Carne Asada Wraps with Apricot Salsa and Spiced Corn Rice

INGREDIENTS

(MAKES 4 SERVINGS)

The high beta-carotene content of apricots makes them important heart health foods. Each little apricot also has more than 13% of your recommended daily allowance of vitamin A. Vitamin A is an important antioxidant that is very beneficial for good eyesight. The variety of nutrients found in apricots are also known to help prevent heart disease.

Instructions: Carne Asada Wraps, Apricot Salsa and Spiced Corn Rice

Put seasoned rice, 2 cups water, and 2 Tbsp. olive oil in a medium pot over high heat. Bring to boil and then immediately lower heat to very low, cover, and simmer for 35 - 40 minutes. Set a timer for 30 minutes and add corn to rice after 30 minutes.

Shuck corn, cut kernels from corn cobs, and set aside.

Remove pits and chop apricots. Put in a small bowl. Slice tomatoes, chop scallions and add to bowl. Squeeze in juice from 1 lime, add a pinch of salt. Stir and set aside.

Slice onions in half, peel each half, then slice into half circles. De-seed and slice peppers into strips. Roughly chop baby broccoli discarding thick stems.

Pre-heat a large saut pan over medium-high heat. When pan is hot, add uncut carne asada, sprinkle with the spice mix.

Cook 2 - 4 minutes on each side depending on thickness. Carne asada should be seared on the outside and pink in the middle. Remove to a cutting board.

In the same pan, over medium heat, cook onions for about 3 minutes. Add the peppers and cook for about 3 more minutes, stirring occasionally until softened.

Add the baby broccoli and cook for 2 more minutes stirring and remove from heat.

Use a sharp knife to thinly slice carne asada across the grain. Add carne asada to pan with veggies and cover.

Cut the other lime in wedges for garnish.

If desired, warm tortillas in a dry skillet on medium until warm and soft.

Top tortillas with meat, veggies, and salsa and roll.

Serve with rice and lime wedges. Enjoy your home cooked feast!
