A warm, dry vintage was experienced in 2010 in the Margaret River wine growing region of Western Australia with no significant rain events or issues with disease in the vineyard. These conditions resulted in rapid, uniform ripening in our Chardonnay Blocks with great retention of flavour and natural acidity at full ripeness. The vineyard blocks were managed to ensure the canopy covered the fruit to prevent sunburn and to retain flavours and acidity in the grape and subsequent wine whilst allowing air flow within the canopy.
GRAPE VARIETAL
Chardonnay
This Chardonnay was harvested during the cool of the night and early morning to ensure the fresh, crisp fruit flavours were preserved. Following destemming, the grapes were gently pressed and a portion of the juice was continuously tasted to ensure the finest quality was used in the blend. Each juice batch was then cold settled over night before undergoing fermentation to contribute complexity and texture in the end wine. The ferments were transferred to French oak barriques, with each barrel undergoing lees stirring to provide texture and mouthfeel in the end wine. The final blend was then assembled prior to a light fining and bottling.
