Thai cuisine comprises dishes from the countrys four main regions: Northern Thailand, North-eastern
Thailand, Central Thailand, and Southern Thailand. In all regions, Thai dishes have strong aromatic
components and a spicy edge. Thai cuisine is known for its complex interaction of at least three, and
up to five, basic taste senses in each dish or in the overall meal: sour, sweet, salty, bitter, and spicy.
Curry is an important dish in Thailand. Thai curry dishes are made from different curry pastes, coconut
milk or water, meat, seafood, vegetables or fruit, and herbs. Generally, the spiciest curries are water-
based, as there is no coconut fat to alleviate the heat. In Thailand, meals are always enjoyed family
style: all the dishes are placed in the center of the table and are shared by everyone around the table.
Northern Thailand (historically, the Lanna Kingdom) is a cooler, mountainous region bordered by
Myanmar (Burma) and Laos. The traditional food is mild or spicy, salty, and sour, but rarely sweet. Sticky rice (glutinous rice)
is served with steamed vegetables, nahm phrik ohng dipping sauce, soups, and northern-style curries.
North-eastern Thailand (locally known as Esaan) is a high plateau, with relatively low rainfall, and bordered by Laos. Food
in the north-east is famous for being very spicy, salty, and sour, and is seasoned with fresh herbs and fermented fish (plah
rah). Some of Thailand's spiciest salads can be found here. Diners diffuse these flavors with lots of sticky rice and jeao dipping
sauce.
Central Thailand is a delta-like landscape, with many rain-fed rivers flowing southwards over the flat terrain to create a
fertile soil. The food in central Thailand is mainly spicy, salty, sweet, and sour. Steamed jasmine rice is served with different
types of nahm phrik (chili dipping sauces), soups, and central-style curries. Dishes usually contain many condiments and
dried spices.
Southern Thailand is located on the Malay Peninsula, bordered by the Gulf of Thailand, the Andaman Sea, and Malaysia,
with some of the worlds most beautiful beaches and islands. Food in the south is renowned for being strong in tastevery
spicy, salty, and sour. Thailands spiciest curries are eaten every day with steamed jasmine rice. The most common dipping
sauce or paste is nahm phrik kapee, enjoyed with raw vegetables and crispy fried fish.
