Food processing is often described as a major sector in India.

The importance of this industry is not


limited to the simple addition of GDP, but also offers many other desirable properties, such as
increased employment opportunities and the socio-economic benefits; improving the income and
lifestyle of rural populations that leads to reduced rural to urban migration, etc.
Manufacturing and processing potato in India is mainly divided into three segments, viz., Snacks
potatoes (including chips, Alu bhujia, etc.), potato flakes / powder and chips. With huge advertising
expenses spent that create a demand for chips, the bigger companies were the industry leader in
processing potato segment in India. In addition to the fries, chips or powder potato is another
segment of the processing of potatoes in India that shows impressive growth in terms of expected
existing processing capacity. Due to the shortage of raw materials, chips manufacturing in India is
much lower than their actual production capacity.
India ranks 3rd in the production of potatoes in the world. In the last twenty years, India has
consistently remained in top 10 in Potato production. The top states producing potato in India are
Uttar Pradesh, West Bengal, and Bihar; their total contribution accounts for 80% in terms of
production and 75% in terms of land under cultivation.
India is one of the largest producers of potato in the world. Potato is not only used as a food
preparation item but is also used in the form of chips or wafers as snacks food. It is a common as
staple food as well as a snack food item.

Century, potato has come a long way, blemishing its name in the process, with the lazy bums being
named after it as couch potatoes. Potato chip is estimated to constitute nearly 85% of Indias total
market of salty snack food market of about Rs 2500 crore. No exotic product has been as successful
in clinching the Indian market as the humble potato chips, being liked both by the young and the old
alike. Branded Chips are seemingly less oily, and it tastes irresistible.
Kids and Youngsters have taken branded potato chips as a way of life, as a tasty easy substitute to
bite over hunger pangs. But the question arise as to how chips affect the health of avid eaters, some
have even vouched their loyalty to a particular brand. According to a study potato chips were the
biggest dietary offenders in preventing weight loss.
Snack foods are also generally fried in edible oils/fats. The snack food consists of variety of one
cereal flour namely grams or a mixture of cereals flours namely grams, wheat, rice ragi, pulses etc.
Kurkure or similar snacks are regular selling snacks that are made from a mixture of flours of cereals
extruded and sprayed with hot edible oil and mixed with edible salt/spices to add taste. [1]

The main buyers of potato chips are the urban and semi-urban households. Chips are used in
significant quantities in restaurants, hotels, canteens, tea stalls etc. The leading brand of Chips in
India are Lays, Bingo, Parle, Uncle Chipps. The price ranges around Rs. 10 for a 35gm pack to Rs. 20
for a 90gm pack.
The main raw material for chips production is Potato. Apart from potato other ingredients are edible
oil, salt and other flavouring agents.
