How does wine get color?

How wine achieves color is dependent partly upon the grape variety, the size of the grape berry and the exposure to oxygen of the juice. But mostly, it depends on the duration of the juice-to-skin contact. Though seldom done, it is possible to make white wine from red grapes, but red wine can only be made from red grapes. In red winemaking, colorless juice is released as red grapes are crushed and then pumped into a stainless steel tank or plastic bin. As skins break open, color pigments in the skins make contact with the juice; juice darkens and gets more intense color with longer skin contact. This skin-and-juice contact period, called maceration, or cold-soaking, could last from a few hours to a couple of weeks, depending on the wine and winemakers preferences. At some point during maceration, the fermentation process may start, either by natural yeast, or through the winemakers manual addition of a commercially packaged, cultured yeast. Fermentation is visibly evident from a bubbling surface of the juice caused by the release of carbon dioxide gas and heat as sugar converts to alcohol. The gas pressure inside this dense mixture of juice, grape pulp, skins, seeds and stems, called must, causes the solids to rise to the top. And the biggest contributor to color grape skins is trapped within this top layer of solids as the relatively clear juice stays below it not good if you want red wine to actually be red. To extract color, this cap of solids has to be manually pushed back into the juice, or punched down, to keep the pigment-rich skins in contact with as much juice as possible during maceration and fermentation. When fermentation takes place inside plastic bins or oak barrels that stand upright with one end open, punch-down is done manually several times a day using a long-stemmed, punchdown tool. When juice ferments inside large stainless steel tanks too large to punch down by hand, juice is instead directed from the bottom of the tank through a hose and into a pump, which sends the wine back to the top of the tank. This version of red wine colorextraction process is called a pump-over. Before white wine is fermented, grape juice is separated from the skins as soon as possible by immediately pressing the grapes with mechanical force to break them open and then pumping juice away from skins while it is still relatively clear. Even though the skins of white grapes are light green, yellow, or golden, they may still contribute color if left in contact with the juice. Some winemakers extend contact time to extract as much aroma as possible from white grape skins but not long enough to add too much color or increase bitterness. The juice from pressing is then sent into a stainless steel tank and mixed with yeast to start fermentation. The pressing step is also applied to red winemaking, however it comes after fermentation finishes, when virtually all sugar is converted to alcohol. But prior to red wine pressing, an initial volume of free-run wine is allowed to gravity-flow freely from its mass of skins and solids. Typically dark purple, it may be a little cloudy, but relatively clean compared to whats left behind. Pressing red wine squeezes out the last amounts of wine from the leftover, skin-rich mass of solids. This dark, press wine is considered lower quality than free-run wine because of its harsher taste, but the extent to which it will be added to lighter free-run wine allows the winemaker to control the intensity of final wine color and texture.

Trellising: Shaping Wines before the Grapes

Every grape vine pretty much looks like every other one, right? Well, while driving past them it may seem to be the case, but the truth is small differences in the shape of the vines can have major impacts on wine quality, yield, bouquet, taste and mouthfeel. Believe it or not, the shape the grapes are grown within has a major but often unrecognized impact on what ends up in your glass. Trellising is dirty, un-sexy work, but its the lifeblood of growing great wines. The canopy is what converts sunlight into wine, so its vital on many levels. Each style of trellising has to take into account a number of variables along the way to creating a structure which allows for vine balance; thats whats key to producing grapes with lots of flavor without damaging the vine or its roots through stress, over- or undercropping, or mismatching vine to location. These options include number of shoots per vine, number of leaves per shoot, number of clusters per shoot, orientation toward the sun, shading of the grapes via the canopy and the overall shape of the canopy, which is determined by the guidewires of the trellis. There are dozens of possible combinations in commercial use today. There are two basic kinds of trellising, though, vis--vis various ways of positioning the shoots vertically to maximize access to sunlight while maintaining less vigorous growth in poor, infertile soils, or different styles of dividing the canopy vertically or horizontally to control for vigorous growth in soil too-good for grapevines. What? I sense you thinking: How can soil be too good? Everything youve absorbed about growing things the right way is the opposite for winegrowing. Soil that is too good encourages excess leaves and excess fruit. The former stresses the vine and keeps it from putting its energy into the grapes. The latter dilutes the flavors in the resulting wines. When winegrowers talk about Balance is key, thats what they mean: all of the elements are properly enfolded together. Some of the more common vertical shoot positionings, known generally as VSP , take the forms of candelabra. Guyot divides the vine quite low to the ground, leaving just two canes regrown each year below guidewires, to which shoots will attach themselves. VSP generally makes the arms permanent, allowing for spurs on the arms from which the vertical shoots grow, and Cordon goes one step further with its permanency, with the shoots generally positioned up, over, and then back down so that the clusters are shaded from direct sunlight. In contrast, divided canopy trellising is designed to try to take away excess growth by making the vine work harder for what it does put out. Winegrowers do this by creating more sections with more canes, shoots, and/or cordons. Scott Henry creates multiple vertical canopies, making the vine work twice as hard. California Sprawl separates the canopy in two, flopping large sections of growth to each side; Lyre uses movable guide arms to open or close the V and the flop. Genva Double Curtain creates four cordons for each vine, doubling vine energy needs horizontally in contrast to Scott Henrys upright, split form. Do the range of options really matter? Absolutely, as the trellis style alone has been shown to have an impact on all levels of wine expression: softening or hardening tannins; adding or removing flavors, aromas, and range of ripeness options; effecting yield, concentration, and vine life. The term winegrowing is a bit of a linguistic oddity, for sure, but as you can see, its absolutely appropriate. One of the reasons its quite fair to say civilization is wine is that, unlike just about everything else we produce, wine requires our constant attention even long before a single grape is harvested or a bud breaks. A Delicious Evening to Support the Cancer Community

The team at Il Cortile Ristorante, Paso Robles fine Italian dining establishment, will play many roles in the upcoming 6th annual Tour of Paso cycling event on March 22. The event is comprised of three variable-distance cycling races for which participants raise funds to sustain the Cancer Support Community, a resource serving local cancer patients and their families. Members of the Il Cortile staff have formed a cycling team, including Owner and Managing Partner Carole MacDonal. To raise support for Il Cortile Ristorantes cycling team, Chef Santos MacDonal and his kitchen will craft a special reverse wine dinner menu to complement a bottle of Peachy Canyons 26,000,001 wine a 2011 Zinfandel at the restaurant on March 5. 26,000,001 is the number of cancer survivors in the world today according to the Cancer Support Community website, making this wine a special tribute to all survivors. Chef Santos will prepare a three-course menu around the bottle of wine for $40 per person plus the cost of the wine. Il Cortile servers will generously donate their tips from the dinner toward the Il Cortile cycling team and the Cancer Support Community. After the success of the inaugural CABs of Distinction Gala (launched last year to celebrate and promote Cabernet Sauvignon and red Bordeaux varietals produced in Paso Robles) the Paso Robles CAB (Cabernet and Bordeaux) Collective (PRCC) has enhanced the consumer experience, tenfold. The CABs of Distinction Gala will take place April 26, 2014 at River Oaks Hot Springs in Paso Robles. This top-tier event will include tastings of PRCC member wines paired with artisanal cheese and charcuterie chosen by Fromager Zina Miakinkova. Decadent catered lunches will be prepared by Paso Robles finest restaurants and caterers including Roberts Restaurant, Crush Catering and AvantGarde Experience. Three Distinct Chardonnays from Chamisal
The historic Chamisal property, the first vineyard planted in the Edna Valley, has been producing wines of distinctive character since 1973. With the proximity to the ocean and cool climate, it is the ideal area for Pinot Noir and Chardonnay. It is really with the Chardonnays where the depth and versatility of winemaker Fintan Fin du Fresne shines. Each of the three Chamisal Chardonnays embodies a different personality that Fin is careful to cater to: Califa Chardonnay, Estate Chardonnay and Stainless Chardonnay. Chamisal really does produce a Chardonnay to suit every palate. The Califa Chardonnay (Chamisal Estate, Edna Valley, $40) is a stunning, rich Chardonnay made entirely from estate grown grapes. If you are looking for a classic California Chardonnay, look no further. From the rich tropical fruit, to the creamy finish, this wine is sure to please. The Califa is able to offer weight and intensity without detracting from the characteristics which make it distinctively Chamisal. The Edna Valley is one of the coolest growing regions California with one of the longest growing seasons. This equates to grapes that maintain a fresh acidity but are also afforded the chance to develop the rich fruit flavor that is the hallmark of the Califa. Califa loosely translates into most beautiful one which perfectly captures the essence of this wine. The Estate Chardonnay (Chamisal Estate, Edna Valley, $28) also uses 100% estate grown Chardonnay. With six different Chardonnay clones planted in the vineyard, Fin is able to use that to his advantage to create a nuanced and complex wine using the various clones. While the Estate Chardonnay employs a more judicious use of oak and malolactic fermentation to emphasize the bright, clean acidity of the Estate fruit, blending the six clones ties the flavor together beautifully. If you want just a hint of oak and touch of cream with lots of bright fruit, the Estate Chardonnay is the right choice. The Chamisal Stainless Chardonnay (Central Coast, $18) sees no oak and no malolactic fermentation during the winemaking process. Although this style of Chardonnay is now becoming more familiar to Chardonnay drinkers, Fins version certainly brings a new twist to un-oaked Chardonnays. The depth of flavor attained for this style of wine is remarkable. It is clear that he has mastered the art of un-oaked Chardonnay by providing the most pure representation of the grape while maintaining a richness that is not often achieved in un-oaked wines. more varieties planted on 85 total acres: Pinot Noir, Syrah, Grenache and Pinot Gris. Like the Chardonnay, each variety is planted to multiple clones so Fin has 24 completely different parcels to blend into his wines. The Chamisal tasting room is in an updated, modern barn that opens up onto the beautiful back patio set in the Estate Vineyard. Director of Consumer Sales, Andrea de Palo sets the tone by bringing a warm and inviting feel, making guests feel like family. With a wide range of varieties and styles, including the Chardonnays, its not hard to find a Chamisal wine to fall in love with. There has been an abundance of talk lately about Paso Robles as an up and coming California wine region. The AVA has gleaned mentions in everything from the UKs Guardian, to news outlets Forbes and CNN, to the Wine Enthusiast Magazines Wine Star Region of the Year Award. The Central Coasts little slice of wine country paradise is without a doubt coming up in the world. Those of us native to the area remember when there were only a handful of wineries here. Having been making award-winning wines since the late 80s, Peachy Canyon is a part of that handful. After 25 years of Paso Robles-turned-national success, the winery has learned to balance going with the flow and keeping true to their essence. Their willingness to experiment with new grape varieties and blends compliments their dedication to what is arguably Paso Robles heritage grape: Zinfandel. So it only makes sense that theyd embrace Paso Robles latest big event, Vintage Paso: Zinfandel and Other Wild Wines. Peachy Canyons latest Zin vintage has been especially lauded with six-plus 90 point wines from critics ranging from Stephen Tanzer, to Wine Enthusiast, to the California Grapeline so it wouldnt be far off to say they have a Zin for everyone. The name Summerwood conjures up images of idyllic meadows flanked by regal trees on a perfect sunny day. And SummerWood Winery is about as close to this image of perfection as you can get. After an extensive remodel of both SummerWoods tasting room and its adjacent Inn, SummerWood has become a destination for artisan small lot wines and farmfresh food. Our goal is to provide SummerWood guests with an authentic Paso Robles experience a destination where they can enjoy our limited production wines and wine country cuisine in one setting. While we have the intimate feel of a bed and breakfast, we also have the amenities and concierge service of a luxury hotel, says Executive Chef Kelly Wangard. SummerWoods Westside tasting room is a large but comfortable space populated with kind, cheerful and knowledgeable folks, eager to discuss their award winning wines, including their recently awarded Grenache Blanc. The focus of the wines here are American Rhone varietals and blended wines like their Diosa Blanc (Viognier, Marsanne and Rousanne), Diosa (Syrah, Mourvdre and Grenache) and their signature Bordeaux-blend, Sentio, made up of Cabernet Sauvignon and other grapes depending on harvest. But they also produce Zinfandel, a Solera style Zinfandel Port and Syrah sourced predominantly from their estate, as well as a few other select vineyards in Paso Robles. Situated on the edge of vineyards across the street from the winery, the nine-room inn is designed in a clean, simple style with high ceilings and lots of windows to let in natural light, a grand living room, and dining room along with the addition of a demonstration kitchen and an outdoor dining space. The site plan utilizes energyefficient materials and LED lighting, with an overall holistic look at sustainability. The Inn's design theme is a combination of historic meets contemporary, blended into a rustic, vintage elegance, smack dad in the middle of wine country. Two mature oak trees sit outside the back patio and you'll find plenty of outdoor tables all around where you can sit and soak up the surroundings. And whether you stay at the Inn or simply just want to check out the wines, these upcoming events are worth considering. March 14 through 16 from 10:00 a.m. to 6:00 p.m. its Cigars, Chocolate and Zinfandel! which allows you to indulge in a delicious pairings of chocolate with their Zinfandel Port, and for the cigar connoisseur, there will be premium cigars and Zinfandel. Shortly after that on March 29 from 6:00 p.m. to 8:30 p.m. wine educator, restaurateur and author, Shelley Lindgren from SPQR, and A16 restaurants in San Francisco and SummerWood Chef Kelly Wangard team up to present a unique evening of food and wine. Both ladies had previously worked together at Fleur de Lys in San Francisco. They are reuniting to create an evening unlike any other including a cooking demonstration Making Fresh Mozzarella, along with a wine tasting and small bites at various epicurean stations. The evening will conclude with a book signing of Shellys two books. If Eos was the Greek goddess of the dawn, then she has at least two lives. Eos was originally owned by the Arciero family - Italian immigrants who came to the U.S. in the late 1930s, and they opened their own winery in 1985. But Eos entered a new and dynamic phase when it was purchased in 2010 by vintner Billy Foley. Located in a gorgeous building of wood floors and ceilings accented by white walls and earthen hues and overlooking a manicured garden, the tasting room is comfortable and roomy with plenty of friendly servers. Eos wines are mainly Paso Robles based, but you will also find wines here using grapes sourced from Napa, Sonoma, and even Amador counties. And it is exactly this diversity that makes Eos so flexible, and able to provide wines of depth and flavor. For example, a customer can taste a Zinfandel grown here in Paso Robles and compare that to one grown in Napa, Sonoma or even Washington State. A visit to the tasting room gives you several options of how best to sample their portfolio. Tasting fees are a mere $5, or $8 if you keep the logo glass. There is also the reserve wine flight private tasting ($10 includes logo glass) which is conducted in a private room with a dedicated tasting attendant to walk you through the wines. Or for a little more relaxed tasting the Private Seated Tasting and Lunch ($25 per person) which consists of a gourmet lunch which includes your choice of sandwich, salad of the day, fresh fruit and an Eos brownie. This sit down option is held in their banquet room, but you need to make reservations in advance. Their wines include two much-lauded wines by the national wine press: their 2011 Central Coast Chardonnay, and their 2011 Tears of Dew Late Harvest Moscato, a viscous dessert wine. But you will also find Zinfandel, Cabernet Sauvignon, Petite Sirah and several dessert wines and Ports which are distributed nationally for easy access no matter where you live. Like most wineries they offer a wine club, however Eos club members also receive perks at sister property locations, including Firestone Vineyard, Foley Estates and Lincourt Vineyards. The San Francisco International Wine Competition is the largest and most respected competition in the United States. Over 5800 entries have submitted their very best. Winemaker, Eric Johnson
Growing up on the family farm in Los Banos, California helped Eric Johnson, winemaker at Talley Vineyards, to develop an appreciation for tradition in quality farming at a young age. But his foray into the world of winemaking happened later, while completing his studies in Wine and Viticulture and Agricultural Business Management at Cal Poly San Luis Obispo. Johnson began by working at Bianchi Winerys tasting in Paso Robles, then at Talley Vineyards tasting room during his senior year. Although he loved sharing the Talley wines and story with visitors, after working his first harvest at Talley as an intern for the production facility, Johnson knew his passion to be winemaking. After graduating, Johnson continued to hone his winemaking skills and eventually became head winemaker. This year marks Johnsons eighth year at Talley Vineyards, and he continues to apply his passion for excellence along with his zest for lifelong learning to his winemaking techniques. Over the years Johnson has traveled to France, Italy, New Zealand, Argentina and Chile in order to explore other wine regions, work harvests, and of course taste lots and lots of wine. I love learning how people [in other wine regions] are doing things differently, said Johnson. I have learned so much from tasting different wines. It has opened my eyes to different techniques and really strengthened my palate. At Talley Vineyards, Johnson is able to work with grapes from six unique vineyards across 177 acres in Southern San Luis Obispo County. Rincon, Rosemary's, Monte Sereno, and Las Ventanas Vineyards are located in the Arroyo Grande Valley, while Oliver's and Stone Corral Vineyards are located in neighboring Edna Valley. I have a fantastic team that pays great attention to details, said Johnson. We have to grow good grapes to make good wine, and by picking the grapes at the optimal time, the wine practically makes itself. I suppose that makes me a lazy winemaker. When visiting Talley Vineyards Johnson recommends tasting one of their flagship wines, the 2012 Estate Pinot Noir, which is a blend of grapes from Rincon and Rosemarys Vineyards that is suave and offers great depth of flavor. I like to make wines with more finesse and elegance, said Johnson. I want to preserve that freshness in each bottle. Visitors often have the opportunity to meet Johnson, as he loves visiting the tasting room and will often join winery tours and give barrel tastings. Woods Humane Society is also the only animal shelter on the Central Coast with a fully operational spay and neuter suite, which opened in September of 2006 and has performed over 20,000 surgeries. Their goal is to provide a premier level of care for all of the animals entering their doors. As the needs of the county grows, so too does the cost to operate their facility. They are experiencing a 20% growth in all aspects of the shelter on an annual basis. Woods can rise to meet the needs of the local homeless animal population, but cannot do this without the support of their community. Central Coast Author Receives Third Award For Wine Book

Templeton, CA-based author, Len Napolitano, has been honored by the Non-fiction Authors Association with a Gold Award in the Non-fiction Book Awards competition. His book, Nose, Legs, Body! Know Wine Like The Back of Your Hand, published by Wineology Press, serves as a quick and easy introduction to wine for beginners or as a refresher for anyone wanting to renew their knowledge in wine basics. This recognition comes after two previous awards were received by the author since the book's release in July 2013: the Benjamin Franklin Digital Silver Award issued by the Independent Book Publishers Association and the QED Seal of Approval by the Digital Book Awards. Books reviewed by the Non-fiction Book Awards judges are based on a scoring system that evaluates the quality of the writing and production of the book (editing, design and other details). A book can receive a bronze, silver or gold award provided the final evaluation score qualifies. One of the judges who reviewed Nose, Legs, Body! praises the book: "This little book is jam-packed with down-to-earth advice on to how to navigate the complex world of wine grapes and styles, how to make the most of a wine tasting, the proper way to open and serve sparkling wine and more. Written with humor and charm, this book would be a great addition to any wine lovers book collection." Certified in wine by both the Society of Wine Educators and the Wine & Spirits Education Trust, Len Napolitano was enjoying a successful career in engineering when he realized his skills in technical sales, writing, and marketing could be combined with his passion for - and knowledge in - wine. Thats when he exchanged his calculator for a cabernet. He began a new profession explaining complexity with clarity in his weekly wine column, Wineology: Intelligence for the Wine Consumer. Heading to the Tasting Room

Do not be intimidated for any reason. That is rule number one (and there are very few real rules after that). For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Before you start off pack a few essentials: Water (plenty of water) and something to snack on crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesnt directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you dont have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. That said, here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Dont be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like reds, say so; if you dont like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. If you plan to take wine home with you, either in the car or on a plane, buy a cardboard box with Styrofoam wine inserts. Fill it during the day and this keeps wine from rolling around in the trunk. Check out the smaller wineries. It is a revelation. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often
include smaller (375 ml) bottles of limited production Ports or dessert wines. Dont buy a wine you can get at a supermarket back home. Youll pay more, and besides, whats the point? Look for tasting rooms in towns. Many of these are cooperative tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Dont give too much thought to ratings and vintages. Its like art: if you like it, its a good wine. It is as simple as that. Remember that you dont have to do the driving. It takes no more than a phone call to rent anything from a Town Car or restored classic convertible to stretch limos and a 20-passenger bus. All have drivers that will stow your wine for you and the local companies know the area. As to taking that wine home, ten people sharing one of those impossibly long limousines is fine and fun, but if you all plan to buy a couple of cases the trunk which is no bigger than a normal luxury cars is going to fill up fast and youre going to find yourself filling the interior floor with boxes and using cases of Cabernet as footrest. Tell the transportation company what you have in mind and listen to their advice. They know the territory and the people and personalities. Know your limits. If you get close to it let others taste and you can listen. It beats ending the day in a blur, and if need be calling a taxi is cheaper than the alternative. And if at a seated tasting, dont be afraid to leave a gratuity. Its more than worth the five or ten dollars to get wisdom and wine and a great time.

Saturdays 11:00 a.m. to 12:00 p.m. seminar, Rhones Rule: The Wines of Ballard Canyon is focused on Santa Ynez Valleys brand new AVA, Ballard Canyon, and proves that Santa Barbara is not all about Pinot and Chardonnay. Featuring Michael Larner of Larner Vineyards, Larry Schaffer of Tercero Wines and Mikael Sigouin of Kaena Wine Company (all of whom source from this AVA), the seminar offers compelling evidence, in the glass, that Ballard Canyon wineries are at the forefront of the California Rhone movement. Sundays 11:00 a.m. to 12:00 p.m. seminar focuses on one of SYVs favorite, and most difficult to grow, varietals and one that breaks more than a few winemakers hearts. Bell Street Farm is a distinct eatery and market in the heart of wine country in historic Los Alamos. An ideal destination for residents and visitors alike, the country chic setting offers a warm and inviting atmosphere to enjoy a meal, snack or sample local wines. I work with local artisans, food purveyors, winemakers and farmers to create a distinct dining and retail experience at Bell Street Farm, says Jamie Gluck, owner of Bell Street Farm. The space is an expression of my lifelong passion for fine foods and we use only the freshest ingredients found along the California Coast. The eatery was designed to reflect elements found from the original 1916 building with a modern charm. Gluck scoured the area to find materials and design elements that would work with the design. He works with local artisans like woodcrafter Richard Motz to create chopping blocks and cheese boards as well as Ramona Clayton of nearby Terrmonary to custom-create all of the ceramic serving dishes used for serving olives, salads and cheeses. Bell Street Farms menu offerings include sandwiches with locally made breads and California cheeses, farm fresh salads with vegetables and greens from local farms, rotisserie Huntsinger free-range chicken, unique salads and house-made cookies, pot de cremes and sweets. All retail offerings are carefully selected to reflect the local area experience and include picnic baskets, aprons and assorted kitchen items, luxurious hand and body products, as well as culinary themed gifts. Bell Street Farm also offers custom designed picnic baskets for groups of two people to 200. Located in the heart of Downtown Los Alamos, Bell Street Farm is just 45 minutes north of Santa Barbara and 75 miles from Paso Robles. Firestone Vineyard was one of the first commercial estate vineyards planted in Santa Barbara and true to that progressive thinking, they continue to look forward with new wines, new markets and a commitment to making the best wines in Santa Barbara County. The Firestone name is probably familiar to most people; they were the family that created Firestone tires. Today winemaker Paul Warson, who came on board at Firestone after 14 years making wine in the Napa Valley, is putting his own stamp on Firestones aromatic white wines and their traditional Bordeaux reds. Warson oversees over 400 acres of grapevines which translates to about 100,000 cases of wine each year, making them a major player in Santa Barbara County. Its been a whirlwind three-and-a-half years since I took over the winemaking here at Firestone Vineyards, Warson says. It seems that we need to move faster and faster to stay in the same place, or keep up with the latest accomplishments for that matter. We have received some terrific accolades from the media and press in the last year which has gone a long way in expanding Firestone into new markets. And Firestone is also one of the few wineries in the area who offer complimentary public tours daily at 11:15 a.m., 1:15 p.m. and 3:15 p.m. After the 30-minute in-depth tour you can picnic outside on the verdant lawns and see for yourself the vineyards
which have been planted on a series of mesas, which have gravelly sub-soils, perfect for keeping the vines healthy and well-drained. The vineyards sites are ideally oriented to capture the sun and breezes for perfect exposure to maximize the grape flavors. At the winery things are busier than ever, says Warson. Last year saw the inaugural release of Proximity 26, our flagship red wine. In the next few weeks Paul says he will be bottling the 2010 vintage of Proximity 26, and a new addition to the Firestone family, Proximity 26 Cabernet Sauvignon. As usual our wine club releases continue to highlight our tasting room only wines, notably our Reserve Chardonnay, Clone 174 Syrah and our Cabernet Franc, Warson adds. So if youre a newbie wine lover or a confident connoisseur you will find wines that are compatible with your personal tastes. The spacious tasting room is replete with soft wood tones, and tiled floors, reminiscent of a ranch house with views out to one of their vineyards. The tasting room also offers a plethora of gift items in addition to wine. Their bottle prices range from $15 to $60, with a vast majority being under $25. Their Firestone Concert Series, which are normally held every Friday starting in May until the end of September 2013, and are the ideal way to spend clear warm summer nights in Santa Barbara

Roger and Priscilla Higgins, owners of Cimarone Wines, are people willing to take a chance to create something special. After having prosperous careers in the Silicon Valley, they decided to pursue a new course to make great wines. In order to find the right place, they visited the Santa Ynez Valley. They drove down Highway 154, took one look at the valley below, and knew it was the place they wanted to be. Having been involved in cutting edge industries in their former careers, the Higgins approached winemaking in an entrepreneurial spirit. Instead of choosing to make wines in an already established area, like Napa, they decided to take a gamble on an untested location. They chose to set up their winery in Happy Canyon in Santa Ynez. Happy Canyon was named an AVA in 2009, and local lore has it that this isnt the first time it has been known for its alcohol. During Prohibition, there was said to be a distillery producing alcohol in the canyon, and people used to say They were taking a trip up Happy Canyon. Cimarone Wines are products of Happy Canyons unique climate. The canyon has the highest temperatures in the Santa Ynez Valley, gravelly, serpentine soil and a mineral terroir coming from the Los Padres National Forest. It provides the perfect climate to produce the Bordeaux varietals that are Cimarones specialty.
One of Cimarones most popular wines is the 3CV Bank, a blend of Cabernet Franc, Cabernet Sauvignon, Petit Verdot, Malbec, Merlot and Syrah. Cimarone also produces a Sangiovese, the 2009 Cimarone Gran Premio, the 2012 3CV Sauvignon Blanc and a 2012 3CV Cillas Blend, made from Syrah and Bordeaux varietals, as well as a straight Cabernet Sauvignon. The motto at Sort This Out Cellars is Good TimesGreat Wines, and thats exactly what visitors to this unique tasting room can expect. Sort This Out Cellars is a boutique winery located in the heart of the Santa Ynez Valley, although after walking through the tasting room doors, the atmosphere is more akin to classic Vegas. For owner and winemaker, Michael Cobb, the inspiration for the winerys image came from an old picture of the Rat Pack standing outside The Sands hotel in 1961, evoking a time when men had character and women had curves. The wines of Sort This Out Cellars capture the finest flavors from California vineyards, and are styled with classy labels with names like Shannon Million Suited Chardonnay, Say Hey Viognier, Suited Muscat, Million Dollar Cabernet Sauvignon and Oh My Gosh Grenache. Also not to be missed are the Viva Las Vegas wines, and the highly sought after VinoNostra red wines, with blends like Mobsters and Bootleggers inspired by Prohibition era winemakers. These are wines that pair with good times and good friends, said Cobb. We make wines that are just as at home at the poker table as at the dinner table. This year, Sort This Out Cellars celebrated their second year for the pinup contest to find the next Miss Sort This Out Cellars. This years winner is Bayley Bombshell, a 25-year-old helicopter dispatcher. Her winning pinup picture features her in front of a World War II era painting (painted by the multi-talented Bombshell), and pays tribute to the countless sacrifices our veterans have made. Solvangs Wandering Dog Wine Bar has officially announced their new 2014 Friday Night Wines Class Series, which will entail onceper-month events spanning through May. In line with Wandering Dogs mission to engagingly educate its wine club members and patrons, class topics will run the gamut from Barolo to Syrah to Pinot Noir, plus a special edition dedicated to Santa Barbara County AVAs. All classes are currently open for enrollment, and advance payment and reservations are required. La Montagne Winery
Kimberly Smith, owner of LaMontagne Winery, loves what she does and it shows. In the past few years, she has made awardwinning Pinot Noirs with the goal of making each sip bring joy to others. Smith is the type of person who decides what she wants and makes it happen. When she started to wonder what made the $50 bottles of Pinot Noirs that she loved so appealing, she didnt want to rely on others to tell her, instead, she wanted to find out for herself. She enrolled in college to learn more about winemaking. While there, she went to a presentation in which Wes Hagen, winemaker at Clos Pepe Vineyard, spoke about his craft. Smith immediately asked him to give her a hands-on education in winemaking, and the rest is history. Her first vintage went into barrel in 2010. Her philosophy is that wines should be allowed to develop at their own rates until they truly sing. Smiths 2010 Pinot Noir won gold at the Pinot ShootOut, a blind taste test of wines from all over the world. In addition to Pinot Noirs, Smith produces a Pinot Blanc and a Tempranillo. The fruit for Smiths wines come from the Santa Rita Hills and are produced in small lots. Smith said the area is perfect for making the types of wines she loves. The coastal fog and ocean breezes are a perfect compliment to the soil, allowing Smith to produce the types of wines she likes best.
Lucy La Montagne was Kimberlys husbands grandmother. Their family name, La Montagne, means the mountain in French. She said this name is an appropriate way to describe her wines. She wants to create exceptional wines that represent the place the fruit was grown. LaMontagne Winery is located at 1509 E. Chesnut Avenue in the Lompoc Ghetto. For Angela Soleno, winemaking is not just a job, its a calling. She had a glass of Chianti in Carmel that inspired her to change her life. She decided then and there to embark on a new career path and find a job in the wine industry. Soleno started out working as a project manager for a winery in Los Olivos, but soon decided that she wanted to produce her own wines. Five years ago, she carefully chose the fruit to make her first blend, and waited for her wines to mature. Just last April she released her first wines: 2008 Perpetual Bliss a Syrah and Cabernet Sauvignon blend 2008 Syrah, Camp 4 Vineyard 2008 Cabernet Sauvignon, Camp 4 Vineyard Soleno only produces red wines. If Im going to end up with any wine left over, I want to drink it, and I like red. In addition, it was a red wine that set her on her current path. I had a glass of wine that changed my life, she said. As a winemaker at a one-person venture she has complete autonomy over production. She said, I like to be creative with my blends, combining grapes that are not traditionally blended together. Once the wines are put into barrels, the waiting begins. Soleno said she ages her wines for about three years. I personally like wines that have been aged and are ready for customers. She said she checks the wines after the two-year mark, but doesnt rush the process. I want to create a product thats perfect. Its ready when its
ready. Soleno only produces her wines in small batches. For her first release, she bottled 46 cases of the Perpetual Bliss, her red blend, and 20 cases of Syrah and Cabernet Sauvignon. While she only produces a limited supply, she thinks her wines fufill a specific purpose. The wines I create are for special occasions, she said. She said her wines as food-friendly, elegant, nuanced, and feminine. The only way to get a taste of Turiyas wines, however, is by visiting Solenos Lompoc facility. Soleno said she holds barrel tastings by appointment at her location at 316 North F Street in Lompoc. Barrel tastings are $15 per person (this fee is waived with a wine purchase). Conway Family Wines Deep Sea Tasting Room

The Conway family is actively involved in their winery business. With two different labels covering the best of the California Central Coast, Conway Family Wines might just become your familys wines. They offer two labels to choose from including Deep Sea wines which are made from grapes grown in Californias moderate coastal climates including offerings of Chardonnay, Viognier and Sauvignon Blanc to Syrah and Pinot Noir. Vineyards along Californias coastline are cooled by fog and ocean breezes which translate to distinctively different grapes from those grown in warmer interior areas. Its the job of the Conway winemaker to preserve these differences so the wines reflect their oceanic terroir. Conway purchases fruit from noteworthy vineyards in Santa Barbara, San Luis Obispo, Monterey and the Napa Valley, contracting specific blocks, actively managing individual vines and working with growers to formulate viticultural practices so that the grapevines are farmed to Conways exacting specifications. Their Rancho Arroyo Grande wines are made from grapes grown at their estate vineyards in San Luis Obispo County including Mourvdre and Zinfandel from this 1880s era property. These are limited production wines, small lots, for the fine wine connoisseur who wants something uncommon. The ethereal fog-like wave on the Deep Sea label represents the influence of the Pacific Ocean and thats exactly where you can taste their wines; on historic Sterns Wharf in Santa Barbara as the Pacific laps below the second story tasting room. Wine Bar Tasting

The most common tasting experience is a Wine Bar Tasting. You step up to the bar where typically a list of wines being poured is displayed. Expect to pay a tasting fee between $10-$40. Some tasting bars will offer you the option to taste a library or reserve wine. Exercising this option increases the fee, but will allow you to taste very unique, old or rare wines.

Sit Down Tasting

A Sit Down Tasting usually requires an appointment, and there may be a slightly higher fee than a wine bar fee. Seated in an elegant room, you are poured several wines by your winery host. Expect your host to describe the unique characteristics of each wine and how it was made.
Walk Around Tasting

A Walk Around Tasting is a combination of a tour and a tasting. Your host brings along several bottles of wine on your tour, and may take you to a garden area of the winery to pour the first round. Then you move to another place within the winery to sample the next wine. This experience continues until all the wines are tasted.
Barrel Tasting
Another popular tasting experience that can be part of a tour or a Walk Around is a Barrel Tasting. Your guide takes a wine thief, a special siphon placed into a hole in the top of a barrel to extract tasting samples of a maturing wine. The sample allows you to taste what the wine is like in the middle of developing its full potential.
Why make an appointment?

Some wineries are so small that they need to know when you are coming so someone will be there to greet you. Others have sit-down tastings that start and end at specific times. Its always a good idea to schedule your appointments well in advance.
