When Your Child Comes Home Hungry

hen its pouring outside and your kids are cooped up at home, make these fun treats to satisfy their hunger pangs. They will love the innovative Corn, Spinach and Penne Lollipops while the delectable Pineapple and Cottage Cheese Sandwiches will have them smacking their lips!
For the sauce 1. Melt the butter in a pan, add the plain flour and cook on a medium flame for 1 minute, stirring continuously to avoid burning. 2. Add the milk and cook on a slow flame till the sauce thickens and no lumps remain. Remove from the flame and keep aside. How to proceed 1. Combine the sweet corn, penne, spinach, coriander, green chillies, cheese, salt and the prepared sauce in a deep bowl and mash well. 2. Divide the mixture into 20 equal portions. Shape each portion into a round ball and insert the bread sticks. 3. Dip only the penne mixture into the flour paste, coat well with the bread crumbs and keep aside. 4. Deep fry the lollies over a high flame till they turn light brown in colour from both the sides. Serve immediately with tomato ketchup.

Preparation time: 10 minutes Cooking time: 20 minutes Makes 20 For the sauce 1 tbsp butter 2 tbsp plain flour (maida) cup milk Other ingredients cup cooked sweet corn kernels (makai ke dane), crushed 1 cup cooked penne, finely chopped cup finely chopped and blanched spinach (palak) cup finely chopped coriander (dhania) tsp finely chopped green chillies (optional) 4 tbsp grated cheese cup plain flour (maida) mixed with 3 tbsp of water Bread crumbs for coating Bread sticks, cut into pieces Salt to taste Oil for deep frying For serving tomato ketchup

PINEAPPLE AND COTTAGE CHEESE SANDWICHES


The creamy, fruity spread will totally enhance the sandwich experience!

Preparation time: A few minutes Cooking time: Nil Makes 8 sandwiches 2 tbsp finely chopped pineapple cup grated paneer (cottage cheese) 1 tbsp fresh cream Powdered sugar to taste 4 brown bread slices

1. Combine the pineapple, paneer, cream and sugar and blend in a mixer to a smooth paste. 2. Spread the mixture on 2 slices of bread. 3. Top with the remaining slices to make sandwiches. 4. Cut and discard the crusts, and use cookie cutters to cut the sandwiches into different shapes.
