absolutelycharmingandthefoodisdeliciousandtheambienceisperfectandthemusicisa
localbluegrassbandand all at once they bring out this giant chocolate cake.
Iwrangledourentiretableintoadiscussionoverwhetherornotthiscakewasworth
breakingmyfastfor.
Unanimously,weagreedyes.Itookonebiteintothisluxurious,velvety,richchocolatecake,
andamidstsomanylayersofmousse,cakeandganachemymindcouldntcomprehendwhat
mytastebudswereexperiencing.

11/3cupscanesugar(orsubgranulatedsugar)
1cupunsweetenedcocoapowder
2tspbakingsoda
1tspbakingpowder
1/4tspsalt
For the Frosting:
1cup(16Tbsp)veganbutter,softened
21/2-3cupspowderedsugar
2/3cupunsweetenedcocoapowder
1/4cupdairy-freesemisweetchocolate,meltedandslightlycooled
2tsppurevanillaextract
~1/4cupunsweetenedoriginalAlmondBreezeAlmondMilk
INSTRUCTIONS
1. Preheatovento350Fandlightlyspray28-inchroundcakepansoronelargerectangularpanwith
nonstickspray(seenotesforcookingtimesfordifferentsizepans).Dustwithcocoapowder,shake
outtheexcessandsetaside.
2. Mixthealmondmilkandvinegarinalargemixingbowl,andletsetforafewminutestoactivate.
Addtheoil,coffee,vanillaextract,andapplesauceandbeatuntilfoamy.
3. Addtheflour,sugar,cocoapowder,bakingsoda,bakingpowder,andsalttoasifterandslowlysift
overthewetingredientswhilemixingwithahand-heldorstandingmixer.Ifyoudonthaveasifter,
simplymixdryingredientsinanotherbowlandaddtothewetmixturewhilebeating.Beatuntilno
largelumpsremain.Itshouldbecreamyandpourable.Tasteandadjustsweetnessasneeded,adding
moresugarifdesired(Ifounditplentysweet).
4. Dividebatterevenlybetweenyour2cakepansorrectangularpan.
5. Bake25-30minutes,oruntilatoothpickinsertedintothecentercomesoutclean.Letcool
completelybeforefrosting.
6. Whilecooling,preparefrostingbybeatingtogetherallingredientsuntillightandfluffy,addingthe
powderedsugarinsmallamountsuntilyoureachyourdesiredconsistencyandsweetness.Ifit
becomestoothick,addmorealmondmilk.Ifit'stoothin,addmorecocoapowderorpowdered
sugar.
7. Oncethecakeiscooled,frostgenerouslywithbuttercreamfrosting,addingathicklayerbetweenthe
topandbottomlayers(ifdoinga2-layercake).Alternatively,omitthefrostinganddustwithcocoa
powder.
8. Servewithascoopofdairy-freeicecream,adrizzleofchocolateorcaramelsauce,coconutwhipped
creamoraglassofalmondmilk!
