight at room temperature.

1/3 cup sifted unsweetened cocoa powder (preferably Dutch-process; sifted, then measured)
4 large eggs

Gianduja bars are often sold only in professional quantities, but one-pound blocks (enough
to make this recipe) can be ordered from Jane's Cakes and Chocolates (800-262-7630).
*Many supermarkets sell pre-husked hazelnuts. if you can't find them, here's how to husk
whole hazelnuts: Scatter nuts on rimmed baking sheet and toast at 350°F until skins darken,
12 to 15 minutes. Wrap warm hazelnuts in kitchen towel and rub together to remove skins.

Position rack in bottom third of oven and preheat to 350°F. Line bottom of 9-inch-diameter
cake pan with 2-inch-high sides with parchment paper. Melt butter in saucepan over
medium heat. Remove from heat. Spoon off foam from top of butter and discard. Spoon
clear yellow butter into small metal bowl, leaving water and milk solids in bottom of pan.
Add vanilla to butter in bowl; set clarified butter aside.
Sift flour and cocoa powder together 3 times into medium bowl. Whisk eggs and sugar in
large metal bowl to blend. Place bowl with egg mixture in large skillet of barely simmering
water; whisk constantly until egg mixture is lukewarm (105°F), about 2 minutes. Remove
bowl from water. Place bowl with clarified butter in hot water in same skillet over low heat
to keep warm.
Using electric mixer, beat egg mixture until cool and tripled in volume, about 5 minutes.
Sift 1/3 of flour-cocoa mixture over egg mixture and gently fold in with rubber spatula.
Fold in remaining flour-cocoa mixture in 2 more additions. Fold 1 cup of cake batter into
warm clarified butter until incorporated. Using rubber spatula, gently fold butter-cake batter
mixture into remaining cake batter.
Transfer batter to prepared pan. Bake until tester inserted into center of cake comes out
clean and top springs back slightly when gently pressed, about 30 minutes. Cool completely
in pan on rack. DO AHEADCan be made 1 day ahead. Cover; store at room temperature.
Run knife between pan sides and cake to loosen. Invert cake onto rack; remove parchment.
Using long serrated knife, trim top of cake horizontally, forming 3/4-inch-high cake layer.
Using bottom of 8-inch-diameter springform pan as guide, trim around sides of cake to
form 8-inch round cake. Set cake aside.
hazelnut crunch
Line bottom of 8-inch-diameter springform pan with parchment paper. Pour enough water
into large skillet to reach depth of 1 inch; bring to simmer. Remove skillet from heat. Place
gianduja in medium metal bowl; set bowl in hot water in skillet. Stir until gianduja is
melted and smooth. Stir in cereal and nuts. Spread crunch evenly over parchment in pan.
Place cake atop crunch layer, pressing to adhere. Chill until crunch is firm, about 1 hour.
mousse
Place gianduja in metal bowl. Pour enough water into large skillet to reach depth of 1 inch;
bring to simmer. Remove from heat; place bowl with gianduja in hot water in skillet. Stir
until gianduja is smooth. Remove bowl from water; cool gianduja to lukewarm.
Using electric mixer, beat cream and salt in another bowl until very soft peaks form (when
bowl is tilted, cream should be fluffy but still pourable and flow to one side). Mix 3
tablespoons water into melted gianduja. Pour whipped cream over and fold into gianduja
just until incorporated (mousse will be very soft).
Brush top of chilled cake with liqueur. Spread mousse over cake in pan. Cover and chill
overnight. DO AHEAD Can be prepared 2 days ahead. Keep chilled.
Run knife between cake and pan sides to loosen. Soak kitchen towel in hot water; wring out
water. Wrap hot wet towel around pan sides and hold 30 seconds. Carefully remove pan
sides from cake; smooth mousse with knife if necessary. Place cake on pan bottom on rack
set over baking sheet. Sift cocoa powder lightly over top of cake. Using stencils such as
snowflakes or stars, sift powdered sugar over top of cake. Transfer to platter and serve.

sides with nonstick spray. Place chocolate and cocoa in medium bowl. Pour hot coffee and
hot water over; whisk until smooth. Whisk flour, baking powder, baking soda, and salt in
another medium bowl. Using electric mixer, beat oil and both sugars in large bowl 1 minute
(mixture will be crumbly). Add eggs 1 at a time, beating to blend after each addition. Beat
in sour cream. Mix in half of dry ingredients. Beat in chocolate mixture. Add remaining dry
ingredients; beat on low speed just to blend (batter will be thin). Divide batter between pans
(layers will be shallow).
Bake cakes until tester inserted into centers comes out clean, about 20 minutes. Cool in
pans on rack.
panna cotta
Place 1/2 cup water in small bowl. Sprinkle gelatin over; let soften 10 minutes. Place both
chocolates in large metal bowl. Combine cream, milk, sugar, and vanilla extract in large
saucepan. Scrape in seeds from vanilla beans; add beans. Bring to boil, stirring until sugar
dissolves; remove from heat. Add gelatin mixture; whisk to dissolve. Pour cream mixture
over chocolates in bowl; whisk until completely melted. Place bowl over a larger bowl of
ice water. Stir often until mixture thickens like pudding, draining off water and adding
more ice to larger bowl as needed, about 30 minutes. Remove from over water.
Pour 1/2 of panna cotta over cake in 1 pan (mixture may drip down sides of cake). Freeze
45 minutes. Keep remaining panna cotta at room temperature.
Remove pan sides from second cake. Using large metal spatula, carefully slide cake off of
pan bottom and place atop panna cotta in cake pan. Pour remaining panna cotta over, filling
pan completely. Chill overnight. DO AHEAD Can be covered and frozen for 2 weeks.
Defrost overnight in refrigerator before continuing.
chocolate band
Line large baking sheet with foil; set aside. Place another large sheet of foil on work
surface; place waxed paper strips atop foil, spacing apart. Stir chocolate in medium bowl
set over pan of simmering water until smooth. Pour half of melted chocolate down center of
each waxed paper strip. Using small offset spatula, spread chocolate to cover strips evenly,
allowing some of chocolate to extend beyond edges of paper strips, making sure strips are
completely covered. Using fingertips, lift strips and place on foil-lined sheet. Chill until
chocolate just begins to set but is still completely flexible, about 2 minutes.
Cut around pan sides to release cake. Remove pan sides from cake. Using fingertips, lift 1
chocolate band from foil. Wrap band around cake, waxed-paper side out, lining up 1 long
edge with bottom of cake (band will be higher than cake). Repeat with second band,
arranging so ends just meet, pressing band onto uncovered side of cake. If bands overlap,
trim any excess paper and chocolate. Using fingertips, press top edge of band in toward
cake, forming slight ruffle. Chill until chocolate sets, 5 minutes. Gently peel off waxed
paper. Chill cake. DO AHEAD Can be made 1 day ahead. Chill.

Usually the differences in a popular recipe--say red velvet cake--are a matter of subtle
variations (i.e., less flour, more sugar, cream cheese frosting versus vanilla frosting) and
personal tweaks (some people trade the red food dye for beet juice). However, on occasion,
a recipe will undergo seismic differences from state to state and person to person. The
Mississippi Mud Pie is one of those recipes. Mississippi mud means many things to many
people, and we took the liberty of reinterpreting two of the most popular versions (see
version B on page 156). This recipe is the simpler one. In fact, you can put it together rather
effortlessly (though there are stretches of time to account for the chilling and freezing
steps), and I find that perfectly charming: chocolate cookie crust covered in a layer of
chocolate fudge covered in a layer of coffee ice cream and drizzled with more bourbon
fudge. You could swap the coffee ice cream for another flavor, but then you couldn't call it
Mississippi mud.

For the chocolate cookie crust
PREPARATION
Make the chocolate cookie crust
In a food processor, pulverize the wafer cookies into a very fine crumb. You should have
about 11/2 cups. Place the crumbs into a bowl, add the sugar, and stir until combined.
Pour the melted butter over the crumbs and mix well. Transfer the crumb mixture to a 9-
inch pie plate and press it into the bottom and up the sides. Use the back of a large spoon to
get an even crust. Set the crust aside in the refrigerator.
In a medium saucepan, bring the cream, butter, and corn syrup to a simmer.
Remove the mixture from the heat, pour it over the chocolate, and let sit for 1 minute. Then
whisk the chocolate mixture until it is completely smooth.
Spread the fudge evenly over the bottom of the pie crust, cover it, and refrigerate for 2
hours.
Soften the coffee ice cream by placing the container in the microwave for 10 seconds on
high. Put it into a large bowl and use a rubber spatula to beat it until it is slightly malleable.
Spread the ice cream over the chilled fudge filling, sprinkle it with pecans, gently pressing
them into the ice cream, and freeze the pie for about 1 1/2 hours, or until the ice cream is
firm.
Beat the fudge topping until it reaches room temperature, and pour it over the ice cream and
pecan layer in a zigzag pattern. Freeze the Mississippi Mud Pie until it is set, about 20
minutes. To serve the pie, cut it with a warmed sharp knife.
The pie will keep in the freezer, tightly covered, for up to 4 days.

foil-lined baking sheet. Repeat with remaining leaves. Chill, uncovered, until chocolate
coating is cold and firm, at least 1 hour. Working with 1 leaf at a time, carefully peel green
leaf away from chocolate. Return chocolate leaf to same sheet; discard green leaf. DO
AHEAD Can be made 3 days ahead. Cover with plastic wrap and chill.

Position rack in center of oven and preheat to 375°F. Line 15x10x1-inch baking sheet with
parchment. Coat paper with nonstick spray and dust with cocoa.
Sift 1/2 cup sugar, cake flour, 1/4 cup cocoa, baking powder, and salt into small bowl.
Using electric mixer, beat egg yolks in large bowl until thick. Beat in oil, 2 tablespoons
water, and vanilla. Gradually add dry ingredients, beating just until blended. Using clean
dry beaters, beat egg whites and cream of tartar in medium bowl until soft peaks form.
Gradually add remaining 1/2 cup sugar, beating until stiff but not dry. Fold 1/4 of whites
into yolk mixture to lighten. Fold in remaining whites in 2 additions. Spread batter evenly

Bake cake until puffed and tester inserted into center comes out clean, about 12 minutes.
Cool cake in pan on rack 10 minutes. Sift light layer of cocoa over large smooth kitchen
towel (not terry cloth). Cut around pan sides. Turn cake out onto prepared towel, leaving 3-
inch cloth border on 1 long side. Peel off parchment. Starting at long side with cloth border
and using cloth as aid, roll up cake in towel (towel will be rolled up inside). Place cake,
seam side down, on work surface; cool completely.
Microwave ice cream in 10-second intervals until barely softened. Unroll cake on work
surface but leave on cloth. Dollop ice cream over cake by spoonfuls. Gently spread ice
cream into even layer, leaving 1-inch plain border on long side opposite cloth border.
Sprinkle ice cream with crushed candy. Using cloth as aid and starting at cloth border, roll
up cake, enclosing ice cream in cake. Place cake, seam side down, on long platter; cover
with plastic wrap. Freeze cake at least 8 hours or overnight.

Using electric mixer, beat egg whites and cream of tartar in large bowl to soft peaks.
Gradually add sugar, beating until stiff but not dry. Beat in vanilla.
Cut off 1/8 of cake at angle at 1 end. Press cutoff part onto center of 1 side of log, cut side
in. Spread meringue all over top, sides, and ends of cake. Using fork, make long grooves in
meringue down length of cake and in circles on ends to resemble tree bark. Freeze cake
until meringue is cold and firm, at least 3 hours. Using torch, brown meringue in random
spots. Return cake to freezer. DO AHEAD Can be made 2 days ahead. Cover and keep
frozen.
Garnish cake with chocolate leaves, fresh mint sprigs, and small candy canes. Cut cake
crosswise into 1-inch-wide slices. Drizzle with warm chocolate sauce.

Preheat oven to 350°F. Combine cookie crumbs and 5 tablespoons butter in medium bowl.

thin even layer onto bottom and up sides of 9-inch-diameter tart pan with removable
bottom. Bake crust until set and beginning to crisp, pressing with back of fork if crust puffs,

Stir liqueur and espresso powder in small bowl until espresso dissolves. Place chocolate

Preheat oven to 350°F. Coat 15x10-inch sheet of parchment paper with nonstick spray.
Line 15x10x1-inch baking sheet with prepared parchment (sides of baking sheet should not
be coated).
Combine eggs, sugar, 2 teaspoons espresso powder, vanilla, and salt in large bowl. Using
electric mixer, beat until egg mixture is thick and fluffy and falls in ribbons when beater is
lifted, 6 to 7 minutes. Sift flour over in 3 additions, folding gently just to incorporate after
each addition. Transfer 1 cup batter to small bowl; fold in butter. Fold batter from small
bowl back into batter in large bowl just until combined; spread evenly on baking sheet.
Bake cake until tester inserted into center comes out clean and cake begins to pull away
from pan, about 18 minutes. Cool cake in pan on rack 30 minutes.
Sift 2 tablespoons powdered sugar over cake. Cut around pan sides. Slide spatula under
parchment to loosen from pan and invert cake onto work surface. Peel off parchment. Cut
cake crosswise into 4 rectangles, each about 10x3 1/2 inches.
Place 1 cake rectangle on platter. Brush 2 tablespoons soaking syrup over. Spread 3
tablespoons ganache over, then 1/3 of espresso mousse (about 3/4 cup). Repeat 2 more
times with cake, syrup, ganache, and mousse. Top with fourth cake layer; press lightly to
adhere. Spread 2/3 cup plain mousse thinly over top and sides of torte to seal, then spread
remaining mousse over top and sides. DO AHEAD Can be made 1 day ahead. Tent loosely
with foil and chill.
Before serving, press praline pieces into mousse on all sides of torte. Mound white
chocolate curls on top. Mix 4 tablespoons powdered sugar and 1 1/2 teaspoons espresso
powder in small bowl. Sift over top of torte.

CRUST
Blend flour, powdered sugar, and salt in processor. Add butter and cut in using on/off turns
until mixture resembles coarse meal. Add 1 tablespoon ice water and blend just until moist
clumps form, adding more ice water by teaspoonfuls if mixture is dry. Transfer dough to 9-
inch-diameter tart pan with removable bottom. Using lightly floured fingers, press dough
firmly and evenly onto bottom and up sides of pan. Chill crust 1 hour.
Position rack in center of oven and preheat to 375°F. Line crust with foil; fill with dried
beans or pie weights. Bake crust until pale golden around edges and sides are set, about 20
minutes. Remove foil and beans; bake until crust is golden and cooked through, about 14
minutes. Transfer to rack and cool crust completely in pan.
GANACHE
Bring cream to simmer in heavy small saucepan. Remove from heat. Add chocolate; stir
until smooth.
Spoon 3 tablespoons ganache into 1 corner of small resealable plastic bag and seal; set
aside at room temperature for piping. Spread remaining ganache evenly over bottom of
crust. Sprinkle chopped macadamia nuts evenly over ganache layer in crust. Freeze crust
while preparing caramel filling.
CARAMEL FILLING
Combine sugar and 1/3 cup water in heavy medium saucepan. Stir over medium-low heat
until sugar dissolves. Increase heat and boil without stirring until syrup is golden amber,
occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 8
minutes. Remove pan from heat. Add cream and butter; stir until any caramel bits dissolve
and mixture is smooth. Attach candy thermometer to side of pan and bring mixture to boil
over medium-high heat. Boil without stirring until thermometer registers 240°F, about 2 1/2
minutes longer. Remove from heat. Whisk in vanilla and salt.
Remove crust from freezer. Working quickly, pour caramel filling into crust. Gently shake
tart pan to allow filling to settle evenly in crust. Cool completely at room temperature,
about 3 hours.
Place reserved resealable plastic bag with chocolate ganache in microwave and heat in 5-
second intervals just until smooth and pourable. Using scissors, cut off very small tip from
corner of bag with ganache. Pipe ganache decoratively over caramel filling in crosshatch
pattern. Chill until chocolate is set, about 20 minutes. DO AHEAD Can be made 2 days
ahead. Cover and keep chilled. Bring tart to room temperature before serving.
Remove sides from tart pan. Place tart on platter. Cut into wedges and serve with vanilla ice
cream, if desired.

lengthwise into 3 wedges. Combine 2 1/2 cups water and sugar in large saucepan. Bring to
boil, stirring until sugar dissolves. Add orange wedges and any accumulated juices to syrup
and bring to boil. Reduce heat and simmer until orange peel is soft and translucent and
syrup is reduced and thickened, turning orange wedges occasionally and adding more water
by 1/4 cupfuls as needed if syrup is too thick before orange wedges are soft, 35 to 40
minutes. Remove from heat. Stir in orange liqueur. Cool 15 minutes. Transfer to small
container. Cover and chill. DO AHEAD Can be made 1 week ahead. Keep chilled. Bring to
room temperature before using.
CAKE
Position rack in center of oven and preheat to 325°F. Lightly butter 10-inch-diameter cake
pan with 2-inch-high sides. Line bottom of pan with parchment paper; butter parchment.
Whisk flour, baking powder, and salt in medium bowl to blend. Combine chocolate and
butter in large metal bowl. Set bowl over saucepan of simmering water; stir until chocolate-
butter mixture is melted and smooth. Remove bowl from over water; add both sugars,
orange liqueur, and orange peel and whisk until blended (mixture will look grainy). Add
eggs, 2 at a time, and whisk until just blended after each addition. Whisk in sour cream.
Add flour mixture and stir in with rubber spatula just until incorporated. Transfer batter to
prepared pan; spread evenly.

medium-low speed until frothy. Increase speed to medium-high and beat until soft peaks
form. Increase speed to high; gradually add sugar mixture and beat until stiff and glossy
peaks form, about 3 minutes. Beat in vanilla and peppermint extracts. Divide meringue
equally among prepared rectangles on parchment (about 1 1/3 cups for each); spread
meringue evenly within traced lines.
Bake meringues until dry and crisp but not browned, about 3 hours. Turn off oven and let
meringues cool completely in oven.
PEPPERMINT SYRUP
Combine 1/2 cup water and sugar in small saucepan. Stir over medium heat until sugar
dissolves and mixture comes to boil. Remove from heat; stir in peppermint schnapps.
Transfer to bowl; cover and chill until cold. DO AHEAD Can be made 3 days ahead. Keep
chilled.
CAKE
Position rack in center of oven and preheat to 350°F. Lightly butter bottom and sides of
13x9x1-inch baking sheet. Line bottom of baking sheet with parchment paper. Lightly dust
sheet sides with flour. Sift 1/2 cup flour, cocoa powder, baking powder, and salt into
medium bowl. Using electric mixer, beat eggs and egg yolks in another medium bowl until
pale and foamy, about 2 minutes. Add sugar and vanilla; beat until mixture is thick and
ribbon forms when beaters are lifted, about 3 minutes. Sift flour mixture over egg mixture
and gently fold in with rubber spatula just until incorporated.
Transfer batter to baking sheet; spread evenly to edges. Bake until top springs back when
gently touched and tester inserted into center comes out clean, about 15 minutes. Transfer
baking sheet to rack and cool cake 20 minutes. Run small knife around sides of cake to
loosen. Invert cake onto parchment-lined work surface; gently peel off parchment. Cool
completely. Using serrated knife, cut cake in half lengthwise, then trim each half to 12x4-
inch rectangle.
BUTTERCREAM
Simmer cream, butter, and corn syrup in medium saucepan. Remove from heat. Add
chocolate; whisk until smooth. Whisk in vanilla and salt. Let stand at room temperature
until thick enough to spread, 1 hour to 1 1/2 hours. DO AHEAD Can be made 4 hours
ahead. Let stand at room temperature.
Transfer 1/2 cup buttercream to pastry bag fitted with medium star tip; reserve for piping
rosettes. Brush off any crumbs from meringue layers and cake layers. Place several small
dabs of buttercream down center of 15-inch-long rectangular serving platter. Place 1
meringue layer, top side up, atop buttercream on platter, anchoring to platter. Place strips of
foil around meringue layer to protect platter when spreading meringue with buttercream.
Using small offset spatula, spread 2/3 cup buttercream over meringue. Top with 1 cake
layer, top side down, pressing gently to adhere. Brush cake layer with 1/3 cup peppermint
syrup (cake layer will be very moist). Spread 2/3 cup buttercream over, then top with
second meringue layer, top side up. Spread 2/3 cup buttercream over. Cover with second
cake layer, top side down. Brush with 1/3 cup peppermint syrup (cake layer will be very
moist). Spread with 2/3 cup buttercream. Top with third meringue layer, top side up. Spread
thin layer of buttercream over top and sides of cake. Chill 15 minutes.
Spread remaining buttercream over top and sides of cake. Pipe small rosettes of
buttercream in 2 rows atop center of cake. Stand 1 or 2 mint wafer triangles in each rosette.

creme and ribbons form when whisk is lifted, 8 to 9 minutes. Whisk in peppermint extract.
Remove bowl from over water and attach bowl to heavy-duty stand mixer fitted with whisk
attachment. Beat on high speed until mixture is barely warm to touch and very thick, 7 to 8
minutes.
Using offset spatula and working quickly, spread frosting over top and sides of cake.

trimmed side down. Drop remaining frosting by spoonfuls onto top of cake, leaving sides
of cake plain. Spread frosting to top edges of cake, swirling and creating peaks, if desired.

Nutritional Information
(For 9 servings)
You need:
2 eggs
7 oz raspberries
7 oz mascarpone cheese
Note: if you prefer the cream lighter, whip 1/3 cup cold heavy cream and fold it in the
mascarpone preparation.
Steps:
Preheat the oven to 350 F. Butter an 8 x 8″ pan and line it with parchment paper.
In a bowl, combine the flours, baking powder and cocoa powder; set aside.
In the bowl of a stand mixer, beat the eggs and sugar until pale and light in color. Fold in
the flours, and then the melted chocolate/butter. Mix until just combined.
Pour this batter into the pan, and add the rest of the pistachios on top. Bake the cake for
about 35 to 40 minutes. Insert the sharp blade of the knife in to see if it is cooked — it
should come out almost dry. Let the cake cool on a rack. Cut the cake in squares.
Mix the mascarpone with the confectioner’s sugar and vanilla until smooth and spreadable.
Spread over the chocolate squares, and top with raspberries. Dust with confectioner’s sugar
and serve.

(Pour 9 parts)
Ingrédients :
Pour le gâteau au chocolat :
70 g de beurre salé
2 oeufs
30 g de farine d’amaranthe
30 g de farine de quinoa
Pour la garniture:
200 g de framboises
200 g de mascarpone
1 càc pure d’extrait de vanille pur ou les graines d’une gousse de vanille
Remarque : si vous préférez une crème plus aérée, ajoutez 60 ml de crème liquide battue
fermement et ajoutez-la délicatement à la préparation à la mascarpone, en veillant à bien
soulever la masse.
Etapes :
Dans un bol. combinez les farines, la poudre de noisettes, la poudre à lever et le cacao;
mettez de côté.
Dans le bol d’un mixeur à pied, battez les oeufs avec le sucre jusqu’à blanchiment. Ajoutez
délicatement la préparation sèche et ensuite le chocolat/beurre fondus, jusqu’à ce que ce
soit à peine incorporé.
Versez cette préparation au chocolat dans le moule et ajoutez le reste de pistaches. Faites
cuire environ 35 à 40 minutes. Vérifiez la cuisson en insérant la lame d’un couteau au
milieu du gâteau; le gâteau est cuit quand elle en ressort presque sèche. Démoulez le gâteau
et laissez-le refroidir sur une grille. Coupez-le en carrés.
Dans une jatte, mélangez bien la mascarpone avec le sucre et la vanille. Etalez sur les parts
de gâteau au chocolat et ajoutez les framboises. Saupoudrez de sucre glace.

1 Macoun apple, peeled, cored and grated (or any apple good for baking)
Steps:
Preheat the oven at 350 F and butter a loaf pan or muffin molds. Coat them with flour and
tap the excess out; set aside.
In a bowl, combine the flours with the quinoa flakes, baking soda, baking powder and
ground cinnamon; set aside.
In the bowl of your stand mixer, beat the eggs with the sugar until light. Add the butter and
mix.
Using a wooden spoon or rubber spatula, stir in the apple and bananas.
Fold in the flours and chocolate and nuts and mix until just combined.
Pour the batter into the molds you choose and bake the cake for 30 to 35 minutes (for a
large loaf) or 20 to 25 minutes (for small muffins).
Two Chocolate Mousse Cake
I remember that when I first moved to Boston, we used to buy a sweet treat called
temptations bars. Whole Foods sold them. They were simple but deliciously good: a
shortbread base, caramel, pecans and chocolate were combined to make an irresistible treat.
They were the first thing that caught my attention in my friend baker and food blogger
Anita Chu‘s new cookbook, Field Guide to Cookies, which she kindly asked me to review,
along with eight other avid and talented food blogger/bakers (which list is easily found by
following this link).

Field Guide to Cookies, or How to Identify and Bake Virtually Every Cookie Imaginable, is
a small compact cookbook designed to cover the basics of many popular cookies, some of
which I am sure you know, and some which you will be delighted to discover. The book
itself is divided in four clear sections covering 100 illustrated recipes: Drop Cookies, Bar
Cookies, Molded Cookies and to finish, Rolled Cookies — enough to bring you in a
comfortable sugar coma. Each recipe is introduced with a general description followed by a
short history, which is a nice way to become better educated about cookies. And, since the
book holds easily in one hand too, it can conveniently be packed for a trip, should you feel
the need to bake while you are away. A nice gift to make to anyone with a sweet tooth,
really.
I asked Anita a few questions about the making of the book, to hear more about her recent
experience.
Anita: In writing a Field Guide to Cookies, I was hoping to cover a range of cookies both
familiar and unusual. I have a kind of scientific mind – I really enjoy categorizing desserts
and trying to figure how they work and how different pastries are related to each other. So
it was really fun to do a lot of research into cookies and find out about their history and
how different cookies often evolved from the same base recipe. It was really fascinating.
And, of course, since, it was a field guide, it was a challenge to figure out the “best”, or at
least a pretty good version of each of these cookies!!
In writing a book, it fulfilled one of my lifelong dreams, which was to be published! I have
always loved reading and writing since I was young, and have kept various journals and
done other creative writing as I was growing up. When I started my blog, it was as much to
practice my baking as it was to practice writing; I felt the best way to improve my writing
was to do a lot of it. I’m very gratified that it has improved to the point where someone
thought I could be published. That is one of the biggest thrills for me!
Anita: The topic of cookies was decided by my publisher, Quirk Books. They were looking
to expand their successful Field Guide line of books and came up with the idea of cookies.
They approached me and asked it I would be interested. Since cookies are a big topic of
interest for me, I said yes. I think they’re so great and fun to write about – everyone love
cookies, they are simple to make, and in writing this book I discovered there are more
varieties than I ever dreamed of!
Me: What was the hardest/most challenging thing you encountered while writing the book?
Anita: The biggest challenge was time, definitely. I am sure you understand about wanting
to keep tinkering and experimenting with recipes, and I kept wishing I had more time to
perfect those cookies! But I had to balance time between research and baking and writing
and editing. It was a big lesson in time and resource management – and getting good at
writing really fast! It helped to have a plan – I had schedules everywhere – and to be
organized with my notes!
Anita’s Turtle Bar recipe is straightforward. It requires basic ingredients easily available for
any baker. I did not have any issue with the recipe beside finding out along the way that the
measurements of the pan used to make the base of the cookie were inaccurate. Unsure at
first, I asked Anita, of course. She agreed that the measurements of the pan were indeed
wrong. Nothing serious, and I was glad to have had the intuition.
The cookie has three layers: a shortbread base on top of which pecans, caramel and dark
chocolate are combined. I first made the recipe as it was, then decided to adapt it, preparing
a variant using gluten free flours (quinoa, white rice flours, along with quinoa flakes) and
less caramel. Both were a great treat.

Turtle Bars
Recipe from Anita Chu’s Field Guide to Cookies
You need:
1 cup chocolate chips — I used 64 % cocoa Valrhona dark chocolate, chopped coarsely
instead
Steps:
Preheat the oven at 350 F. Line a 9 by 13 inch pan (I used a 8 x 8 inch pan) with aluminum
foil, leaving enough to hang over the edge and act as handles to remove bars after baking.
Grease foil with cooking spray.
Combine flour, sugar, and salt in a food processor and blend briefly to combine.
Cut butter in small pieces and sprinkle over flour mixture. Process until the mixture
resembles coarse crumbs.
Press the mixture into the bottom of the pan. Bake for 18 to 20 minutes, until the crust is
golden and firm and dry. Leave the oven on at the same temperature.
Combine the cream, butter, salt, and brown sugar in a saucepan and bring to a boil for about
1 minute.
Spread the pecans over the top of the crust. Pour the hot caramel filling evenly over the
pecans. Bake for 15 to 20 minutes, until the caramel topping darkens.
Remove from the oven and sprinkle the chocolate chips over the hot topping. Let sit for a
few moments and then use a knife or offset spatula to spread the melted chocolate evenly
over the top.
Chill the bars in the refrigerator for about 30 minutes or until the bars have fully set before
slicing them.
Using foil as handles, pull bars from pan and place on cutting board. Cut long side into 9
strips, then cut 4 strips across the short side, creating 36 bars. Wipe the knife clean between
cuts.
RECIPE
Yield: 8 to 12 servings
Ingredients

Spice bag, containing 4 star anise pods, 12 allspice berries, 4 (3-inch) cinnamon sticks,
canela or cassia, tied in a cheesecloth sachet

Place the achiote in a medium-sized saucepan, cover with 2 quarts water, and bring to a
gentle boil. Simmer, uncovered, for 5 minutes. Strain through a fine mesh sieve into a
bowl; reserve the liquid. You can save the achiote seeds and grind them to use in a
seasoning mix, or steep them in the liquid for another recipe.
Stir in the whole milk and condensed milk. Reduce the heat to low and cook for 5 minutes.
Stir in the chocolate and mix to melt evenly. Cook for 40 minutes, stirring occasionally,
until creamy but still fluid. Half way through the cooking, split the vanilla bean lengthwise
with a small sharp knife and scrape the seeds into the mixture. Add the vanilla bean and stir
to incorporate. When the pudding is done but still loose-textured, remove the spice bag and
vanilla bean. Pour into a serving dish and sprinkle with ground cinnamon. Serve with
cinnamon or cacao cookies.
Rinse the rice in cold water until the water runs clear. Place in a heavy-bottomed 4-quart
saucepan with the reserved achiote infusion, salt, and the spice bag. Bring to a boil. Lower
the heat to medium and cook for 20 to 25 minutes, uncovered, until the rice is soft, about 20
to 25 minutes.

PREPARACIÓN:
Tradiccional:
• Batir y agregarle, poco a poco, la mantequilla, a temperatura ambiente, el azúcar, las yemas y la
nata, sin montar. Mezcla bien. Pásalo a una fuente
• Añádele las galletas troceadas a mano, NO MOLIDAS, trocealas, de una galleta pueden salirte
unos doce trocitos.
• Picamos las nueces, reservamos las mejores para adornar y añadimos las demás.
• Agrégale las cerezas, sin escurrir partidas en cuatro. Añadimos algo del almíbar de las cerezas y el
brandy.
• Coloca la mezcla en un molde, preferiblemente de silicona. Si utilizaras otro molde, debes untarlo
previamente con mantequilla.
• Lo puedes adornar con almendras picadas, cerezas partidas por la mitad, nueces, adornitos de
chocolate,etc.
• Si no quieres ponerle mucho adorno, pásale un tenedor por toda la superficie antes de que se
enfríe.
• Guarda en la heladera o freezer como mínimo dos horas. (yo lo metí en el congelador para poderlo
desmoldar mejor.
En Thermomix:
-Para hacer el azúcar glass; ponemos el azúcar en el vaso y trituramos a velocidad 8-9-10 durante
unos 30 seg. y reservamos.
-Le añadimos el azúcar glas que tenemos reservada, las yemas y la nata sin montar, 2 minutos a
velocidad 4
-Añádele las galletas troceadas a mano, NO MOLIDAS, estrújalas, de una galleta pueden salirte una
docena de trocitos.
- Picamos las nueces, reservamos las mejores para adornar y añádimos las demas.
- Agrégale las cerezas, sin escurrir partidas en cuatro. Añadimos algo del almíbar de las cerezas y el
brandy.
- Coloca la mezcla en un molde, preferiblemente de silicona. Si utilizaras otro molde, debes untarlo
previamente con mantequilla.
-Lo puedes adornar con almendras picadas, cerezas partidas por la mitad, nueces, adornitos de

INGREDIENTES:
Opcionalmente, 2 cucharadas soperas de ron o de coñac -yo uso el almibar de las cerezas-.
Uso un molde de silicona con forma de corazón. Guardo en la nevera un par de horas hasta que se
solidifica. Observa con qué facilidad puedo sacar la tarta del molde. Son tan flexibles que se le
puede dar la vuelta como a un calcetín.
Estos deditos de Cadbury los utilicé para adornarla por el reborde. Pero, no son necesarios. Puedes
untarla, una vez fría con un poco de chocolate derretido o hacerle cualquier adorno con lo que
tengas a mano y que case bien con los sabores. La verdadera gracia está en la tarta los adornos son
eso, pura presentación.
PREPARACIÓN:

Para desmoldar calienta un plato hondo con agua en el microondas. Sácalo y apoya sobre él unos
segundos el recipiente con la tarta y "ta chan" puedes desprenderla con facilidad.¡Ojo! no te pases
que se derrite el chocolate.
NOTA:Para derretir el chocolate al microondas, hazlo de 30 en 30 segundos.Ten en cuenta, que
aunque esté casi derretido conserva la forma, así que vete revolviendo cada vez y aunque te quede
algo sin derretir con el mismo calor residual va a hacerlo. No te pases porque se quema con
facilidad.Sino tienes mucha soltura, hazlo, también en el microondas al baño María, es a mitad de
potencia, y sin necesidad de usar agua, como se hace más lentito corres menos peligro de pasarte.
UN RUEGO: no dejes de hacerla, está de impresión. Sé de niños y no tan niños, que es la única
tarta que piden para su cumpleaños. Si la encuentras pequeña duplica sus ingredientes.

Procedimiento
Cake
Llevar a hervor la crema de leche; verterla sobre el chocolate picado, dejar reposar hasta que se
funda y mezclar. Añadir los huevos ligeramente batidos con el azúcar. Perfumar con un toque de
agua de rosas. Incorporar la mermelada, las galletitas molidas y los ingredientes secos tamizados.
Verter la crema inglesa caliente sobre el chocolate picado, dejar reposar unos segundos y revolver
para homogeneizar. Dejar enfriar dentro de un recipiente hermético.
Cortar las frutillas por el medio; macerarlas durante una noche con el azúcar, los pétalos, el jugo de
lima y un toque de licor. Cocinar a fuego fuerte por 15 minutos.
Montaje
Servir en cada plato una porción de cake, apoyar encima dos pétalos de rosas y terminar con una
quenelle de mousse. Disponer al lado una cazuelita con la compota.

Azúcar 200 g
Coco rallado 50 g
Procedimiento
Budín
Batir ligeramente los huevos con la leche condensada. Agregar la leche fluida. Incorporar el coco
mezclado con el cacao.
Acaramelar una budinera y verter en ella la preparación. Cocinar en horno moderado, a baño de
María, por 45 minutos o hasta que un palillo insertado en el budín salga seco.
Cocadas
Batir las claras hasta que estén espumosas. Agregar en forma de lluvia 1 pocillo de azúcar; seguir
batiendo hasta obtener un merengue firme.
Mezclar el azúcar restante con el coco y el almidón; añadir al merengue revolviendo con suavidad.
Distribuir cucharadas de la preparación sobre placas untadas con manteca y espolvoreadas con
harina. Cocinar en horno suave de 40 a 50 minutos.
Montaje
Salsear el budín con chocolate derretido y acompañar con las cocadas.

Manteca 150 g
Huevos 5
Azúcar 350 g
Nueces 100 g

Procedimiento
Brownies
Batir en un bol los huevos con el azúcar hasta alcanzar punto letra. Integrar en forma suave y
envolvente la mezcla de manteca y chocolate.
Perfumar con la esencia. Añadir las nueces picadas gruesas, espolvoreadas con 1 cucharada de la
harina.
Untar con manteca y espolvorear con harina un molde cuadrado, verter en él la preparación y
cocinar en horno moderado por 35 minutos.
Cubierta
Colocar en una cacerola pequeña el dulce junto con el jerez y el azúcar. Cocinar de 3 a 5 minutos,
revolviendo constantemente. Dejar entibiar. Extender con una espátula sobre la plancha de
brownies. Cortar en cuadrados.
¿Que se hace cuando se tiene gana de un determinado ingrediente y este no existe en ellugar donde
estamos o no está por que no es su estacion ?
Se busca el famoso sucedaneo o se inventan alternativas. Por ejemplo la batata tiene un costado
otoñal sorprendente: puede imitar bien, pero muy bien una castaña.
Y así nacieron estos budicitos y la receta original es de Choly Berreteaga..
Ingredientes:
750 gr de batatas
leche c.n.
125 gr de azucar
4 huevos
Pelar las batatas y cortarlas en fetas. Ponerlas en una olla y cubrirla con la leche. Cocinar hasta que
sean tiernas.
Procesar las batatas con la leche y agregar los huevos, el azúcar, el cacao, la vainilla y la canela.
Cocinar a baño de maría en horno mediano por 35/40 minutos para los moldecitos pequeños y 50
minutos para el molde grande.
Se puede acaramelar el molde poniendo 175 gr de azúcar en una sarten y dejarlo derretir a fuego
suave mezclando delicadamente con una cuchara del madera hasta que se forme un caramelo claro.
Versar el caramelo en los moldes antes de versar la preparación con la batata. il caramello negli
stampi prima di versare il composto con la patata dolce.

Also, in case you haven't gathered, it's like a hot mess of cookie dough in a pie crust. With ice
cream on top. Can't go wrong there. (If this is all seeming familiar, I did at one point make a bite-
sized version, very similar to this). And now I'm thinking Pie in a Jar. Why haven't I tried that
before?!
This is about 10 times easier than making chocolate chip cookies. And chocolate chip cookies
aren't even hard! Start by beating a couple of eggs for about a minute.
Add in some sugar (both brown and white, because let's face it, 2 sugars are better than one) and a
little flour.
When those are nice and smooth, mix in some butter. It's important that your butter is soft. Not
melted, but not sort-of soft. Just normal soft. Thoroughly soft. You could stir it with a spoon soft.
You want it to blend right in to the mixture.
Once that's smooth (seriously we're only at about 1.5 minutes here) add in chocolate chips and
some toasted nuts.
"Wait Sara, I hate nuts! My kids are allergic to nuts! I am morally opposed to nuts!" Good for
you. Leave them out. We're talking about gooey cookie dough-ish deliciousness here. Good with
or without nuts people.
See that right there? That's the point in which you dunk your finger in. I mean, a spoon. Whatever.
Pop that mixture into your pie crust. I'm lazy and bought mine at the store. Don't tell Kate.
I keep disposable pie pans on hand just for this very recipe. You never know when you'll need to
take someone a cookie pie.
It actually tastes quite different when it's warm vs. completely cooled. When it's warm, it
melts the ice cream and it's like eating a big bowl of half baked ooey gooey cookie dough.
When it's cooled you can pick up the slices like a cookie. It's chewy and soft, with bits of crunchy,
and sort of like an amazing bar cookie.
So. Good. Both ways. I actually think it tastes much less rich when it's cool. Now go eat a cookie
2 large eggs
1/2 C flour
1 C chocolate chips (semi-sweet or dark works best, you might find milk too sweet)
Vanilla ice cream, or sweetened whipped cream for serving (a must! I prefer ice cream)
optional: chocolate sauce (honestly, doesn't really need chocolate sauce, but it looks pretty!)
Preheat oven to 325° F.
Beat eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown

I love autumn. I love the cold, crisp air, the changing of the leaves, and the wardrobe associated

seasonal favorites in the sidebar.) One of my favorite things to do each season, is take old stand-by
recipes and switch them up with seasonal flavors. That's what I've done here with this classic
cookie style bar. This one is studded with cinnamon flavored chips, juicy pink cranberries and
toasted nuts. The flavors are amazing together and it's a great (and super easy!) treat for fall time.
This is about as simple as it gets, everything just gets dumped into the pan in layers.PASTEL

Finally on top, sprinkle on some chopped pecans and some dried cranberries. For this batch I
used cranberries from Oh Nuts and I must say they really were the biggest, most plump cranberries
I've ever had! I love the pop of color the cranberries give.
That's it folks. Just pop that pan in the oven and bake it so everything melts together.horno

Let them cool before you cut them or you'll have a big gooey mess. Or maybe you want a big
gooey mess. If that's the case then grab a spoon my friend.Cranberry Cinnamon Chip Bars
1 C cinnamon chips
Preheat oven to 350 degrees. Pour butter into a 9x13" pan and spread with spatula to cover the
entire bottom of pan. Sprinkle graham cracker crumbs over butter and spread into an even layer.
Press down gently with fingertips. Pour sweetened condensed milk evenly over graham cracker
crumbs. Continue with the remaining ingredients: cinnamon chips, white chips, pecans, and
cranberries, sprinkling each in an even layer. Press down gently with fingertips over entire
pan.
Bake for 25-30 minutes until bubbly and slightly golden on top. Let cool
completely before cutting.

ingredients and you don't even have to bake them. Best part? They taste just like Reese's Peanut
Butter Cups. Seriously, they'll make you swoon.
Start with some crushed graham crackers. If you're like me and find half-eaten packs in the
back of your pantry that are too stale for eating, they work great.
Then in goes powdered sugar and some peanut butter. Chunky or smooth peanut butter will
work, but I think smooth is better.
And just in case something made out of powdered sugar, graham crackers and peanut butter isn't
good enough, let's add a bunch of melted butter. To be on the safe side.
Now at this point you could take the bowl over to the couch and sit in front of the TV and turn on
the Biggest Loser or something while licking your fingers between each bite. Not that I've done
that, but I'm just sayin...
Or you can press it into a pan. Line it with something (parchment, foil, waxed paper) to make
your life easier a couple hours from now.
Set that aside and get out some chocolate chips. Melt them in the microwave with a bit of

Once the bars are cut, they can go back into the fridge to set all the way.

In a large mixing bowl, combine graham cracker crumbs, powdered sugar and peanut butter and
butter and beat until combined. Press into a parchment (or waxed paper or foil) lined 9x13 pan.
Place chocolate chips and shortening in a microwave safe bowl and heat in 30 second intervals,
stirring after each one, until melted and smooth. Pour chocolate over peanut butter mixture and
spread out evenly. Place pan in the fridge just until chocolate is set and then cut into bars. Tip: If
the bars chill until the chocolate is too hard to easily cut, use a sharp knife and score the cuts first,
then gently cut through. Can be stored in the fridge or at room temp. They will stay firmer if stored
in the fridge.

Esta receta de Brownie de chocolate y queso la vimos en la revista especial de cocina de otoño de
lecturas, en cuanto vimos una fusión de dos postres que nos encantan, como el brownie y la tarta de
queso, pensamos que sería irresistible y así ha sido, aunque le hemos hecho algunos cambios.
La receta de brownie no es como la que acostumbramos a hacer, pero está igualmente exquisita, a
partir de esta receta seguro que se nos ocurren otras deliciosas variantes, ¿nos propones alguna?
Ingredientes
180 gramos de mantequilla, 55 gramos de chocolate fondant al 70%, 215 gramos de azúcar, 115
gramos de harina y 2 huevos.
Funde la mantequilla con el chocolate al baño maría o en el microondas pero controlando que no se
queme, calienta en fracciones de 30 segundos y antes de que el chocolate se haya fundido del todo
retíralo, con el calor de la mantequilla y batiendo con una espátula se fusionarán y se fundirán
ambos ingredientes.
Agrega el azúcar y los dos huevos al chocolate, mezcla bien y finalmente tamiza la harina e
incorpórala también, mezcla hasta obtener una crema homogénea.
En otro cuenco mezcla el queso de untar con el azúcar y los dos huevos hasta obtener una crema
fina. Unta un molde con mantequilla, puedes utilizar el tradicional molde cuadrado o hacer como
nosotros, hemos utilizado unos moldes de muffins para hacer brownies individuales y también
hemos utilizado un molde de cake para hacer una plancha fina de brownie.
Vierte en los moldes engrasados un poco de la crema de chocolate y termina de cubrir con la masa
de queso, mezcla ligeramente con el mango de un cubierto hacia delante y hacia atrás para que
después, al cortarlo, se vea un dibujo. Puedes poner la proporción de uno y otro al gusto, pero
después controlar la cocción si te gusta la parte de chocolate más húmeda.
Introduce los moldes de brownie de chocolate y queso en el horno precalentado a 160º C durante
30-40 minutos, comprueba con un palillo que está hecho. Después deja enfriar antes de desmoldar,
aunque la espera se haga eterna, cuando lo pruebes disfrutarás muchísimo.
emplatadoPuedes servir este delicioso Brownie de chocolate y queso solo o regándolo con un sirope
de chocolate, de frutas… y acompañado de unas nueces, al gusto de cada uno, pero sobre todo,
saborea lo principal.
Solo estaba esperando que la torta se enfríe para bañarla con Ganache de chocolate, pero no
pudieron esperar y la atacaron, y para variar no dejaron casi nada.
INGREDIENTES
Mezcla 1:
huevos 2
azúcar 180 G
chocolate blanco 80 g
harina 0000 60 g
Mezcla 2:
huevos 6
azúcar 260 g
chocolate cobertura semiamrgo 250 g
manteca 225 g
harina 0000 85 g
cacao amargo 15 g
nueces 125 g
Mezcla 1:
En un bol coloco el queso crema, el azúcar y los huevos y los mezclo bien.
Por último agrego la harina tamizada dos veces junto con el polvo para hornear y lo integro a la
preparación con movimientos envolventes.
MEZCLA 2:
En un bol coloco los huevos y el azúcar y lo bato a punt letra con la batidora.
En una sartén chiquita y teflonada, coloco el chocolate partido junto con la manteca y a fuego
mínimo espero que se derrita el chocolate y lo mezclo bien con la manteca derretida.
Lo integro a la mezcla de huevos y azúcar.Peso la harina y el caco y lo tamizo dos veces junto con
el polvo para hornear.
Acá esta la preparación de los huevos con el azúcar y el chocolate derretido con la manteca.
Ahora le agrego la harina con elcacao y polvo para honear y con la espátula integro todo con
movimientos envolventes.
Le agrego los chips de chocolate y mezclo bien.Y las nueces, también las mezclo.
En este caso usé un molde siliconado, emantecado y enharinado, pero puede usar cualquier molde.
Lo llevo al horo hasta que lo pincho con un cuchillo y este sale limpio.
Puede también hacerlo en una placa rectangular para que queden finitos.
Una ve sacado del horno, lo dejo enfriar unos minutos en el molde y después lo desmoldo sobre una
rejilla.Y así queda la torta en su interior.
