Bahan-bahan ( 6 - 7 orang )

1 kg beras basmathi, rendam 1/2 jam dan sejatkan 1 tin kecil minyak sapi (ghee) 1 tin susu sejat (susu cair pun ok) 3 biji bawang besar, dihiris halus 5 ulas bawang merah* 5 ulas bawang putih* 2 inci halia*(*dikisar halus) 1 batang kayu manis 1 kuntum bunga lawang 5 kuntum bunga cengkih 4 biji buah pelaga 2-3 helai daun pandan, siat dan simpulkan Segenggam daun ketumbar Segenggam bawang goreng 1/2 cawan gajus 1/2 cawan kismis Secubit koma-koma, direndam dalam sedikit air panas 1 kiub ayam maggi Garan secukup rasa Air mengikut sukatan beras (boleh dilebihkan 1/2 tin susu air jika perlu)

Cara-cara

Panaskan minyak sapi dalam periuk atau kuali. Masukkan kayu manis, bunga cengkih, bunga lawang dan buah pelaga diikuti daun pandan dan bahan2 kisar tadi. Tumis hingga wangi. Masukkan gajus dan masak hingga gajus perang. Masukkan kismis. Kacau rata. Tuang air dan susu cair. Masukkan kiub ayam dan garam (secukup rasa). Biarkan mendidih. Tuang no.02 ke dalam rice cooker dan masukkan beras yg telah disejat tadi, tekan "cook". Masak hingga nasi kering. Dengan menggunakan sudu (atau chop stick) buat beberapa lubang pada nasi tadi dan tuangkan koma2. Masukkan juga daun ketumbar dan bawang goreng. Tutup tudung periuk dan biar nasi betul2 masak. Bila nasi betul2 masak, gaul nasi perlahan2 sekadar meratakan bahan2 tabur tadi dan juga jus koma2. Jgn terlebih gaul nanti nasi akan patah2. Seelok2nya gunakan chop stick.

bunga kobis, kacang buncis/panjang, karot dan jagung muda sedikit sos tomato, sos cili, sos tiram dan kicap manis bahan2 perasa

Cara-cara
Panaskan kuali. gorengkan ayam (agak2 sampai masak, jgn terlalu garing). Masukkan bawang merah, bwg putih dan cili yg ditumbuk, kacau sekejap. Masukkan sos tomato, sos cili, sos tiram dan kicap manis Biarkan mendidih sekejap dan masukkan pula sedikit air. masukkan serai, daun limau purut dan sayur-sayuran. Bila dah mendidih, masukkan bwg besar dan buah tomato. semasa menghidang, perahkan limau kasturi.

yam Rendang (Rendang chicken)


Yesterday I noticed that the usual Malay stalls in the wet market selling more herbs than usual, they also selling those daun palas (palm leaves) and coconut leaves for ketupat. I just realized that Hari Raya Hajijust around the corner as Malay need all these ingredients to cook Rendang and ketupat. I also take this opportunity to buy some fresh herbs to cook my favourite Ayam Rendang (Rendang chicken) and also learnt how to prepare ketupat daun palas ( palm leaves glutinous rice cake) from a Malay makcik (auntie).

My Malay friend taught me how to cook this Ayam Rendang (Rendang chicken), and usually I prefer creamy (more gravy) type of Ayam Rendang, thus usually I don't add kerisik (toasted coconut)...

These herbs/ingredients are must have items in cooking a good Rendang..

After mix all blended ingredients and chicken, in cooking process..

The background are those ketupat palas parcels (palm leaves) that i bought from wet market and to fill the parcels with glutinous rice and cook it, this is best to serve with Rendang.

Ayam Rendang (Rendang chicken)

1.5kg chicken, chopped into bite size Blend ingredients 5 cloves garlic 5 shallots 2 big onions 1 ginger 1 galangal /lengkuas (blue ginger) 2 lemongrass, cut small pieces 5 buah keras (candlenuts) 1 fresh turmeric 2tbsp chili paste 1 asam keeping (tamarind peel) 150ml thick coconut milk 200ml water

1 turmeric leaf, finely shredded 3 kaffir lime leaves, torn into few pieces 2 lemongrass, bruised 5tbsp cooking oil 2tsp salt or to taste 1 and 1/2tbsp sugar or taste Method 1. Blend all blend ingredients with few tbsp of water till fine paste, set aside 2. Heat oil in a heavy pan, add in blended paste, saut till fragrant. 3. Add in chili paste, continue stir fry for 15mins. 4. Add in chicken, tamarind peel, turmeric leaf, kaffir lime leaf and bruised lemon grass, stir to mix well, cook for 5mins. 5. Add in water, continue to simmer for 20-25mins, stir from time to time. 6. Season with salt and sugar, mix in coconut milk, continue to cook for another 5mins.

rendang
Ingredients

Main ingredients: 1.5 kg chicken 5 tablespoons olive oil or any cooking oil 1 cinnamon stick (about 2-inch long) 3 cardamoms 1 star anise 3 cloves 1 cup or can coconut milk 1/2 cup water 2 teaspoons turmeric powder 2 kaffir lime leaves (finely sliced) 5 tablespoons toasted coconut 2 teaspoons tamarind juice or lime/lemon juice 1 tablespoon sugar to taste Salt to taste

Rendang Paste ingredients: 5 shallots 5 cloves garlic 1 inch ginger 1 inch galangal 3 tender lemongrass (cut into paper thin slices) 4 red finger hot peppers
