The swell moves the sand, in which lie the clams, into waves on the seabed. The cage moves through the sand collecting the clams with very limited effect on the seabed. The water quality of all fisheries is graded monthly by CEFAS and fishing controlled accordingly . The preparation plant at Kinlochleven is accredited by the Local health authority and CEFAS approve each tank issuing a number for each tank. Stock is managed very effectivley by the fishermen by Peterhead restricted days at sea, net size, not fishing in the spawning areas and of course adherence to quotas. Atlantic Scrabster Shetland Seine netters working daily catch hake in the North Sea and off the West Coast of Fraserburgh Scotland. Some of our Hake is landed from boats that are members of the RFS. Peterhead Fish is generally selected from last days catch. Farmed Isle of Gigha Gigha halibut employ a land-based fish farming system that harnesses the clean Atlantic waters from the Sound of Gigha to create a natural and protected environment in which the stock can develop. The fish are reared to organic standards. All Gigha halibut are fed with a certified organic diet using 100% fish trimmings as a source of protein and organic vegetable products as a source of carboydrate. No pressure is therefore placed on the wild fishmeal fisheries.

N.E. Atlantic Scrabster Shetland As with cod, seine netters working daily catch monk fish in the North Sea and off Fraserburgh the West Coast. Some of our Monk is landed by boats that are members of the Peterhead RFS. Fish is generally selected at the market from the last days catch. Isle of Lewis Scottish cultured mussels feed on natural food particles which are present in the water column and do not require feed. They get all their nourishment naturally, from the pristine ocean waters that surround them while they grow. Mussel seed is collected naturally on ropes suspended in the water and is considered a positive benefit on water quality. Mussels also help reduce greenhouse gases by removing carbon dioxide from the water in order to grow their shells. Our waters are pristine and monitored regularly to the highest Scottish and international standards. Our mussels are grown in clean, approved and classified waters. Great care is taken to preserve the environment surrounding mussel farms. The mussels, being farmed, ensure that there is no dredging or disturbance of the ocean floor. the industry follows extensive site selection procedures and integrated coastal management planning and costal stakeholders. Loch Creran Each year these pacific oysters seeds are brought from the hatchery and put in mesh bags and fastened to trestle tables which are on the seabed. As the oysters grow they are put into bags with a larger mesh until they are ready to be sold. On average it takes 3 years for an oyster to reach marketable size.

Isles of Harris West Loch Roag Salmon are sensitive indicators of water quality and only thrive in a good, clean and Isle of Lewis environment which is why salmon farms are mainly located in the Highlands and Islands of Scotland where there is clean water and sheltered areas. The Scottish Salmon Producers Organisation is pro-active in its drive to continuously improve the welfare of farmed salmon. The average salmon pen, by volume, is greater than an Olympic swimming pool. As salmon occupy 2% of the space available in the pen, the remaining 98% of water is available for swimming. This allows the salmon substantial space to swim freely.

Ullapool Kinloch Scallops in shell are landed by local divers on the East and West coast of Scotland Leven daily. This is a highly sustainable and low impact industry by its very nature, scallops are picked by hand off the seabed by individual divers. Scrabster Shetlands Dredged Scallops are caught by Shetland day boats. The inshore scallop fishery in Shetland falls under the remit of the SSMO who manage the regulating order for Shetland waters. Their remit is to regulate all fisheries out to 6 miles; control licensing and regulations in line with the on going sustainability of the fishery. Maximum amount of scallop dredges used is 5 per side 10 in total. Short hauls of under 45 minutes are standard which allows more bi-catch to be released alive and greatly improves the quality of the scallop. The Shetland fishery is acknowledged by Marine Scotland Science to have a stable recruitment and biomass at this time. Scallops are bought from larger trip vessels if weather does not allow day boats to fish, scallops are selected for quality, usually from last days catch. Some boats landing our scallops are members of the Responsible Fishing Scheme.

Fish is farmed in many areas of mainland Turkey, Greece and the Islands. Fish take between 12 -24 months to reach maturity. They are farmed at moderate density being 10-15kg per cubic metre. RVS(Regional Vet Services) manage the health and welfare of the fish through extensive regular checks on farms. We buy rod and line caught Bass from small fishing vessels on the south coast. We also buy from Scottish ports when fish is available. Farmed on the Aegean coast by mainly family businesses. Bream are farmed in sheltered areas although less sheltered waters are being used so cages are being adapted accordingly. Turkey is well aligned to current EU quality legislation. Each farm must pass a very rigid EIA (Environmental Impact Assessment) before being granted permission to farm. MARA (Ministry of Agriculture & Rural Affairs) monitor carefully the environmental impact that these farms have on the sea environment. The marine site is located in the waters of the West Coast of Scotland which are renowned for their pureness and rated among the cleanest waters in the world. During their time growing at sea, the fish must battle with high tidal movements, strong currents and stormy conditions which produces the highest quality product.

Belhaven Trout Farm has been running since 1980 and we source the majority of our Rainbow Trout from this farm in Dunbar. Generally it takes approx 7 months to reach harvesting size. Small fishing vessels called dhonis land daily using the pole and line method of fishing.
