& Dumplings
2 tbsp vegetable oil 2 carrots – chopped
1 ½ lbs chicken pieces (whatever you like)
1 rib celery – chopped 1 cup frozen peas
1 onion - chopped 1 garlic clove – finely diced
Salt & cracked pepper to taste 1 tsp poultry seasoning
2 tbsp flour 2 cups chicken stock

Dumplings
1 cup flour ½ tsp salt
2 tsp baking powder 1 egg
1 cup milk ¼ cup flat leaf parsley - chopped

Heat oil in Dutch oven and sear chicken on all sides. Add vegetables
(except peas), seasonings and flour, stir well then add stock.
Bring to a boil, lower heat, cover and simmer 30 minutes,
stirring occasionally. Add peas 20 minutes into cooking process.
Mix all the dumpling ingredients well and a lumpy dough will form.
Drop dough onto stew one tbsp at a time to cover the top.
Cover and let simmer for 10 minutes. Dumplings are done
when you insert a toothpick and it comes out clean.
