Banana Cake

Banana Cake

Butter 120 g (4.2 oz.) Sugar 130 g (4.6 oz.) Honey 40 g (1.4 oz.) Salt 2g (0.07 oz.) Egg 100 g (3.5 oz.) Banana (ripe) 250 g (8.8 oz.) Flour 180 g (6.4 oz.) Baking powder 6 g (0.2 oz.) Walnuts (roasted) 60 g (2.1 oz.) Rum 30 g (1.1 oz.) Roasting the walnuts Chop the walnuts and spread on a baking sheet (with baking paper). Roast for 10-15 minutes in your pre-heated oven at 180C (356F).

The ingredients are for a 20x8x8 cm (8x3x3 inches) pound cake pan. When using a different size, calculate the volume of your pan and divide it by the volume of my pan (in cm: 20*8*8=1280, in inches: 8*3*3=72) to get the conversion factor for the ingredients.

Sift the flour together with the baking powder twice. Whip the soft butter for a few minutes to incorporate air.

Mix in the sugar, honey and salt. Then beat the egg and add it little by little.

Mix very well after each addition of egg. Mash the ripe bananas with a potato masher. If you dont have a masher, use a fork or do it by hand.

Do not use a food processor because it would cut the bananas into a fine puree. We need a coarse and lumpy texture for the perfect banana cake.

Mix the mashed banana into the dough. Then fold in the sifted dry ingredients (flour, baking powder). Finally, add the chopped roasted walnuts.

Prepare the cake pan with baking paper and grease the sides with butter. Fill with the dough

Level the surface as shown in the picture, i.e. the center (arrow) should be lower than the sides. Bake for 60-70 minutes in your pre-heated oven at 175C (347F).

After baking, brush the hot cake with rum (optional).


Let the cake cool down on a cake grid (in the cake pan).

When the cake cooled down, run a knife along the sides and remove the pan. Remove the baking paper and enjoy your banana cake. Store the cake in an airtight container (or wrapped in plastic) in the fridge. It will be fine for one week. Warm the slices in the microwave for a short moment to intensify the banana flavor.
