PREFACE
This Standard was prepared by the Standards Australia Committee on Catering Container Dimensions in order to rationalize container sizes and related equipment in the food-service and hospitality industries. The Standard specifies a standard range of sizes for containers, trays and shelves which match corresponding sizes in cookers, serveries, refrigerators, storage facilities and other food handling equipment so that volumes of goods can be moved through receiving, storing, preparing, cooking and final serving with a minimum of repacking and transfer between containers. After investigation into systems in use in Australia and overseas, this Standard has been aligned with the gastronorm system which was developed in Europe using a basic module with dimensions 530 mm and 325 mm. A series of standard containers is based on subdivisions of the basic module size and all other equipment is designed to fit the standard range of sizes. The Standard is confined to flanged containers and the range of preferred sizes has been limited to those which are commonly used in Australia, although this does not preclude the use of other sizes based on the basic module. The Standard deals with dimensions only and does not cover materials, quality or construction. However, where certain aspects of design or construction are a known source of problems, especially with regard to hygiene or fitness for purpose, attention is drawn to these in the text.
