Hello and welcome to the March edition of Lets eat! Magazine. This month we delve into the greener side of Bali and take a detailed look at those in the F & B industry who are striving to make a difference in terms of environmental and social sustainability. At Desa Seni, a boutique wellness resort in Canggu (p 40) we wander amidst flourishing organic gardens and help to pick fresh vegetables for our delicious lunch. At Kopi Kultur at the Wisnu Open Space in Kerobokan (p62) we find a group of like-minded Balinese businessmen who focus on empowering the local community. We sip at smooth organic coffee and dig into an impressive nasi campur served in a bamboo pole. We also join an early morning yoga session at Uma, Ubud Resort (p46) followed by a healthy breakfast, them spend an afternoon with Nilawati at Sari Organik to hear her unique

take on the organic movement in Bali. Our new, monthly excerpt, Lets eat! culture focuses on the ritual of Penampahan Galungan which takes place prior to the important Hindu festivals of Galungan and Kuningan that occurs at the end of March. Alison is a travel writer and self confessed food-lover. She has spent many years traveling the globe, immersing herself in foreign cultures and sampling local cuisine, applying her motto Everything should be tried at least once. Her heart has now been captured by Bali where she is happily indulging her favourite things; writing, traveling and discovering new restaurants

Menur describes herself as a part-time food lover and a fulltime food friend. She enjoyed her exposure to many different restaurants during her year teaching Indonesian Language and Culture in Washington DC. Now back in Indonesia she has discovered that her pleasure in trying new food has deepened and she hopes to one day open her own restaurant.

Eve is the newest member to join the Lets Eat team and says her familys motto has always been live to eat, rather than eat to live. Aside from eating she also loves to write, travel, design and cook (although, admittedly that also involves eating.)

Dewi admits to falling in love with writing and photography. Her wandering feet have taken her travelling all around the archipelago before finally settling in Bali where she set to work capturing the authenticity of the island in words and images.

Kapur Sirih is the main restaurant of the newly opened Atanaya Hotel, a business hotel with 105 Peranakan-themed rooms located on Sunset Road. Managed by Jakarta-based Century Park Hotel, Atanaya strives to enliven the hotel scene in Bali. Kapur Sirih caters room service, breakfast, lunch and dinner for its guests and favours Peranakan food in its menu a cuisine that fuses Indonesian and Malaysian local flavour with Chinese recipes and techniques. Gado-Gado Refreshing Drinks

Kapur Sirihs signature dish is Sop Buntut, oxtail soup made from an original recipe from Century Hotel, and often sought for by visiting Jakartans. Available in three versions; classic, grilled and fried, the oxtail soup is freshly loaded with vegetables and warming spices that stimulate the appetite, especially when served with hot warm rice and sambal ijo on the side. The Spring Roll is made with vegetables wrapped in crispy skin and needs to be dipped in the peanut sauce to get the best combination of taste. Nasi Goreng is with seafood or anchovies, served with a sunny side up egg and kerupuk. For vegetarians, besides the Spring Roll, there is also Gado-Gado, the

renowned Indonesian salad served with peanut sauce and all the trimmings. Among the sweet collection is Banana Fritters served with caramelised grated coconut to accompany the crunchy fried banana. Aloe Vera
The Skin Soother
A semi tropical plant, aloe vera dates back to biblical times, its tell tale thick spiny leaves concealing a succulent juicy flesh famed for a wide range of medicinal properties. When blended into a juice it provides a rich cocktail of vitamins, minerals and trace elements believed to increase energy levels and build immunity. It also helps cleanse and soothe the digestive tract and is high in anti oxidants which boost cell renewal and help delay the visible signs of aging. However, aloe vera is probably best known as a powerful moisturiser which seals in moisture in the skin, softens and helps remove dead skin cells and leaves the complexion smoother and brighter. Applied directly aloe vera provides instant cooling relief making it one of the best treatments for sunburn, with anti inflammatory properties helping calm the skin and prevent peeling.

Escaping the midday heat I head into the cool sanctuary of Semara Spa, a soothing contemporary space with a tantalising range of luxurious spa treatments, including an avocado and aloe vera wrap. I am led to a private treatment room where a therapist gently covers me from head to toe in a lush concoction of fresh, slightly warmed aloe vera blended with creamy avocado. Rich in vitamins and unsaturated fats, avocado is deeply nourishing for the skin and combines perfectly with moisture rich aloe vera. It feels wonderfully light and soft and I am wrapped in a sarong while the mix is left to soak into my skin. After a few minutes I am led into the leafy courtyard shower to rinse. My skin is deliciously silky, an effect enhanced by Balinese oil spiced with ginger and clove as I am treated to a signature Semara massage. A specialised range of aloe vera products are also on sale at the spa, which have been specifically designed for Semara and are used in conjunction with Debussy facial rejuvenation packages. www.semaraspa.com

At the end of last year Bali received an award from the Ministry of Agriculture in Jakarta for its successful organic program Simantri. The program offers cash and technical assistance to farmers groups who are willing to convert to organic farming methods and to use alternative energy sources. Accepting the award, Bali Governor Made Mangku Pastika spoke of the islands efforts to become a green and eco friendly province. We hope someday tourists will come to Bali not only for the culture and beautiful nature, but also for healthy living with organic products, he said. Currently 325 farmers groups are affiliated with Simantri, but the governor hopes this will rise to 1,000 groups. With approximately 100 farmers in each group, it would mean 100,000 farmers were practicing organic agriculture. I think organic Bali is not just a dream, Pastika he says. Increasing numbers of restaurants on the island are turning to the organic farms of the mountainous hinterland to source produce, some such as Gado Gado even have their own farms. Others are incorporating sustainable social and environmental practices in every aspect of their business, including eco friendly bamboo buildings. The rustic, open air restaurant Bodag Mailah sits in a sea of rice fields in the hills of Ubud, its founder, Nila was at the forefront of the organic movement in Bali. Horrified by the heavy use of pesticides, she told farmers, If you give rice something to grow fast, you will also die fast. She decided to show the way by creating the Sari Organic Centre, basing its practices on fair trade standards. The farm specialises in growing organic vegetables and rice and also produces jams, homemade wines and cheese, all of which are available in Bodag Mailah which adjoins. Overlooking Canggu Beach, Om Organic is set in a graceful bamboo pavilion rising from verdant lawns. The guiding philosophy is to show that organic food is not limited to greens and leaves. Founder Heinz Alberti, a naturopath and chef points out that they offer a normal restaurant menu, but the quality of ingredients is higher because they are organic. Also in Canggu, the boutique resort, Desa Seni is a model for sustainability, with its vintage wooden houses filled with antique furnishings and extensive organic gardens that supply 80% of the restaurants produce. We want to support the local community by working with as many small local businesses as possible, says founder Tom Talucci. Up in the hills of Mambal are two further, magnificent examples of sustainability. The Sakti Dining Room at the inspirational Five Elements, Puri Ahimsa, is a show piece for bamboo design, a free flowing structure overlooking the river and rainforest. The raw dining menu is one of the most stimulating and inventive I have ever experienced. Talented Chef Made Punatha tells me, We select the finest organic ingredients to honour the earth and ourselves. Nearby, the impressive Bamboo Chocolate factory makes organic raw chocolate from cacao grown on the island. Rising from a tropical forest this is the biggest commercial bamboo structure in south east asia. Long before deciding to build a chocolate factory in Balis heartland, Big Tree farms were dedicated to working with local farmers to produce organic ingredients such as salt and pepper, vanilla, cashews and honey. When it came time to build the chocolate factory, bamboo was the logical choice, claiming, Its sustainable, beautiful to look at and soothing to work in. There is still a long way to go in the re-greening of Bali, but a step in the right direction is always a good place to start. Alison

Aside from grills, the menu offers international flavours, from Japanese dishes such as Seafood Teppanyaki, to Chinese Peking Duck, and western favourites like Roast Turkey. We choose Chicken Satay from the Indonesian section, a good dish with chicken coated in a spicy peanut sauce, and follow with a Green Burger, a tasty vegetarian burger made with deep fried tempeh, egg, lettuce and tomato, with fries on the side. For dessert there is a generous Banana Split, and dish of vanilla ice cream filled with crushed almonds, known as Crunch the Nuts served in cute bowls shaped like an ice cream cone. I also try my first ever Soursop juice which tastes a little like creamy pineapple. Soursop has been attributed many health benefits and Dina tells me that drinking a concoction from boiled leaves helps fight cancer cells. Her uncle, Jasin, started the restaurant last year and has also produced an interesting HD video guide to Ubud which Dina happily plays for us on the big plasma screen. An avid walker Jasin has filmed his favourite trails around Ubud, as well as the evocative rock-cut temples of Guning Kawi, the art and craft stalls of Tegallalang, and some of the villas and resorts in the area. The menu is dominated by meat; the all day breakfast includes an option for Steak, and you will also find Steak Bites as an appetiser. The Garden Salad Bowl is served in a big bowl with grilled chicken and crispy bacon, while main courses contain all kinds of carnivorous treats. We tried the biggest Club Sandwich in the neighborhood; four stacks of bread with layers of rosemary grilled chicken, homemade crispy bacon and scrambled egg with lettuce and a tasty sauce. The Eat Well Burger is effortlessly delicious with a homemade Aussie wagyu beef patty served with fries. Extra spinach, egg, cheese and grilled bacon are available on the side. Meat is high quality and displayed inside in the non-smoking area where a few tables and the open kitchen are located. The dishes are served on wooden trays that match well with the white-washed wooden furniture in the restaurant.

Eat Well Special Steak is 200 grams of wagyu beef served with potato gratin, sauted spinach and blue cheese sauce, it can be upsized into a 50% bigger version for a fully undisturbed meat splurge. Most of the time, you will see Indri, the girl behind the scene who can be found cooking or working on the corner,Most of my menu is food that you can make at home, sometimes customers came to me and ask for a recipe of my Lamb Chop or Pork Belly and I am always happy to share. She gives us the recipe for her homemade Brownies with Ice Cream, rich in coffee flavour with a soft texture on the inside, which is like a treasure after the crunchy topping. The drinks are easy but fresh, with a selection of juices and good coffee. The ambience is friendly and casual and the restaurant offers great value, so it os no wonder so many customers return again and again. Menur

A sprightly scream welcomes us into Stadium Cafe one sunny afternoon. The cause of the primal shout seems to be emanating from the big TV screen which is showing the Super Bowl replay for the unfortunate souls who missed it from the day before. The wooden bar counter is full with customers so we sit in a cosy corner where three Australian football jerseys are creatively hung. Caesar Salad with Prawn After gulping down the fresh signature mocktail Fiori di Arancio, we are ready to flip through the international menu. Having made our decisions, we decide to try our luck on the dartboard while sneaking sips of the almond and mint flavoured gin tonic Proletario cocktail. A giant portion of Caesar Salad with Prawn later, we have forgotten all about darts. Crisply presented inside a taco bowl, it is a mix of romaine, anchovies, quail eggs, bacon, croutons and delectable marinated grill prawns. Against the sports bar norm of hearty food, we decide to try the light Grilled Baby Chicken Five Spices which turns out to be a perfect choice - grilled spring chicken seasoned with a rich concoction of spices, and beautifully served with mashed potato and sauted vegetables. After questioning the sous chef, we find out that the rich taste is made from a serious mix of spices. We only use fresh local produce for this dish: Indonesian spices such as shallot, garlic, coriander, ginger, galanga, candlenut, chillies and tomato. The feast continues with a more western style Apple Crumble. A delicious concoction of apple bits, cinnamon and crumbs. Served with a scoop of vanilla gelato and caramel sauce, this is a dessert-to diefor, and we empty our plates very quickly. Traditional Wooden Houses in The Garden Organic Vegetable Garden

Designed in the style of an Indonesian village, Desa Seni is a boutique wellness resort comprised of atmospheric antique joglo and gladak (wooden houses) nestled amidst flourishing flowers and tropical gardens. Open to the public, the resort also has an enchanting spa, a fabulous array of drop in yoga classes and retreats, and a restaurant serving up delicious meals, with 80% of the fresh produce grown on the resort grounds. A path of stepping stones weaves through the resort, crossing a dainty bridge shaded by passion fruit trellises, and passing wooden dug out canoes filled with frangipani. Every glance and every turn is greeted with a slice of Indonesian history; from the delicate floral motifs carved into the wooden buildings, to the antique furnishings and the stone statues peeping out from the heliconia. Fresh Green Coconut Antipasto Salad

nothing is more immediate, or more tangible. He tells me that 40% of the resort is dedicated to organic farming, It has a much smaller yield but the results are incredibly gratifying. There are neat rows of glistening white cauliflower, bushes dangling with eggplants and zucchini, stately rows of basil. We pick fresh tomatoes off the vines and add them to the big basket of fruit and vegetables that one of the gardeners has gathered, and he heads off to the kitchen where our lunch is being prepared. Tom, a seasoned and imaginative chef describes the menu as having an Artistic and creative flair that melds western, Mediterranean, Asian and Indonesian cuisine. Nothing can match eating 100% naturally grown fruit and vegetables picked at perfect ripeness, and we choose a selection of salads for lunch. The Raw Garden Salad is a colourful array of crunchy goodness, with mounds of grated beetroot, carrot, cabbage and florets of broccoli and cauliflower. The earthy flavours of the vegetables are enhanced with the sweetness of raisins and coconut, the crunch of walnuts and a

sprinkle of lemon vinaigrette. The Antipasto Salad is neatly arranged with grilled yellow and green zucchini, eggplant, carrots and pumpkin, served with rich sundried tomatoes, a scattering of sharp goats cheese and a light vinaigrette. The Caprese Kampung is wonderfully pure and fresh, exchanging mozzarella for fresh tofu, and layering it with avocado, kemangi (Balinese lemon basil) and firm but juicy tomatoes with a tangy sambal vinaigrette. Other highlights on the menu consist of Grilled Red Snapper served with mango sambal, grilled polenta, and baby fern, Udang Griglia, grilled prawns marinated in tamarind served with cilantro coconut crepe and papaya,and the Desa Seni Pizza with roast vegetables on flat bread. Drinks include fresh green coconut, cleansing juices, jamus (traditional healing tonics) as well as beer, wine and Champagne. We finish with a selection of Energy Balls, I particularly like the raw chocolate with walnuts, a perfect sweet pick-me-up to end one of the freshest and most unique dining experiences on the island. Yoga @ Uma Como Egg White Tortilla Fresh Fruit Salad

We start with a fresh squeezed nutritious juice blending Carrot, Celery, Ginger, Tomato and Apple. A Fresh Fruit Salad follows, a mix of strawberries, mango and grapes with a dollop of yoghurt and a sprinkle of bee pollen. The Egg White Tortilla is wonderfully light and fluffy, filled with mushrooms, capsicum and baby leeks and topped with roasted tomato and rocket salad. We also try the delicious Cottage Cheese Hot Cakes. While the pancakes themselves are more savoury in flavour, the topping of grilled banana, dried cranberries and apricot sauce provides a sweeter note. Chef I Made Runatha


Ive always been curious about the world, explains Chef I Made Runatha who was born in Tabanan but spent most of his adult life abroad. As soon as he graduated from Bali Tourism School, he went to work in Makassar. Returning to Bali in 1988 he joined Sahid Jaya Hotel as Chef de Partie. I worked for Holiday Inn for seven years and they flew me everywhere from China to Abu Dhabi for cooking workshops, says Chef Runatha. In 2009, he was signed up by the management team at Fivelements Puri Ahimsa, a wellness and healing resort in Mambal, and sent to train at the Living Light Institute California, where he learned everything there is to learn about preparing raw food. So when Sakti dining room opened at Fivelements, an Executive Chef was in place, who is not just in love with vegetables but fully devoted to experimenting with raw ingredients. The body can heal itself when given the right nutrition and care. After all, we are what we eat, he says.

Chef I Nyoman Rai


Karangasem-born Chef I Nyoman Rai has always fancied himself in white uniform, so it was no surprise that he tried to enter the medical profession after graduating from high school. I tried a few times but always failed. I took it as a sign and decided to be a chef instead. Chefs wears whites too, right? says Chef Rai jokingly (although he points out that in his current job his uniform is black!) After graduating from Balinese Tourism School on 1993, he worked various resorts in Bali before joining Uma Ubud. Here he found his passion for raw and healthy food as the Executive Sous Chef before being transferred to its sister resort, Como Shambala. I decided to hop on board the Plataran team as the Executive Chef in 2012. The opportunity to develop my own creation of healthy raw food is exciting, explains Chef Rai while garnishing a plate of tamarillo jelly with strawberries. His next challenge: the pre-opening of Patio Restaurant at Plataran Ubud in April 2013.

We meet Nilawati in the atmospheric open air restaurant Bodag Mailah at the Sari Organik centre, Ubud. Amidst the green rice field and constant rooster crowing, Nilawati shares her thoughts on eventful life experiences, her latest Kintamani dream, and why tomorrow is another day.

Q: Such a busy woman! How do you see the A: It is very exciting now, especially here in Ubud.

Q: So, what was the inspiration for Sari Organik? A: I came back to Bali in 2000 and started to cook
part-time for functions and catering events around Ubud. Being a farmers daughter, I have a deep connection with earth and decided to cultivate a small piece of land beside the house where I lived in the old fashioned way: no artificial fertiliser and no shortcuts. Slowly, brick by brick, Sari Organik was opened on 2007, offering a simple menu of delicious and healthy food.

I hope to see more organic farming techniques put into practice, like using compost to grow plants patiently and naturally. We got it right the first time in Bali, so why not put the old ways into practice again? I still remember a time when I didnt even need to wash fruits and vegetables because they were 100% pure and chemical free. The most important thing, and my biggest wish is that more restaurants will provide their customers with healthy and nutritious food.

Q: You have been a great inspiration to the community with your organic initiatives, so whats next? A: I am in the process of fulfilling a lifelong dream in
my village, Kintamani. Ive been dreaming to open a restaurant there where I can help local villagers who

Gado-Gado

INDONESIAN VEGGIE MIX SALAD


Gado-Gado is one of the most popular vegetable dishes in Indonesia. All ingredients are easily found in the market so if youre good at mixing (as the word gado-gado means to mix all together) this might be the dish for you.

INGREDIENTS (serves 2)
1 cucumber, thinly sliced 2 pieces tempe (soybean patties) 2 pieces tofu 1 boiled egg cut into 4 pieces.

Method
For the sauce: grind salt, dried shrimp paste, birds eye chilies, and palm sugar with a mortar and pestle until theyre smooth. Add finely groundroasted peanuts and mix well. If you use peanut butter instead, add less salt. Mix tamarind with cup of hot water in a small bowl. Add the juice to the sauce. Add cup of water and mix it well, put aside. Transfer the blanched vegetables to serving plates . Add sliced hard-boiled egg and pour the sauce on top. Garnish with fried shallots, shrimp or emping crackers. Serve with steamed rice or lontong (banana wrapped rice cake, which can be purchased in traditional markets and ready to eat.)

The Tipat Cantok is excellent, a typical Balinese village dish made with sliced tipat (rice cake), cubes of fried tofu, cucumber and water spinach, all coated in a mild and creamy peanut sauce the taste is similar to Gado Gado (boiled vegetable salad) but has the addition of tauco, a fermented bean paste which makes it less sweet. The Veggie Lunch a la Coffee Shop has boiled tofu, small potatoes, eggs and cabbage rolls, served with a separate peanut sauce. The Chicken Mushroom Noodles is a generous portion of noodles, with sliced carrots, spinach, mushrooms and fragrant grilled chicken, served with a garlicy chicken broth that you can add yourself.

Desserts and snacks include Young Coconut Tart, Banana Cake and a light and moist Carrot Cake dense with walnuts and finished with a fluffy cream cheese frosting. A staggering array of coffees can be served hot, iced or as a frappe. Usual suspects included Cappuccino and Espresso, but there is also Caramel Latte, Kahlua Green Tea Frappe a minty Mojito Mocha and my choice, a rich and chocolaty Iced Kahlua Mocha made with good and strong espresso enhanced with milk, powdered chocolate Kahlua syrup and topped with milk and ice. The Gathering Place A number of charismatic warungs and cafes have sprung up in Kerobokan lately. Kopi Kultur is one of them, and turns out to be the most wonderful of discoveries.
The rustic cafe is housed in a sloping bamboo structure and is part of the Wisnu Open Space which incorporates a gallery, a library and headquarters for the Wisnu foundation. Set up to empower local communities, the Balinese foundation has a range of initiatives including eco tourism that promotes traditional villages and their natural attractions, such as rice fields, organic coffee plantations and customary rituals. Ayip Budiman a communications expert, and one of the founders of Kopi Kultur explains that, The cafe is a showcase, but the real story is what lies behind. This is the perfect example of a group of like-minded people drawing together to make a difference, and includes himself, Pak Suar who created the Wisnu foundation, and Rai Bangsawan of Bali Exotic Beans a farming and agricultural consultant who works directly with farmers to implement sustainable, fair trade practices.

While coffee is a specialty, there is also tasty Indonesian food, homemade cakes, pies, baguettes and a range of products on sale such as organic coffee, palm sugar and 9 grain rice all supplied directly from small local businesses. Rai expertly prepares us Bali Arabica coffee in an elegant glass siphon right at the table, and we sip the resulting smooth rich brew from dainty glasses. He makes a great Cappuccino too, and there is also coffee from Ache, Timor and Papua, as well as Bali Rustica and Bali Peabody, all of which can be spiced up with the addition of cloves, cinnamon, ginger or cardamon. The menu offers Indonesian favourites such as Campur and Rendang as well as grills and pasta dishes. The Nasi Bamboo Kopi Kultur is impressive rice and vegetables steamed in a long piece of bamboo which is split open at the table releasing a wonderful aroma. Half is filled with nutty 9 grain rice, the other a light and fragrant mix of colourful vegetables, fish and chicken. The pies are also good especially the Apple with lots of cinnamon.

The gallery currently has an interesting exhibition by the Eco defenders #Kudamacan, a local cyclist group who are passionate about protecting the environment, while the library shelves are filled with titles in Bahasa Indonesian, English and other languages. Set up as a space for the community, Wisnu Open Space has developed into quite a gathering place, a true melting pot of musicians and artists including locals, expats, and increasing numbers of tourists who are looking for cultural insight. We are also in luck as the Black Valentine community events gets underway just after sunset and some great local bands take to the outdoor stage to belt out some good old fashioned rock n roll. What started as a simple restaurant review turned into an inspirational experience, marked by excellent coffee, interesting people, good music and a genuine sense of community. Highly Recommened!
