lyndylou Easy Peasy Cheesy Mac (by Loulou)
Princess Cop
Very quick and easy, takes less than 5 minutes once the pasta is cooked.
A favourite in our house when Bubbalou is being fussy, and I know its the one thing that
he will always scoff down and ask for more!

All quantities are guesstimates, cos I never measure things for recipes like this!

2 cups uncooked pasta - spirals or shells are especially good

Location: QLD 2 tabs butter
Registered: 1/16/2008 2 tabs plain flour
Posts: 7043 Milk (I'm not going to give you exact qty, because it does depend on the pasta you are
3/13/2008 22:15 using, how much you'll need.)
1 cup grated tasty cheese (or more, depending on how cheesy you like it)

Cook pasta as per instructions on the packet in plenty of salted water.

Drain and return to saucepan over heat.
Add butter, and when melted sprinkle flour over pasta.
Stir until combined.
While stirring, gradually add enough milk, to almost cover pasta.
Keep stirring until sauce is nice and thick and coats the pasta.
Turn off the heat and add in the grated cheese.
Stir until melted through.

Serve and enjoy!

Variations: Add in chopped cooked veges or ham or cooked bacon or tuna

For a really quick meal can be done as a single serve with a pack of minute noodles ...
just reduce the butter and flour

lyndylou Chocolate Hungarian Wafers (by Eurotripchick)
Princess Cop
A big sheet of wafers - from a continental deli and they are probably 40cm by 20 and
there are about 5 sheets to a packet

Chocolate filling:
1 block Girgar unsalted butter
1 block dark cooking chocolate
1 can condensed milk
Location: QLD crushed walnuts (really thin through a grinder)
Posts: 7043 You need to melt the filling very slowly over a low heat. My grandma has an electric
3/13/2008 22:22 stove which makes it easy so if you have gas you may need to melt it over a pot of
water. If you melt it too quickly it won't work - trust me, i've tried!

Then just spread it over the wafer sheets; make sure you divide it evenly to get a good
coverage over all sheets.

Then put in the fridge for a few hours to set. It is best made one day before and will
keep for a while in the fridge

lyndylou Creamy Apple and Mustard Sauce - (by Loulou)
Princess Cop
- Meat of choice (great with veal escalopes, thin sliced pork, butterfly pork, even
flattened out chicken fillets)
-Jar of Apple Sauce (or make your own if you can be bothered)
-2 generous tablespoons of a mild grainy mustard (wholegrain, Australian, etc) If you
don't have a grainy mustard, you can use mustard seeds and a dijon. Don't use English
mustard ... much too hot!
-300ml cream
Location: QLD -A splash of white wine.
Posts: 7043 Brown meat in a frying pan with a little oil. Remove from pan and keep warm.
3/13/2008 22:25 Put mustard in pan with a splash of white wine (just enough to make it easy to deglaze
the pan)
Add in applesauce
Pour in cream.
Stir until well combined and cream has begun to thicken.
Season with salt and pepper.
Return meat to pan, coat with sauce and heat through.

Serve with pasta, rice, mashed potato, crusty bread - just about anything really!

lyndylou Kara's Yummy Nachoes (by Miss Kara)
Princess Cop
- 1 packet Doritos cornchips 'Original' flavour
- 1 packet tasty cheese
- 1 large jar of salsa
- 2 avocados (and a bit of mayonnaise)
- 1 tub natural yoghurt (NOT sour cream!)

Spread cornchips in a large rectangular baking dish. Sprinkle tasty cheese over the top
Location: QLD and shake tray/mix with hands to get cheese spread evenly through the cornchips. Add
Registered: 1/16/2008 extra cheese on top, or however much cheese you like.
3/13/2008 22:25 Place dish in moderate oven at about 200-240C. Cook for 15 mins or until cheese has
melted, but not brown.

While that is cooking, heat jar of salsa in microwave until hot.

Prepare guacamole: Scoop avocado out of skins and mix/math with about 2-3 large
tablespoons of mayo, or to taste. Can also add a bit of lemon juice and salt/pepper if
you like.

When cornships are ready, spoon over hot salsa, guacamole and natural yoghurt in
whatever fashion you like. We like to make an 'italian flag' like top, ie. thrick stipes of
salsa, next to guacamole, next to yoghurt.

Enjoy!! Is sooooo quick and easy, just to have to wait for cheese to melt in oven
basically! You may need more or less of the ingredients depending on how much
topping you like. Also can add jalapenos to the salsa if you like it a bit hotter.

lyndylou Quick and Tasty Cheats Quiche (by Karleena)
Princess Cop Serves 4
Prep time : 10 minutes
Cooking time : 35 minutes
<!--[if !supportLineBreakNewLine]-->
<!--[endif]-->
Ingredients
6 eggs, whisked.
1&1/2 cups of milk.
Location: QLD 3/4 cup of pastry mix.
Registered: 1/16/2008 1/2 cup grated cheese.
Posts: 7043 1/2 cup diced ham.
3/13/2008 22:26 <!--[if !supportLineBreakNewLine]-->
<!--[endif]-->
Method
Preheat oven to 200C.
Mix eggs and milk.
In a large bowl combine the pastry mix, milk and eggs and whisk until well combined.
With a wooden spoon, mix in the ham & cheese, mixing to distribute evenly.
Grease a 23cm flan dish.
Pour the mix into the flan, tap on the benchtop a couple of time to settle the ingredients.
Bake for 30-35 minutes, or until a skewer inserted into the middle of the quiche comes
out clean.
Serving
Allow to sit for 10 minutes before cutting. Serve with a side salad.
Somehow in the cooking process the pastry mix sinks to the bottom and forms a pastry
crust. Very quick and tasty meal.
