Marlene s Apple Pie:

125g butter 1 cup raw sugar 2 diced and peeled granny smith apples 1 cup pecan nuts chopped 1 cups plain flour 1 teas of mixed spice 1 teas cinnamon 1 teas bicarb soda 1 egg

In a large saucepan, melt butter, add sugar, cool a little, add the apples and nuts, mix well. Add all other ingredients and mix well. Pour into greased pie dish. Bake 40-50 mins at 180oC. Dust with icing sugar and serve with cream.

Chicken and Sweet Corn Soup 2-4 chicken thighs with bones 4 cups of water 1 onion roughly chopped 455g of creamed corn 2 chicken stock cubes 2 teas soy sauce 1 teas grated ginger 1 egg 3 spring onions

Boil chicken thighs in water with onion for about 20 minutes, strain off liquid. Cut the meat off bones. Let stock cool in fridge and skim off the fat. Add chicken and corn into stock, add ginger, stock

cubes and soy sauce and bring to boil. Beat up egg, once soup is boiling, drizzle egg into soup. Chop up spring onion for garnish.
