Separates the oil component
from the water soluble
component (diacylglycerol)

Phospholipids in oil reduce


the separation efficiency
of the oil and water (gum)
phases. Phospholipids
comprise an oil-soluble
backbone, and a watersoluble head group.

The addition of water to crude


vegetable oil results in the
hydration of the phospholipids.
The molecules move to the oilwater interface, holding the two
phases together as an emulsion
or gum.

Following a centrifuge process
to separate the gum fraction
from the oil, neutral oil

Optimized process performance means maximum yield. To optimize


the Purifine PLC degumming process, the enzyme is given the right
environment and equipment to do its job. Performance can be monitored
at control points installed at critical stages in the process.
