inee molasses has been brought to the attention of the public by a few nu tri tionists wh o recognize its merits, many a rticl s ha ve appeared decrying its food values, trying to insinua te that it is an "impure waste product." To und erstan d why such op inions cou ld be so w ell distributed we must look to the psych ology of the gentlemen wh o set the stag e for our untimely de ath by promoting foods that are not capable of supporting life, the men who promote the sale of all the death foods that have the essential ' fractions carefully refined out. Carb oh y drate not essen tial Wh at is refined sugar? It is pure carbohyd rat e. Is ca rbo hydrate an essential food , food com ponent wi thout which we cou ld not live? It cert ainly is not. Stcffa nson has sho wn that th e Eskimo lives in pe rfec t health withou t a trace of ca rbohydrate in his di et. Then how about the mineral s and vitamins that are removed from th sugar in refining, but ar e available in the molasses? Ha , that is something else again. These minerals and vitamins are absolutely necessary to life. So we sec , th at in ridiculing molasses, somebody has b een trying to make us believe that black is white. Somebody has been trying to lull us into thinking th at we c:m live without essential foods. Let us list th ese essential foods, as far as we can with the limited amount of knowledge we possess at this crude stage of hum an civilization , and not e wh at a defici ncy of each can do to ou r health and hao oiness.
