Case
The company Dairy-Best is specialized in the production of consumption milk and hard
cheese of goat milk. The have a lot of experience and knowledge about controlling the
formation of the specific taste of goat cheese. There are only a few companies producing goat
products and therefore they have a unique position. However, the market for goat cheese
products is growing and more and more farmers are changing to goat milk production.
Moreover, the consumer market is changing and there is a demand for more variation in goat
cheese products, also ecologically produced cheese is becoming more popular. About 70
people are employed at Dairy-Best, 50 in the production, 3 at purchase, 5 at sales and
marketing, 5 at finances and administration, a quality manager and a new product developer.
The new product developer decided to extend the assortment of hard goat cheese with new
variants (e.g. more mild, with spices etc).


Question 3

The product developer would like to have an advice about which methods/tools he should use
to take care about the sensory properties and safety (mention and explain why).


Question 4

The quality assurance manager suggested using the concept Quality Function Deployment
(especially House of Quality). Would you advice to use this concept (argue your advice)?

The product-development strategy requires two basic inputs for assessing goals and
objectives. Which are these inputs and why are they important?


Case
Holland Egg Products is a well-known company in the Netherlands. The companys core
activity is to make from eggs both egg white and egg yolk in a safe way.
The products are sold in small packaging (1 and 2 kg.), and big packaging (up to 100 kg).
The customers are both small food producers, such as a bakery, and big food producers, such
as a baking company. Holland Egg Products is the employer of about 40 people.
The company is planning to become a future ingredients supplier with far more unique
products that offer much more added value to the customer. The new product-assortment will
be based on eggs as the basic material, but products will be more concentrated on special
customer wishes and in certain cases they will be custom-made.
The management team has decided to create a department for new product development.
