It will also provide missing nutrients. Rejuvelac tastes neutral and slightly sweet. Occasionally it may be slightly sour, but should never be putrid. If the wheat is not of good quality - irradiated, for example - or the water is polluted, then the wheat will not ferment. It will putrefy instead. In such case, it should be used for compost. When we do not have what we need, we must give first, doing our best to help others. Those who feel lonely must give themselves love. Caring abou t others and being generous, comes from feeling rich. We will create the experience of receiving. Benefiting others is benefiting oneself. The ideal life comes from a richness of inner life. Perfection creates perfection.

that body types are determined in infancy My diet as a child was typically Chinese: white rice with vegetables, tofu and small amounts of meat and fish. Mother also made steamed buns out of white flour. Fruits came from the back yard such as mangoes and guavas. Tomatoes were cheap so they were consumed sometimes as fruits. Because money was scarce, we had very few snacks. At the very most we could have some brewer's yeast tablets and an occasional cookie. When I turned five, my father returned from his studies in the United States. He encouraged my mother to cook us more meat. He believed that Americans were taller because they ate more meat. He also insisted that we drink milk. Every morning a glass of milk was added to breakfast.

My health was not good during that time. A Chinese doctor felt my pulse and told me that my liver was not good. I felt quite discouraged wondering at the time, if I had some incurable disease.

When I was eight, because of my father's work, the entire family moved to Michigan, in the US., for two years. We felt we had arrived in Heaven. Whenever my father had time, he would take us everywhere to sight see. Eating was an even etc .. We would to have a

we could watch a whole morning of cartoons. Within six months, my hives which used to be infrequent, became regular. They got more serious the second year. When I was taken to an allergy specialist, I was found to be allergic to milk, peanuts, pollen and dust. I avoided those things but still suffered from hives. When we returned to Taiwan, we resumed the Chinese diet of fresh vegetables and small amounts of meat and fish. We rarely had candies, ice cream and soft drinks. After six month, the hives cleared up. After the completion of the eighth grade, my father again moved the whole family to Michigan in the U'S. to pursue his doctoral studies. This time the family budget was tight, so we did not have much chocolate to eat but we still ate ice cream, chicken wings and frozen vegetables. Lunch was often a sandwich with white bread and luncheon meat (processed meat). It did not taste good but

we were just following the American way. Within six month the hives again became a problem. This time the doctor gave me anti-histamine pills. The medicine controlled the hives but made me sleepy. I struggled to keep my eyes open during classes in school. In the second year of high school, the whole family moved to Hawaii. I still suffered from hives. A Chinese American doctor gave me shots once a month to control the hives. This lasted two years.

CHANGING TO A VEGETARIAN DIET

I entered the University of Hawaii in 1969. A classmate shared a book with me by Dr. Norman Walker. The book mentioned certain foods that help one feel especially good. This book opened

the way and provided the first step to total health of body, mind and spirit. I changed my dependency on medicine and shots to control hives. Dr. Walker, in "Raw Vegetable Juices," discussed our body's minerals. and hazards needs for fresh unheated He also explained of processed organic the harmfulness

foods and flesh. He

provided recipes for salads from many vegetables. He recommended finely grating the vegetables for better digestibility. In a traditional Chinese diet, there was very little raw vegetables. I realized after reading the book that my sickness was connected with eating.

On Christmas day that year I decided to become a vegetarian. Mother continued to cook her delicious dishes but I prepared my own salad of grated vegetables of carrots, celery, cabbage, etc. I convinced my mother to cook brown rice and to buy a juicer. Our family of eight consumed fifty pounds of carrots in a week. In the first month of diet change, I was still tempted by a table filled with fish and meat. I persevered with my new way of eating. I started the meals with salad, followed by cooked vegetables and brown rice or whole wheat bread. Every week I would eat one pound of nuts such as almond, or sunflower seeds. I was not only stopped eating meat and fish but al so ice cream, potato chips, candies, cookies and cakes, as well as soft drinks. After three months, when I saw fish and meat, not only was I not tempted, but also I found their smell to be putrid.

I stopped going to the doctor for shots after changing to a natural vegetarian diet. He warned that my hives would return. That was more than thirty years ago. I have not had problems with hives since then. After changing my diet, my weekly headaches disappeared. The entire body-mind was more relaxed with fewer worries and I was less affected by events around me. Seeing my change, mother changed the entire family's diet within six months. The youngest sister was five years old, and the other sisters were nine, twelve, sixteen and seventeen. The whole family'S health improved. When a flu epidemic would come to town, none of us would get it. Initially my parents and I lost some weight. One year later their weight returned

to normal. My mother was a bit overweight before, but afterwards she was slimmer. Beginning with "eating", I took the first step towards total health. In the last thirty years my diet has followed the principles of: 1. Eat whole grains, vegetables, fruits, nuts, seeds, legumes, and sea vegetables. 2. Avoid processed foods, the more natural the better. 3. Choose locally grown food as much as possible. 4. Choose food according to one's body type and reaction. 5. Eat only when hungry. Don't necessarily eat at every meal time. 6. Whenever possible, buy organically grown food. While living in Hawaii, because the climate

was warm and pleasant, 70-90% of my diet was raw. Breakfast consisted of papaya and carrot juice. Lunch was salad and whole wheat bread. Dinner was steamed vegetables and brown rice. When I entered graduate school, I lived in Boston with four distinct seasons. My diet consisted of more cooked changed foods, and only 50% raw. Breakfast to oatmeal or toast. In the ten years

in Houston I also ate 50% raw and 50% cooked food. In the thirty years I have travelled to three continents and more than one dozen countries. Eating has never been a problem. On the other hand, because I knew about good eating, I did

have digestive problems afflicting others. In the three years that I lived in India, other tourists had many illnesses, but I gained twenty pounds. In the last decade the world is increasingly facing a serious food crisis. Foods that can nourish the body are more and more scarce. On the market there are a lot of "garbage pesticide flavorings, residues, preservatives foods" containing artificial deficiencies in behavior, food colorings,

and other additives.

Illnesses resulting from nutritional poor nutrition causes disturbances

are on the increase. Even more alarming is that attitudes and emotions, causing many family and societal problems. Promoting natural farming and natural foods are a most urgent need, especially at the present time.
