2009 Evans & Tate Redbrook Cabernet Sauvignon

Vineyard Region: Margaret River, WA

Vintage Conditions: The 2009 vintage in Margaret River produced exceptional ripening conditions which have resulted in richly flavoured wines with fantastic varietal intensity. Following the cool finish to 2008, the ripening months of January, February and March saw a series of prolonged periods of warm weather punctuated with short cool, dry spells. This allowed for slow ripening which retained natural grape acids and produced great flavour concentration in all varieties with the red varieties also showing remarkable colour intensity, tannin ripeness and varietal definition. Grape Varietal: Cabernet Sauvignon

Vinification and Maturation: A portion of fruit for the Evans & Tate Redbrook Cabernet Sauvignon is picked overnight to ensure it is cool when it reaches the winery. These parcels are transferred to a fermenter where they remain cold on skins for three-to-four days prior to inoculation with a Bordeaux styled yeast strain. Following fermentation, the pressings wine is blended with the free-run to give structure and richness to the end wine. Once the fermentation is dry, each parcel is racked to either new, one year or older French oak barriques with the oak cooperages being matched specifically to each parcel whilst ensuring fruit purity and freshness is at the forefront of the wine. Winemaker Matthew Byrnes Notes Colour: Bouquet: Dense purple red with youthful purple edge Pure, intense Cabernet Sauvignon nose with strong expression of its Wilyabrup origins. Redcurrant, fresh tobacco and red plum are framed by subtle green olive and blackberry elements. Palate: Intensely flavoured, medium bodied Cabernet Sauvignon from Margaret River from the very good to excellent 2009 vintage. The fleshy, seamless palate shows pure Cabernet Sauvignon character in a style that will see this wine age slowly and gracefully for many years in the cellar. Wine Analysis Last Tasted: Peak Drinking: Alc/vol: 14.1% January 2012 Drinking beautifully now but will cellar beyond 2025 pH: 3.35TA: 7.30g/L
