2 cups pureed fruit 2-3 tsp honey 1-2 tsp cornstarch 2 tbsp water Add honey to fruit in saucepan. Bring to boil. Mix water and cornstarch and add mixture to puree. Cook until thickened. Spread on plastic wrap in cookie sheet. Place in oven overnight at 150-160 deg F with door propped open slightly.
Spanish Rice
4 cups cooked rice 8 oz pork or bacon 2 tomatoes 2 onions 2 cloves garlic 2 tbsp chili 1 tbsp soy sauce 4 tbsp butter cup chopped celery 1 can mushrooms cup chopped green pepper Fry meat, add onion, garlic, celery. Saute until onion is tender. Add onions and tomatoes until celery is tender crisp. Cover and add water if necessary. Add spices and green pepper, cook to blend. Add rice, simmer a few minutes, then serve.
Antipasto
1 lbs cucumbers 3 lbs cauliflower 2 lbs pickling onions 3 lbs (5 tins mushrooms) 2 lbs (4 tins) green beans 2 lbs green pepper 2 lbs mild red peppers 5x 16 oz tins ripe olives 5x 8oz tins tuna 5x 16 oz jars stuffed olives 5x 11oz bottles ketchup cup olive oil cup vinegar Boil cauliflower 3 minutes. Dran and set aside. Peel pickling onions, cut cucumbers into slices. Dont peel them (use tiny ones). Boil beans until tender. Set all vegetables aside. In a large pot fry sliced mushrooms in oil. Add ketchup. Cut up green and red peppers. Simmer 10-15 minutes. Add vinegar Cook 10 minutes longer. Add all vegetables, olives and remaining ingredients, breaking up tuna. Simmer 12 minutes. Put into sterilized jars and steam 15 minutes. Makes 20 pints.
Playdough #1
1 cup flour 1 cup water 1 tbsp oil 1 tbsp alum cup salt 1tbsp vanilla food color Mix dry ingredients, add oil and water. Mix till free of lumps. Cook over medium heat. Add food color and vanilla.
Playdough #2
1 cup of water with food color 1 cup flour cup salt 2 tsp cream of tartar 1 tbsp oil Mix dry ingredients, add oil and water. Mix till free of lumps. Cook over medium heat.
Corn Dogs
Basic Batter: 1 cup flour cup cornmeal 2 tbsp sugar 1 tbsp dry mustard 2 tsp baking powder 2 tbsp shortening 1 cup milk 1 egg Combine dry ingredients in a mixing bowl. Put in shortening. Add milk and egg, stir well to remove lumps. Makes 2 cups. Wieners and Sticks: Heat at least 2 of oil to 375 deg F Insert skewers lengthwise. Pour batter into drinking glass. Make sure hotdogs are dry, to assure batter adheres. Fry until golden brown, about 2 minutes. Drain on paper towels.
3 Bean Salad
1 can green beans (14 oz) 1 can wax beans 1 can red kidney beans 1 green pepper sliced 1 small onion sliced
cup sugar cup vinegar cup oil tsp pepper Marinate overnight and then drain.
Friendship Cake
1 cup starter (do not freeze) 2 cup sugar 4 cups canned peaches with juice Combine above ingredients. Stir once a day for 10 days. Use glass or crock, not plastic. Day 10 - Add 2 cups sugar and 20 oz pineapple tidbits and juice. Stir daily. Day 20 - Add 2 cups sugar and 2 (9 oz) jars slice mashashino cherries - no juice. Stir daily. Day 30 - Make cakes - Drain juice -> 5 jars starter (1 cups each) * use starter in 1-2 days. Cakes: 4 boxes cake mix (with pudding) 1 cup oil 16 beaten eggs 4 cups walnuts (chopped) Use 2 boxes cake mix to coat fruit and nuts. Mix remaining cake mix, oil and eggs. Add fruit and nuts. Mix well. Fill lightly greased loaf pans full. Bake 50-60 minutes at 325 deg F. Do not open before 45 minutes.
Cookie Decoration
To decorate cookies mix 1 egg yolk with tsp water. Divide into 2 or 3 bowls, add food color and brush onto butter or sugar cookies before baking.
1 part Orange Juice 1 part Soy Sauce 1 part Honey dash of garlic Heat to melt, and blend honey. Brush on chicken while it bakes.
Fruit Roll
Purre fruit. Fruits that darken may be cooked 5 minutes on medium heat. Spread thinly on plastic wrap. Place in oven on lowest setting. Keep door ajar. Leave until no longer tacky.
Dads Cookies
1 cup butter 1 cups brown sugar (do not half) 2 eggs 1 tsp vanilla or almond extract 2 cups flour 1 tsp baking powder tsp baking soda 1 cup coconut 2 cups rolled oats Heat oven to 375 deg F. Grease cookie sheets. Blend butter, brown sugar, eggs and vanilla until fluffy. Sift and add flour, baking powder and soda. Add coconut and oats. Drop by tablespoons 8 cm apart. Flatten with fork. Bake 10 minutes or until bowned. Cool until firm. Finish cooking on racks.
