2. individuacin de los momentos en que se puedan producir riesgos para los alimentos
3. medidas para tomar respecto a los momentos detectados (osea aquellos momentos de la
produccin en que el producto puede ser afectado por algn factor)
4. individuacin de procediminetos de control de los momentos ms sensibles
5. examen peridico de los riesgos, de los momentos sensibles y de los procedimientos de
vigiliancia.
El desarrollo de un Sistema de Gestin de la Seguridad Alimentaria representa un
acercamiento sistemtico a la prevencin y a la mxima reduccin del riesgo alimentar.
