This is the general formula of eating if you were in a Vietnamese household. FAMOUS PHO The PHO noodle soup is the most recognised Vietnamese dish throughout the world and is a national icon. It is a rock star in its own right and is comfort food at its best - simple, hearty and humble. A perfect representation of everyday life in Vietnam. Even with erce competition from other dishes, the pho still remains the most popular item on the menu and the reason for that is... we make a seriously good pho. NB: this dish is a lleted chicken maryland with skin on 29 DAT LAMB served with jasmine rice + garden salad 35 I named this dish because these are the very words people utter after theyve tried it. This dish represents the absolute premium charcoal dish on offer and is my personal favourite. The restaurant uses award winned sovereign lamb cutlets from Victorias gold eld region so it doesnt really get much better than this. 30 STEP MUMS STEAK served with chips + garden salad 20 Recommended: Medium Rare - Medium LIMITED AVAILABILITY Steak is probably the last thing youd expect to nd in a Vietnamese restaurant, let alone done well. As the name suggests this dish belongs to my step mum and although funny sounding, I assure you this is no ordinary run of the mill steak. The beef is sourced from one of Australias leading producers and cooked to perfection over 100% natural charcoal. This dish represents a new direction on the chargrill menu here at RL and one I highly recommend. Porterhouse 400gm Cape Grim Tasmanian Black Angus Grass Fed 18-36 months Add side of tamarind chilli prawns to any of the above + 12 CHARCOAL RANGE Charcoal cooking isnt anything new in Vietnamese culture. it has been around for centuries long before electric and gas stoves came along. charcoal cooking is what Red Lotus does best (among other things). The restaurant still remains the only Vietnamese restaurant in Qld that bothers to use the discipline of charcoal in their cooking. Recommended: meal for one. 27 VERMICELLI NOODLE SALAD a crispy spring roll (chicken or vegetarian) G 14 b wok tossed lemongrass beef 15 c charcoal grilled berkshire pork strips 18 d charcoal grilled chicken breast strips 18 e house made crackling pork limited availability 20 f a bit of everything G 25 THE BIG SALAD The vermicelli noodle salad or bun is Vietnamese street style food at its best. It is light, refreshing and healthy dish consisting of vermicelli noddles on a bed of fresh lettuce, mint, pickled carrots, cucumber and topped with choice of lling, the sprinkled with a sh sauce dressing. This dish has established itself as a very popular option, particularly among women. Recommended: meal for one. Disclaimer: Cooking with charcoal is a delicate art and takes a considerable amount of time. It is the complete opposite of stir fries which take only a few minutes. Please allow extended time for preparation of the following dishes. For those in a hurry please avoid these dishes. 31 CARAMELISED CLAYPOT a twice cooked pork ribs 20/28 b bassa sh (100% authentic recipe) 18/25 c barramundi llet 20/28 d king prawns 25/30 NB: 31a, 31b contains bones 34 VIETNAMESE CHICKEN CURRY IN CLAYPOT served with jasmine rice new improved recipe D 18 35 VIETNAMESE MOUNTAIN GOAT CURRY exotic range served with jasmine rice limited availability D 30 36 VIETNAMESE CURRY STIRFRY D a chicken 17 b beef 17 c prawn 20 37 LEMONGRASS CHILLI CURRY STIRFRY 17 chicken chilli option mild | medium | hot | very hot CARAMELISED CLAYPOT RANGE The claypot range is another best seller here and is ideal for those who want in your face hard hitting avours. Theres nothing subtle about these dishes and the result is a deep rich avoured dish covered in thick sticky caramel sauce. People cant get enough of. Recommended: shared dish CURRY CORNER Ive noticed a lot of people love their curries and the only exposure most people have had are to Thai and Indian curries. The good news is Vietnamese people have their own unique style of curry which is equally as addictive. The pinnacle of this is the goat curry which forms part of the restaurants new exotic range. For those who have tried our caramelised claypot range, this is a must try and expands on the strong intense avours of the claypot but in a ginger sauce. 49 TAMARIND CHILLI KING PRAWNS Tom Rang Me 35 Words cannot describe how popular this dish is. It is the Rolls Royce of Vietnamese cuisine and is the main attraction here. One denitely worth phoning home about. chilli option mild | medium | hot | very hot 50 FLASH FRIED CHICKEN WINGS Ga Chien Nuoc Mam in sh sauce 20 Fish sauce is the corner stone of Vietnamese cuisine. Without it, it just wouldnt be what it is as almost every Vietnamese dish features sh sauce somewhere in it. Theres nothing fancy about this dish. Very simple but demonstrates just how versatile sh sauce can be when combined with some basic ingredients. NB: contains bones 51 WHAT THE HEO! Thit Heo Kho Mam Ruoc exotic range 20 Heo is Vietnamese for Pork and is by far the most used meat in Vietnamese cuisine. This dish combines pork belly sauted in a lemongrass shrimp paste sauce and is a very popular dish among Vietnamese people but usually reserved for domestic consumption at home as to put it simply, it stinks. Literally. This dish is hardcore and there is a strong warning label attached to this dish. For those unfamiliar with shrimp paste it can often be an unforgiving experience because of the over powering smell. Over the years Ive discussed introducing this dish but when the words shrimp paste + white people are used in the same sentence Im usually met with stiff opposition, Are you out of your mind? Noooo you cant do that!. Despite all the bad press it is a hidden gem and one worth trying if you want a completely different and traditional experience. For all the guys out there dating a Vietnamese girl, stomach this in front of her parents and youll be sure to win some points... I kid you not. Difculty factor: 5/5. NEW FEATURE DISHES At Red Lotus we dont do boring. We continue to push the boundaries each menu revision to bring you the most authentic and complete experience anywhere in Brisbane. On my recent trip back to Vietnam I brought back a selection of rare dishes which will now get its 5 minutes of fame. Some dishes are more plain Jane than others, whilst some are a bit more controversial. The following dishes are recommended to be shared. WARNING: subtle optional 52 DUCK DOGGY STYLE Vit Nau Gia Cay 30 The award for most controversial dish on this menu goes to this one here and is set to cause a stir. I know most people are going off their chops thinking he sooo did not just write that.? But despite the negative introduction I assure you this is a cracker of a dish and an extremely rare one. I will touch on a taboo subject briey and that is some Vietnamese people eat dogs. Not all, but some as it is considered a deliciously. So before you go down to your local hot bread store to question Mr Tran or Kim who does your nails, I want to stress the word some people do this, not all. Whilst I dont condone the practice nor have I ever tried or will ever try this, the focus here is the style and ingredients which is used when applied to more acceptable forms of meats. This dish features luv-a-duck breast (skin on) cooked in a mock dog style. It consists of braising the duck in a lemongrass, shrimp paste and the most unique ingredient rieng or galangal rhizome, a type of ginger which Im sure most people have never even heard of. I absolutely love this dish and I think it is the main event here but again denitely not for the feint hearted.
