comfortingsmellsintheworld.OffIhobbledtolookthroughtherecipebookshelf,andmyBBCGoodFood
TeatimeTreatsbookkindlyobligedwiththis:aDorsetappletraybake,lookingallsugaryanddensely
delicious.Perfect.
Ishouldqualifythatwhilebakingapplesmaybecomforting,weighing,peeling,coringandthinlyslicing450g
ofapplesismuchlessenjoyable.IalwaysconsidertheFrenchtobeleKingsofthinlyslicedapples,andhada
renewedappreciationforalltheirtartesauxpommesonceIdscrapedmyknuckles,bentbackseveralnails,and
sprayedjuiceabsolutelyeverywhere,includinginmyeye.(Ifanyoneknowshowtouseanapplecorerwithout
inflictingpersonalinjury,Idbeinterestedtohearaboutit.)Still,wegotthereintheend.Therecipecallsfor
Bramleys,bytheway,butIalwaysfindthosetootart,soIusedtheGoldenDeliciouswealreadyhadinthe
house.Also,450gmakesFARtoomanyappleslicesforonecake.Wefrozetheremainder(alwaysusefulto
havetheoptionforanEmergencyAppleCrumble,Ithink)butifyouonlyhave3applesinthehouseinsteadof
4,youvegotplenty.
Onceallthepeelingandslicingwasoutoftheway,Iputtheapplesasidewithasqueezeoflemonjuiceandgot
onwiththecake.Nothingdifficulthereitsanunusuallyeggymixture,whichIthinkisintendedtomakethe
finishedproductmorepuddingy.Theresalotofflourtoo,whichmadethecakemixextremelystiff,andhard
tospreadintothetin.Butspreadyoumust:ingoesalayerofcakemix,thenalayerofapples,thenanother
layerofcakemixandonemoreofapplestofinish.
