Chicken wrapped in Bacon with a side of Salad


Ingredients:
2 x 170g chicken breast fillets
tablespoons fresh thyme leaves
6 streaky bacon rashers or flat pancetta slices
tablespoons extra virgin olive oil
small onion (red), chopped
Cos lettuce
Cherry tomatoes
1 Cucumber
lemon
2-3 tablespoon of olive oil (salad)
1 clove of garlic (crushed)
(a sprinkle) Dry mint


Equipment:
1 Fry pan
1 Knife
1 Scrap bowl
1 Place mat
1 chopping board
1 Plate
Measuring spoon
Oven tray
Kitchen paper
Oven mitts
Tongs

Method:
Step 1: Preheat oven to 180C and line a tray with baking paper. Season the chicken, then sprinkle with half
the thyme. Wrap 2 bacon rashers around each fillet. Heat tablespoon oil in a frypan over medium heat. Cook
chicken for 2 minutes each side or until golden. Transfer to tray and bake for 10-15 minutes or until cooked
through.
Step 2: Meanwhile, slice and add cos lettuce to bowl , chop (in half)and add cherry tomatoes, peel and slice 1
cucumber , chop and add red onion, add 2-3 table spoons of olive oil, crush and add 1 clove of garlic, sprinkle
dry mint on top and mix all together.

Step 3: Take chicken out and slice diagonally, set out the chicken and add the salad on the side, present and
serve.

Method:
Step Instruction
Step 1 Prepare equipment and ingredients, wash hands and put on apron /
hairnet.
Step 2 Pre heat oven to 180c and add baking paper to tray.
Step 3 Season chicken and sprinkle with thyme.
Step 4 Wrap bacon around chicken.
Step 5 Heat tablespoon oil on frypan over medium heat.
Step 6 Cook chicken each side for 2 minutes and/or until golden.
Step 7 Transfer to baking tray.
Step 8 Bake for 10-15 minutes until cooked through.
Step 9 Meanwhile slice Cos lettuce.
Step 10 Slice Cherry tomatoes.
Step 11 Peel and slice a cucumber.
Step 12 Chop and add a red onion.
Step 13 Add 2-3 tablespoons of olive oil.
Step 14 Crush and add 1 garlic clove
Step 15 Add all in a bowl.
Step 16 Mix all in bowl.
Step 17 Sprinkle dry mint.
Step 18 Take chicken out and put on plate
Step 19 Cut chicken diagonally (for presentation)
Step 20 Serve salad with chicken & present.

Positives Minus Improvements
Some Positives about my
dish are:
The chicken wrapped in
bacon came out really
well and presentable, also
tasting great.
The salad came out well
but things were missing
that could have been
improved.





Some negatives about my
dish are:
The salad was too runny
from the lemon sauce as I
added too much, the
lemon sauce also ruined
the flavour of the chicken
wrapped in bacon.

Some improvements I
could have done are:
I could have minimised
how much sauce I put, I
could also have fixed up
the salad by maybe
changing the sauce as it
didnt go well with the
chicken wrapped in
bacon and I could also
filled in or brought the
missing things that were
needed in the salad.
